2 teaspoons distilled vinegar
2 large egg yolks
1 tablespoon fresh lemon juice
1/3 cup cold butter, cut into 8 pieces (no substitutions)
1/4 teaspoon salt
1/8 teaspoon paprika
1 pinch ground pepper
4 large eggs
2 English muffins, split and toasted
1/4 lb thinly smoked salmon, cut crosswise into julienne strips
1 tablespoon chopped fresh parsley

Steps:

  • Fill large skillet halfway with water.
  • Add vinegar and bring to a gentle boil.
  • Meanwhile whisk egg yolks, 2 tbs. water and lemon juice in small saucepan.
  • Cook over low heat, whisking constantly, until bubbles begin to form around the edge of the pan.
  • Whisk in butter, 1 piece at a time, until butter is completely incorporated and sauce is thickened.
  • Remove from heat.
  • Stir in salt, paprika and ground red pepper.
  • Break eggs and carefully add to simmering water.
  • Cook uncovered, gently spooning water over the tops of yolks until whites are set and yolks are cooked, 3 to 4 minutes.
  • Place 1 toasted muffin half on each of 4 plates.
  • Set aside 1/4 cup sliced salmon for garnish.
  • Arrange remaining salmon over muffins.
  • With slotted spoon, place poached eggs on salmon.
  • Spoon sauce over eggs.
  • Top with reserved salmon.
  • Sprinkle with parsley.

4 extra-large eggs, at room temperature
2 thin slices of prosciutto
2 English muffins, sliced in half and toasted
Easy Hollandaise Sauce (recipe follows)
Minced fresh chives, for serving
2 extra-large egg yolks, at room temperature
1 1/2 tablespoons freshly squeezed lemon juice
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Pinch of cayenne pepper
6 tablespoons (3/4 stick) unsalted butter

Steps:

  • Preheat the oven to 400 degrees.
  • Break each egg into an individual small bowl and set aside. Fill a large (12-inch) saute pan about half full with water and bring to a boil. Carefully slide each egg into a separate corner of the pan and simmer for exactly 2 minutes. Turn off the heat and allow the eggs to sit in the water for 10 minutes.
  • Meanwhile, place the slices of prosciutto on a sheet pan and roast for 5 minutes. Set aside.
  • Place both halves of each toasted muffin on a dinner plate and, using a slotted spoon, slide a poached egg onto each half. Drizzle hollandaise sauce over the poached eggs and garnish with chives. Serve with a slice of prosciutto.
  • Place the egg yolks, lemon juice, salt, black pepper, and cayenne pepper in the jar of a blender and process on low for 15 seconds. Melt the butter in a small saucepan until it is sizzling hot. Remove the small clear insert in the top of the blender. With the blender on low, slowly add the hot butter to the egg and lemon mixture and blend for 30 seconds, until the sauce is very thick. Use immediately.

A blender makes an easy, foolproof hollandaise sauce. We added plenty of lemon to make it bright and tangy.

1 tablespoon white distilled vinegar
4 English muffins, split
2 sticks (16 tablespoons) unsalted butter, plus more for spreading
8 slices Canadian bacon
4 large egg yolks plus 8 large eggs
3 tablespoons freshly squeezed lemon juice
Kosher salt
1/4 teaspoon cayenne, plus more for serving

Steps:

  • Preheat the oven to 200 degrees F.
  • Fill a large saucepan with 2 quarts water. Add the vinegar and bring to a simmer over medium-high heat.
  • Meanwhile, toast the English muffins until golden brown. Spread with butter and place on one side of a baking sheet. Keep warm in the oven.
  • Melt 1 tablespoon of the butter in a large skillet over medium heat. Add the Canadian bacon and cook until heated through, about 30 seconds per side. Transfer the bacon to the other side of the baking sheet to keep warm.
  • Melt the remaining butter in a medium saucepan over medium heat. Add the yolks, lemon juice, 1 1/2 teaspoons salt and the cayenne to a blender. Blend for 1 minute. With the blender running, pour the melted butter very slowly through the open hole of the blender lid until smooth, thick and emulsified. Transfer the sauce back to the saucepan and place in the oven to keep warm.
  • Crack the whole eggs into small cups or glasses. If your simmering water has reduced too much, add a bit more water and bring back to a steady simmer. When the water is at a steady simmer, slip the eggs into the water in one quick motion, arranging them clockwise in the pan so you know which will be ready first.. Poach the eggs until the whites are firm but the yolks are still runny, 4 to 5 minutes. Remove the eggs with a slotted spoon and drain on a paper towel.
  • Top each muffin half with a slice of Canadian bacon and a poached egg. Pour hollandaise sauce over each muffin. (If the sauce has thickened too much, whisk it with a tablespoon of water.) Sprinkle each serving with a little cayenne and serve immediately.

Hollandaise sauce is much older: It appears in a French cookbook from 1651 and was later known as Sauce Isigny, named for a town in Normandy. The name was changed to hollandaise after World War I, when butter was scarce in France and had to be imported from Holland.

2 pinches of cayenne pepper

Steps:

  • Make the hollandaise sauce: Melt the butter in a small saucepan over medium heat until no longer foamy (but not browned), 6 to 8 minutes. Transfer the clear butter to a liquid measuring cup, leaving the milk solids on the bottom of the pan; discard the solids.
  • Heat 1 inch of water in a medium saucepan over medium heat until steaming but not simmering. Combine the egg yolks, 1 tablespoon water and 2 teaspoons lemon juice in a medium stainless-steel bowl. Set the bowl on the saucepan (do not let the bowl touch the water). Cook, whisking constantly, until the egg mixture is pale yellow and thickened, 3 to 5 minutes. Check periodically to make sure the water isn't boiling or the egg yolks might overcook.
  • Remove the bowl from the saucepan; slowly pour in the melted butter, a drop at a time at first, whisking constantly until thick. Whisk in the remaining 2 teaspoons lemon juice, the cayenne and ¼ teaspoon salt. If the sauce is too thick, whisk in some warm water, 1 tablespoon at a time, to loosen. Return the bowl to the saucepan of water with the heat turned off to keep warm; whisk occasionally.
  • Make the Eggs Benedict: Fill a large wide pot with 3 inches of water. Heat over medium-high heat until steaming with small bubbles; reduce the heat as needed to maintain a bare simmer. Stir in the vinegar. Crack 4 eggs into individual small bowls or ramekins. Carefully tip the eggs into the water, spacing them as far apart as possible. Cook until the whites are set but the yolks are still runny, 3 to 3½ minutes. Remove the eggs with a slotted spoon and transfer to a plate lined with a kitchen towel. Gently blot the eggs dry and trim off any wispy pieces. Repeat with the remaining 4 eggs.
  • Melt the butter in a large skillet over medium-high heat. Add the Canadian bacon and cook until lightly browned and warmed through, 1 to 2 minutes per side. Meanwhile, toast the English muffins and spread with butter.
  • Top each English muffin half with a slice of Canadian bacon and a poached egg. Thin the hollandaise sauce with more warm water, if necessary, and season with salt. Spoon over the poached eggs and sprinkle with chopped chives.

2 whole eggs
3 egg yolks
1 tablespoon lemon juice

Steps:

  • For the Blender Hollandaise, place 3 egg yolks, 1 tablespoon lemon juice and dash of cayenne into the blender.
  • Cover, quickly pulse on and off.
  • Heat 1/2 cup butter until melted and bubbling.
  • Turn blender onto high speed and slowly pour the butter into the egg mixture.
  • Blend until thick and fluffy (about 30 seconds); it makes approximately 2/3 cup of sauce.
  • For each serving, toast 1/2 of an English muffin.
  • Place a thin slice of oven-broiled ham on each half.
  • Top each muffin half with a soft poached egg.
  • Pour sauce over the eggs and sprinkle with paprika.

This is a recipe I threw together one night as I was making "breakfast for dinner" for Brad. He traditionally prefers scrambled eggs, but wanted something a bit more special.

3 large eggs, beaten
1/8 cup milk
1/2 cup onion, diced small
1/2 teaspoon Lawry's Seasoned Salt (to taste)
1/2 teaspoon dry mustard
1/2 teaspoon white pepper
1/2 teaspoon dried parsley
2 dashes hot sauce
1 tablespoon butter

Steps:

  • Combine the beaten eggs, milk, hot sauce, and spices. Set aside.
  • Heat a non-stick skillet to medium-high heat and melt butter.
  • Add onion and scatter. Saute, stirring occassionally, to allow the onion to carmelize.
  • When onion is browned to your liking, scatter it evenly around the skillet and lower heat to medium.
  • Add the egg mixture to hot skillet. It will set quickly from the heat, but resist the temptation to move it around.
  • After 1-2 minutes, push the cooked egg to one side, allowing the wet egg to run onto the hot skillet. Continue this on alternating sides of the pan until you've got a neat little pillow of browned, oniony, delicious scrambled eggs that are set to your liking.
  • NOTE: Or, if you're not anal-rententive like me, scramble the eggs however you like and enjoy. It won't be as attractive, but will be just as tasty.

Steps:

  • To Make Hollandaise: Fill the bottom of a double boiler part-way with water. Make sure that water does not touch the top pan. Bring water to a gentle simmer. In the top of the double boiler, whisk together egg yolks, lemon juice, white pepper, Worcestershire sauce, and 1 tablespoon water.
  • Add the melted butter to egg yolk mixture 1 or 2 tablespoons at a time while whisking yolks constantly. If hollandaise begins to get too thick, add a teaspoon or two of hot water. Continue whisking until all butter is incorporated. Whisk in salt, then remove from heat. Place a lid on pan to keep sauce warm.
  • Preheat oven on broiler setting. To Poach Eggs: Fill a large saucepan with 3 inches of water. Bring water to a gentle simmer, then add vinegar. Carefully break eggs into simmering water, and allow to cook for 2 1/2 to 3 minutes. Yolks should still be soft in center. Remove eggs from water with a slotted spoon and set on a warm plate
  • While eggs are poaching, brown the bacon in a medium skillet over medium-high heat and toast the English muffins on a baking sheet under the broiler.
  • Spread toasted muffins with softened butter, and top each one with a slice of bacon, followed by one poached egg. Place 2 muffins on each plate and drizzle with hollandaise sauce. Sprinkle with chopped chives and serve immediately.

1 1/2 cups all-purpose flour
3/4 cup sugar
3/4 cup oats, uncooked
2 tablespoons yellow cornmeal
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/8 teaspoon salt
2 large eggs, lightly beaten
1/4 cup butter or 1/4 cup margarine, melted
1 teaspoon vanilla extract
3/4 cup walnuts, toasted and chopped (my mom uses almonds)

Steps:

  • Heat oven to 350°F.
  • Combine flour, sugar, oats, cornmeal, baking powder, cinnamon and salt in large bowl.
  • Stir in eggs, butter and vanilla until blended.
  • Stir in nuts.
  • Divide dough in in half. on a floured surface, roll each half into a 13-inch log, about 1 1/2 inches in diameter.
  • Bake logs on a cookie sheet 25 minutes.
  • Cool on rack 10 minutes (leave oven on).
  • With a serrated knife, cut logs diagonally into 1/2 inch slices (some bits may come off, but don't worry--just keep going).
  • Arrange cut side down on cookie sheet.
  • Bake 6-8 minutes per side, until crisp.

Steps:

  • Prepare Hollandaise: Whisk together egg yolks, lemon juice, and pepper in a pan over low heat. Add 1/2 of the butter and continue to whisk until the butter is melted and incorporated. Add remaining butter and salt and whisk until melted. Sprinkle in paprika. Turn heat off and cover with a lid to keep warm.
  • Fill a large saucepan with 5 to 8 inches of water and bring to a gentle simmer. Add vinegar and reduce heat to low. 3 egg yolks
1 tablespoon lemon juice
1/2 cup firm butter
3 English muffins
3 tablespoons butter, softened
1 teaspoon butter
6 thin slices Canadian-style bacon or fully cooked ham
6 eggs
4 teaspoons distilled white vinegar
Paprika, if desired

Steps:

  • In 1-quart saucepan, vigorously stir egg yolks and lemon juice with wire whisk. Add 1/4 cup of the butter. Heat over very low heat, stirring constantly with wire whisk, until butter is melted.
  • Add remaining 1/4 cup butter. Continue stirring vigorously until butter is melted and sauce is thickened. (Be sure butter melts slowly so eggs have time to cook and thicken sauce without curdling.) If the sauce curdles (mixture begins to separate and melted butter starts to appear around the edge of the pan and on top of the sauce), add about 1 tablespoon boiling water and beat vigorously with wire whisk or egg beater until smooth. Keep warm.
  • Split English muffins; toast. Spread each muffin half with some of the 3 tablespoons butter; keep warm.
  • In 10-inch skillet, melt 1 teaspoon butter over medium heat. Cook bacon in butter until light brown on both sides; keep warm.
  • Wipe out skillet to clean; fill with 2 to 3 inches water. Add vinegar to water. Heat to boiling; reduce to simmering. Break cold eggs, one at a time, into custard cup or saucer. Holding dish close to water's surface, carefully slip eggs into water. Cook 3 to 5 minutes or until whites and yolks are firm, not runny (water should be gently simmering and not boiling). Remove with slotted spoon.
  • Place 1 slice bacon on each muffin half. Top with egg. Spoon warm sauce over eggs. Sprinkle with paprika.
