FABULOUS OLIVE SALSA BY JAMES
Our friends James and Jayden had us over for some backyard entertainment and served this delicious dish up. We managed to talk them into handing over the recipe. Mess with the mix and quantity of olives to suit your taste.

Steps:
- Drain green and black olives and green chiles in a colander. Chop white onion in a food processor, pulsing several times. Add green and black olives, green chiles, tomatoes, olive oil, red wine vinegar, garlic, and hot sauce to the processor. Pulse several more times to mix; process until chunky, 20 to 30 seconds.

SPICY MEATLOAF WITH OLIVE SALSA
If you're in the mood to try a different kind of meatloaf . . . Try this one, with bold and spicy steak sauce, whole kernel corn and chopped black olives.

Steps:
- Heat oven to 375°F.
- Mix meat, bread crumbs, 1/2 cup steak sauce, eggs and half each of the peppers and olives until blended. Shape into loaf in foil-lined 13x9-inch pan.
- Bake 1 hour and 10 min. or until done (160°F). Let stand 10 min.
- Meanwhile, mix corn, onions and remaining steak sauce, peppers and olives until blended. Serve spooned over meatloaf.

TANGY TEXAS SALSA
I'm a "transplant" from Wisconsin currently living in Texas. Even after 20 years, I can't get enough of our wonderful local citrus. This is one way to work it into a main dish. - In a large bowl, combine first nine ingredients., Cut a thin slice off top and bottom of grapefruit and orange; stand upright on a cutting board. With a knife, cut off peel and outer membrane of fruit. Cut along the membrane of each segment to remove fruit; add to pepper mixture., Stir gently to combine. Refrigerate, covered, at least 2 hours.

OLIVE SALSA
A salsa with no tomatoes, for olive lovers. It's full of strong flavors. Can be prepared in a food processor, but I just chop with a knife. Serve with tortilla chips, bagel chips, crackers etc.

- To toast pine nuts heat in a small skillet over low heat, stirring frequently, until lightly browned.
- Drain olives well and chop.
- Very finely chop garlic Seed and remove membranes from halapenos and finely chop Dice onion, red and yellow peppers Combine all ingredients and add olive oil and vinegar, mix well Chill several hours or overnight, bring to room temperature to serve.

- In a large resealable plastic bag, combine orange juice and 1 teaspoon jerk seasoning. Add the halibut; seal bag and turn to coat. Set aside for 15 minutes., Meanwhile, in a shallow bowl, combine the bread crumbs, orange zest, salt and remaining jerk seasoning. Drain and discard marinade. Coat halibut with bread crumb mixture. Place on a greased baking sheet., Bake at 400° for 15 minutes. Broil 5-6 in. from the heat for 3-6 minutes or until lightly browned and fish flakes easily with a fork. , In a small bowl, combine the salsa ingredients. Serve with halibut.

OLIVE SALSA - IF YOU LOVE TANGY...
I got this recipe from: Southern Living, NOVEMBER 2000. My family just loves it and it's a nice alternative to traditional salsa. I'm super sensitive to hot spices so you'll notice the recipe doesn't call for any (as it came from S.Living) but feel free to experiment.
