Cilantro Lime Crema Costco Copycat image

A homemade version of Costco's Don Pancho Cilantro Lime Crema. This sauce is great on top of Chicken Street Tacos.

1/2 cup sour cream (regular or light)
1/4-1/2 cup fresh cilantro (adjust to taste)
3 tablespoons mayonnaise (regular or light)
1/2 jalapeno (rib and seeds removed and cut into pieces)
juice of 1/2 lime
1/2 tablespoon red wine vinegar
1/8 teaspoon salt (or more to taste)
1/8 teaspoon garlic powder
1/4-1/2 cup milk (optional)

Steps:

  • Pulse jalapeno pieces in a small food processor until chopped into small pieces.
  • Add the remaining ingredients, except for the milk, and blend until smooth. Adding more cilantro will make the sauce greener.
  • If you desire a thinner sauce, add small amounts of milk and blend, until you achieve the desired consistency. Adjust salt depending on your preference.

Chicken Street Tacos - Costco Copycat image

Marinated chicken, crunchy cabbage mix, salsa, and cilantro lime crema served in a warm corn tortilla!

2 pounds boneless, skinless, chicken thighs (or breasts)
2 cloves garlic
1 tablespoon olive oil
1 tablespoon lime juice
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon oregano
1 teaspoon salt
1/4 teaspoon black pepper
8-12 corn tortillas
Canola or olive oil spray
shredded cheese
coleslaw mix or shredded cabbage
salsa
cilantro lime crema
tomatoes, lettuce, chopped red onions, limes (optional)

Steps:

  • Place marinade ingredients into a resealable gallon sized bag, and squish around to mix. Add chicken. Marinate for at least 30 minutes but up to 24 hours.
  • Brush grill pan with oil, then turn heat to high. Once grill is hot, place chicken onto grill pan and cook on each side until color and grill marks develop. Meanwhile heat oven to 375 degrees F and line a baking sheet with aluminum foil.
  • Transfer chicken to foil-lined baking sheet and bake for 15-20 minutes until cooked through and chicken has reached an internal temperature of at least 165 degrees F.
  • When chicken is done, remove from oven and transfer to a cutting board/mat to rest for 5 to 10 minutes.
  • Chop chicken into bite-sized pieces.
  • Heat a skillet over medium heat.
  • Spray each side of the tortillas with Canola or olive oil spray.
  • Add tortillas to the skillet in a single layer, as many will fit at once (typically 3 depending on the size of the skillet).
  • Heat until warm on one side, flip, and heat until warm on the other side, then transfer to a plate until ready to serve.
  • Set out chicken, tortillas, cheese, slaw mix, salsa, any other toppings you prefer, and crema in individual dishes for a build-your-own taco experience.

  • In a large heavy-duty skillet, heat the oil over medium-high heat. Season chicken generously with salt and pepper then add the chicken and cook for 7-8 minutes, turning once or until chicken is cooked through. Remove chicken from skillet and cover with foil on a separate plate, set aside.
  • Add onions to the same skillet (without washing it) and cook onion for 1 minute. Add garlic and cook for just 30 seconds. Add chicken broth, lime juice, cilantro, red peppers flaked, and salt and pepper to taste. Bring to a gentle boil for 8-10 minutes or until liquid is reduced by 1/4 cup.
  • Whisk in cream during the last minute. Turn off heat and return chicken to the sauce. Garnish with more cilantro. Serve with aside of steamed veggies or rice. Enjoy!
