SOUTHERN HUSH PUPPIES
Southern Hush Puppies are golf ball sized, light and flakey cornmeal dough that is fried golden brown on the outside and soft on the inside served as a side dish to any southern meal. These hush puppies are ready in minutes!

Steps:
- Preheat 2 inches of oil in a large skillet to 365 degrees. In a medium sized mixing bowl add the flour, cornmeal, sugar, baking powder, salt, garlic powder, onion powder, paprika, and pepper. Add the egg and buttermilk and stir until combined. Stir in cubed butter.
- Drop the batter by rounded teaspoonfuls in the hot oil. Let cook until they are golden brown 2-3 minutes. Remove with a metal strainer on a paper toweled lined plate. Serve with tarter sauce if desired.

- In a large bowl, combine first 7 ingredients. Add egg and buttermilk; stir until dry ingredients are moistened. Set aside at room temperature for 30 minutes. Do not stir again. , In an electric skillet or deep fryer, heat 2-3 in. of oil to 375°. Drop batter by rounded tablespoonfuls, a few at a time, into hot oil. HOT AND SPICY HUSH PUPPIES

- Preheat deep fryer to 375 degrees F.
- Mix all the ingredients together into a large mixing bowl to form a thick batter.
- Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray. Serve with dipping sauce.
- Mix the above ingredients together.
HUSH PUPPIES
Down the street from our previous home in Los Angeles, there's a small joint called Mel's Fish Shack. You choose from any number of pieces of fish that they batter and fry, and we'd always get an order of hush puppies to go with it. I remember many sunny days on our porch, crunching through those crunchy puppies with my mouth slightly open to let all the steam out! I was never good at waiting for food to cool down! When I asked them if they'd share their recipe, the owner looked at me like I was weird and said, we just buy them. I was so disappointed, but then was so happy to find out they're really easy to make! Here's my version, inspired by an Indian teatime snack, dhokla, which is a savory steamed chickpea cake that's doused with mustard seeds, curry leaves and coconut.

- Preheat the oven to 200 degrees F. Line a baking sheet with a triple layer of paper towels, then set a wire cooling rack over the top. Set aside.
- For the tempering oil: Warm the ghee in a small skillet or tadka pan over medium heat. Drop a couple of mustard seeds into the ghee; if they sizzle immediately, then it's hot enough. Add the remaining mustard seeds and the green chile. Cook about 5 seconds, then carefully add the curry leaves (they will splutter!). Cook about 30 seconds, then pour into a small bowl and set aside to cool down.
- For the hush puppies: Whisk the cornmeal, flour, baking powder and soda, turmeric and salt together in a large bowl. In another bowl, whisk the buttermilk, egg and lime zest together. Stir the wet ingredients and the now cooled-off tadka into the cornmeal mixture until just combined. Set aside to rest at room temperature for 10 minutes.
- Meanwhile, fill 10-inch cast-iron skillet with frying oil about 3/4-inch deep, or fill a deep-fryer. Preheat until it registers 375 degrees F.
- Drop little balls (about 1 tablespoon) of batter into the oil, being sure not to overcrowd the skillet. Fry, flipping often, until deep golden brown, 2 to 4 minutes. Transfer the hush puppies to the prepared rack, then sprinkle with salt and lime juice and keep warm in oven.
- To serve, sprinkle with the cilantro and coconut.
GRANDMA'S HUSH PUPPIES
My grandparent's used to have a Fish Fry at their house about once a month. Grandma always put the hush puppy batter together while grandpa sat on the back porch and fried them with the fish in his big frying cooker. You just can't have a Fish Fry without these wonderful hush puppies. This recipe makes about 15-20 hush puppies.

- Pour vegetable oil into the fryer of your choice. Allow it to be getting hot while mixing.
- Mix the first five ingredients together in a large bowl.
- Add the last four ingredients and mix well.
- If the batter isn't the consistency of pancake batter, add a little more flour to thicken or a little more milk for thinning.
- Take a metal spoon and dip into the hot grease. This allows the batter to just slide off into the grease after putting on spoon.
- Now, take about 1 tbs. size spoonfuls and place into grease.
- Allow to cook for about 5 minute or until golden brown and turn.
- Let cook on other side for about 3 more minute.
- Remove from grease and drain on paper towel lined plate.
- Enjoy with fried fish and cole slaw.
