Classic Mixed Berry Dump Cake image

This berry-loaded beauty gets its name from its ease of preparation. 3 cups fresh raspberries
1/2 cup sugar
1/2 teaspoon ground ginger
1 teaspoon grated lemon peel
2 tablespoons fresh lemon juice
1 box Betty Crocker™ Super Moist™ yellow cake mix
3/4 cup butter, melted
Vanilla ice cream, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
  • Spread berries evenly in bottom of pan. In small bowl, mix sugar, ginger and lemon peel; sprinkle over berries. Drizzle lemon juice over top.
  • Top with dry cake mix; gently shake pan to distribute evenly
  • Pour melted butter over top, tilting pan to cover as much of the top with butter as possible. Bake 45 to 50 minutes or until top is light golden brown, mostly dry on top and bubbly around edges. Cool 15 minutes before serving. Top individual servings with ice cream.

  • Preheat oven to 375°. In a large bowl, whisk the first 6 ingredients. In another bowl, whisk egg whites, egg, milk, sour cream, applesauce, oil and vanilla until blended. Add to flour mixture; stir just until moistened. Gently fold in berries., Transfer batter to a 9x5-in. loaf pan coated with cooking spray. Steps:

  • Heat oven to 425°F. Spray doughnut pan with cooking spray. In medium bowl, stir Bisquick mix, 2 tablespoons of the granulated sugar, 2/3 cup milk, 2 teaspoons of the vanilla and the egg until blended. Stir in blueberries. Spoon batter into resealable food-storage plastic bag; seal bag. Cut off small corner of bag; squeeze bag to pipe batter into pan, using about 1/4 cup for each doughnut.

Stir in 1 cup of the powdered sugar and remaining 1/2 teaspoon vanilla with whisk until smooth and thickened. Dip tops of doughnuts in berry glaze; let excess drip off. Let stand until set.

2/3 cup cold water
1 cup cold 2% milk
1 package (1 ounce) sugar-free instant lemon pudding mix
1 package (8 ounces) reduced-fat cream cheese
1/2 cup fresh or frozen raspberries
1/2 cup fresh or frozen blackberries
1 teaspoon sugar

Steps:

  • In a small bowl, combine cake mix and water; beat on low speed for 30 seconds. Beat on medium for 1 minute. Pour into an ungreased 11x7-in. baking pan. Bake at 350° for 20-25 minutes or until golden brown and entire top appears dry. Cool completely, about 40 minutes., In a small bowl, whisk milk and pudding mix. These are a riff on a treat I loved as a child: little cheesecake bars with ribbons of jam and a drizzle of frosting on top. They are great to keep in the fridge when I've got a craving for something sweet or to serve as dessert for a party.

Nonstick cooking spray, for the pan
1 1/2 cups graham cracker crumbs (from about 9 graham cracker sheets)
1/2 cup sugar
6 tablespoons unsalted butter, melted
Pinch kosher salt
Two 8-ounce blocks cream cheese, at room temperature
1/2 cup sugar
2 large eggs, at room temperature
1/2 cup sour cream
1 tablespoon lemon juice
2 teaspoons vanilla extract
1/2 cup blackberry jam, warmed until liquidy
1/2 cup raspberry jam, warmed until liquidy
1 cup white chocolate chips, melted

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Lightly grease an 8-inch square baking pan with cooking spray.
  • Stir together the graham cracker crumbs, sugar, melted butter and salt in a bowl. Press into an even layer in the bottom of the pan. Bake the crust until set, 10 to 12 minutes. Remove from the oven and let cool. Reduce the oven temperature to 325 degrees F.

Steps:

  • In large bowl, combine dry ingredients.
  • In another bowl, mix egg yolks, buttermilk and butter until well blended, then stir this into the flour mixture.
  • In another large bowl beat the egg whites on high speed until soft peaks form, then fold into batter gently with a rubber spatula until it's worked inches
  • Cook pancakes on a griddle that has been preheated on medium heat.
  • Use about 1/3 cup of batter for each one.
  • As soon as you pour the batter onto griddle, arrange 1 tablespoon each of the blueberries and raspberries on the top of the pancake.
  • Cook until the pancake has bubbled over the surface, then carefully flip.
  • Cook until the other side is lightly browned.
  • Serve with syrup.
