DRAGON FRUIT SMOOTHIE BOWLS

Dragon Fruit Smoothie Bowls image

Provided by Catherine McCord

Categories     main-dish

Time 1h5m

Yield 2 servings

Number Of Ingredients 12

4 frozen ripe bananas, plus more if desired
Two 100-gram smoothie packs unsweetened frozen dragon fruit (I like the Pitaya Plus brand)
1 serving collagen peptides or vanilla protein powder (check the label, as brands vary)
1/3 cup almond milk (or milk of your choice), plus more as needed
Granola
Unsweetened coconut flakes
Chocolate chips
Berries
Sliced bananas
Sliced kiwis
Cubed mango
Cubed fresh dragon fruit

Steps:

  • Combine the 4 frozen bananas with the frozen dragon fruit, collagen and 1/3 cup milk in a high-speed blender or food processor. Blend on high, pushing the ingredients with the tamper tool if using a blender, until smooth and creamy. Add a splash more milk, if necessary, to help blend. Taste and blend in more frozen bananas to sweeten, if desired.
  • Divide the smoothie among 2 bowls then smooth the tops with a rubber spatula. For more of a frozen yogurt or soft-serve consistency, freeze for 30 to 60 minutes. Add your desired toppings and serve.

  • To a high-speed blender, add frozen dragon fruit, frozen raspberries, banana, protein powder, and dairy-free milk (starting with lower end of range). Blend until creamy and smooth. The trick to a thick smoothie bowl is being patient and blending slowly, adding only as much liquid as necessary, and using a smoothie wand (or something comparable that's blender safe) to scrape the sides down as it blends.
  • Taste and adjust flavor as needed, adding more banana for sweetness, dairy-free milk for creaminess, or berries for more intense berry flavor.
  • Divide between serving bowls and enjoy as is or top with fruit fruit, granola, hemp seeds, and coconut flakes (optional).
  • Best when fresh. Store leftovers in the refrigerator up to 24 hours. Freeze for longer-term storage. Or freeze in ice cube mold to use in future smoothies.
