SOUL FOOD TURNIP GREENS
Steps:
- Melt butter in a large stock pot.
- Add onions and red peppers.
- Cook until tender and then add garlic.
- Cook garlic until fragrant and golden.
- Stir in chicken broth, hot sauce, red pepper flakes, and diced smoked turkey.
- Taste broth and season with salt & black pepper. Broth should taste very well seasoned and delicious.
- Let broth simmer for 10 minutes.
- Add turnips greens to pot and allow them to cook down slightly.
- Stir, cover and simmer for 1 hour (stirring occasionally)
- Remove lid and taste to adjust seasonings again. (I usually add a bit more salt, black pepper and hot sauce)
- Stir in baking soda and liquid smoke. (this will help further lessen the bitterness)
- Cover and simmer for an additional 10- 20 minutes or until greens are tender to your liking.
- Serve hot.
COUNTRY TURNIP GREENS

Steps:
- Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
- Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
- Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.
TRADITIONAL SOUTHERN GREENS (MUSTARD, TURNIP OR COLLARDS)
My family's way of "fixin'"greens. You can use any kind of green or a mix. So simple but so good. Serve with cornbread for soppin' up the pot liquor! Measurements are approximates.

Steps:
- Fill sink with cold water.
- Put in greens, making sure they have room to float.
- The greens will rise to the top, while the dirt will sink.
- Let greens sit in water for about 20 minutes.
- Scoop out greens being careful not to stir up the dirt on bottom.
- If they still look dirty, change water and repeat process.
- Finish the cleaning by rinsing under running water.
- Tear greens into pieces, throwing away thick veins and stems.
- In a large pot, heat the bacon grease over med-high.
- Add the greens and toss well with bacon grease for a couple of minutes.
- Add ham stock, salt and pepper and sugar and stir.
- Cover and simmer gently until very tender (DO NOT BOIL).
- As the greens cook, they will produce a lot of liquid that will cook down. Add water as needed to prevent burning, but only use what is necessary so your pot liquor won't be watered down.
- Cook time will vary but usually about 3 hours The flavor of collards is much better if you can cook for about 6 hours.
SOUTHERN STYLE TURNIP GREENS RECIPE - (4.2/5)

- Wash about eight cups of torn turnip greens and slow boil the greens for about two hours in a large pot filled with eight cups of water and 1 tablespoon of salt. At the same time, in a smaller saucepan, slow boil 1 large, peeled and diced turnip root in three cups of water, two tablespoons of butter, a teaspoon of salt and a teaspoon of pepper. Add more water to both pots during the cooking process, if necessary. Next, combine the cooked root to the large pot of cooked turnip greens. Add 1 teaspoon crushed red pepper and stir. Serve with white cider vinegar or hot pepper sauce.
HOW TO COOK SOUTHERN TURNIP GREENS
Steps:
- Cook chopped bacon in a pot or large dutch oven until more than half way done. Then add the chopped onion, and continue cooking until the onion is done.
- Add minced garlic and jalapeno halves to the pot and cook two minutes.
- Stir in chicken broth, water, seasoning salt, black pepper, and white vinegar.
- Cover and simmer pot on MEDIUM heat for 30-45 minutes or until greens are tender. Stirring frequently.
- Taste for salt.
- Remove jalapeno halves before serving.
BRAISED TURNIP GREENS
Bitter greens like turnips are rich in flavor, and the smoky turkey wings in this recipe take them to the next level. Create your own stock from the smoked turkey to double down on flavor of the finished wings.

- Place the turkey wings in a 3-quart saucepan and add enough water to just cover them, about 5 cups. Bring to a boil, skimming off any foam that forms on the surface. Reduce to a simmer and let cook, uncovered, 1 1/2 hours. Strain the wings and remove the meat from the bones and set aside; discard the bones. Reserve 1 1/2 cups of the broth; save the remaining broth for another use.
- Heat the oil in a large pot over medium-high heat. Once hot, add the onion and cook until softened, 2 to 3 minutes. Add the garlic and red pepper and cook 1 minute more. Add turnip greens in batches, allowing each batch to wilt and stirring to distribute before adding the next batch.
- Once all the greens are added, stir in the vinegar, brown sugar, 1 teaspoon salt and 1/2 teaspoon black pepper. Return the turkey to the pot along with the reserved broth. Reduce the heat to low, cover and let simmer until the greens are very tender, about 40 minutes.

I found this recipe from Cooks.com. I made it for our Thanksgiving dinner--just to make something different for a change. I have to tell you, not only was it pretty easy to make (other than the stemming), it was also very tasty. Everyone loved it. I hope you will enjoy it, too.

Steps:
- Stem and wash fresh greens; place in water in a large kettle, bring to a boil, reduce heat and cook until tender. (Or use frozen turnip greens.).
- Grind the greens in a food processor and measure 2 cups for the recipe. (I had exactly 2 cups when I made this.).
- Combine the greens with salt and pepper, sugar, vinegar, horseradish, mayonnaise, soup, and eggs. Mix well.
- Put the mixture into a 1 1/2-quart casserole dish or 8x8-inch square baking dish. Sprinkle crumbs on top.
- Bake at 350F for 50 minutes.
- Sprinkle tops with cheese and bacon, and bake another 10 minutes, until cheese melts.
