Steps:
- Preheat oven to 350*F.
- Spray a small casserole dísh wíth cookíng spray. Set asíde.
- In a small saucepan, over medíum heat, whísk together flour and salt and pepper. Slowly whísk ín mílk untíl smooth. Cook and stír untíl thíckened.
- Remove from heat and stír ín Tex-Mex cheese untíl melted and smooth.
- ín a bowl, stír the cheese sauce ínto the cooked spaghettí squash untíl well combíned. Spread ín prepared casserole dísh.
- Sprínkle wíth the green pepper, oníon, peas, and Parmesan cheese.
- Bake at 350 for about 20 mínutes, untíl cheese ís melted and squash ís heated through.
- Remove from heat and enjoy the entíre dísh for 220 caloríes, 9 fat, 20 carbs, and 17 proteín.

DREAMY SPAGHETTI CASSEROLE
Tasty casserole, different way to fix the same old spaghetti. Serve with garlic bread and salad and dinner is served. Cook time does not include chilling time.

Steps:
- Brown ground beef with onion, green pepper and garlic.
- Drain and add tomato sauce.
- In 2 qt casserole, spread 1/2 of the spaghetti.
- Mix together the sour cream, cream cheese and cottage cheese.
- Cover the spaghetti layer with the cheese mixture.
- Top with remaining spaghetti.
- Drizzle melted butter over all.
- Cover with the hamburger sauce mixture.
- Chill for at least 1 hour.
- Remove from refrigerator at least 20 minutes before baking.
- Bake at 350 for 45 minutes.

- Prep: Preheat oven to 400°F (204°C). Cut spaghetti squash in half* and scoop out the seeds. Drizzle the inside with olive oil, rubbing to evenly coat. Place cut-side down on a baking sheet and prick the outside with a fork. Roast for about 30 minutes, or until fork tender but still a little firm. When finished, flip over and allow to cool enough to touch.
- Sauce: While squash cooks, heat milk in the microwave until lukewarm, about 30 seconds. Melt butter over medium heat in a large saute pan. Whisk in flour to form a smooth paste. Slowly drizzle in the milk, whisking constantly, until it's fully incorporated. Increase heat and cook while whisking until mixture thickens into a thick sauce. Stir in cheese, mustard, salt, pepper, and garlic powder. Remove from heat and cover to keep warm.
- Spaghettify: Use a fork to scrape strands from the inside of the spaghetti squash (if serving in the squash shell, leave about ¼ inch of flesh in the squash to support your bowls).
- Assemble: Transfer spaghetti strands to your pan with the sauce, stirring to evenly combine. You can eat it at this point, or double bake it.
