Haddock Bubbly Bake image

This is really great served with mashed potatoes and peas or veggie of your choice. This dish is a favorite of Nova Scotia, Canada.

2 pounds haddock fillets
salt and pepper to taste
1 (10.75 ounce) can condensed cream of mushroom soup
1 onion, thinly sliced
1 cup shredded mild Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly butter a 2 quart casserole dish.
  • Arrange fish fillets in the bottom of the prepared casserole dish, and sprinkle with salt and pepper to taste. Layer onion slices over fish. Spread cream of mushroom soup over all, and top with shredded cheese.
  • Bake in preheated oven for about 40 minutes, or until bubbly and fish flakes easily with a fork.

My mother-in-law gave me this great recipe soon after I got married.

1/2 cup sliced fresh mushrooms
2 tablespoons chopped onion
1 tablespoon plus 1 teaspoon butter, divided
2/3 cup water
3 tablespoons Homemade Cream-Style Soup Mix
1 cup cooked elbow macaroni
1 can (7-1/2 ounces) salmon, drained, bones and skin removed
1/2 cup shredded cheddar cheese, divided
1/4 cup milk
1 tablespoon dry bread crumbs

Steps:

  • In a small saucepan, saute mushrooms and onion in 1 tablespoon butter until tender. Whisk in water and homemade cream-style soup mix; bring to a boil, whisking frequently. Add the macaroni, salmon, 6 tablespoons cheese and milk., Pour into a greased 1-qt. baking dish. Melt remaining butter; stir in bread crumbs. Sprinkle over casserole. Top with remaining cheese. , Bake, uncovered, at 350° for 24-28 minutes or until golden brown and bubbly.

Steps:

  • Preheat the oven to 200C.
  • Prepare the ingredients - peel and slice the garlic, onion and fennel so that they are all equal in size. With the skin still on, finely slice the potatoes.
  • Parboil the sliced potatoes in salted boiling water for a few mins untill softened. then drain them in the colander.
  • Place the casserole-type pan on a heat then add the oil, garlic, onion, fennel, fennel seeds and peas. cook slowly for 10 mins with the lid on, occasionally stirring.
  • Take the pan off the heat. Lay the trout fillets skin-side up, on top of the onion, fennel and peas. Spread the cream over the trout along with a sprinkling of salt and pepper.
  • Toss the potato slices in some olive oil, salt and pepper and layer these on top of the cream.
  • Place in the oven for 20 mins, spinkling it with breadcrumbs then a very small amount of grated mozzarella after 15 mins
  • Remove it from the oven when the breadcrumbs look crispy and golden
  • Serve with lemon slices - cut into 4-8 pieces

They gave away free fish recipes on laminated cards to anyone that requested them by mail. Here is one that I use over & over again as it is quick, easy and tastes really good.

1 lb frozen fish fillet (I use haddock)
1 (10 ounce) can cream of mushroom soup
2 tablespoons chopped onions
1 tablespoon lemon juice
1/2 cup grated cheese
3 tablespoons water

Steps:

  • Cut the frozen fillets in four portions.
  • Place in a shallow greased casserole.
  • Mix the mushroom soup, onion, lemon juice and water and pour over the fillets.
  • Top with grated cheese (I sometimes use a bit more than 1/2 cup).
  • Bake in hot over (450 degrees) for 20 minutes or until done.

Have tried this with both salmon, cod and halibut, it was equally good with all. I often use wheat germ instead of breadcrumbs.

1 lb fish fillet (halibut, cod, haddock, pollock or even salmon, fresh or thawed)
1 egg
2 tablespoons milk
1 cup fine breadcrumbs
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 teaspoon Italian herb seasoning
1/2 teaspoon dry mustard
2 tablespoons olive oil or 2 tablespoons canola oil

Steps:

  • Preheat oven to 450f degrees.
  • Slice large fish fillets to size required.
  • Beat egg and milk together in a bowl.
  • Combine crumbs, salt, pepper, Italian herb spice and dry mustard in a bowl or on a plate.
  • Put oil on baking sheet and place in preheataed oven while coating fish.
  • Dip each piece of fish in egg mixture and then in bread crub mixture.
  • Press fish firmly into crumbs.
  • Place fillets on hot oil on baking sheet.
  • Flip immediately to ensure both side are oiled.
  • For half inch thick fillets, bake four minutes, turn and bake four minutes more.
