VINAIGRETTE DRESSING FOR A CROWD
This makes a huge amount of salad dressing for a few hundred people. For a church crowd or PTA spaghetti supper fund raiser. The leftover dressing keeps well if you use the dried parsley. But more attractive salad with the fresh because it stays brighter green. THIS CAN ALSO BE GIVEN IN JARS AS GIFTS. I am also listing a spaghetti recipe for a huge crowd too.

Steps:
- Mix first 7 ingredients and let stand for a few minutes.
- Stir in oil of choice.
- Store at room temperature if using soon.
- If using fresh parsley refrigerate any leftovers.
- Oil made with dried parsley may sit on counter top.
- *BEST IF MADE A FEW DAYS BEFORE NEEDED TO ALLOW FLAVORS TO MELD.

CROWD SIZE CLASSIC CREAMY COLESLAW
Coleslaw is always a crowd pleaser and this group-size recipe makes it easy to please the hungry masses.

- In a very large bowl (or other food safe container), combine the shredded cabbage and carrots. In another bowl, combine the mayonnaise, sugar, vinegar, celery seed, salt, and garlic powder. Mix until completely blended. Stir the mayo mixture into the shredded cabbage and carrots and stir until completely coated in the dressing. Cover the bowl and refrigerate for at least one hour before serving. Toss the mixture before serving. If it seems dry, add additional mayonnaise. One serving is 3/4 cup.

- For dressing, in a small bowl, whisk the mayonnaise, milk, dill and seasoning blend. , In a 4-qt. clear glass serving bowl, layer the romaine, carrots, onion and cucumber (do not toss). Pour dressing over the top; sprinkle with peas, cheese and bacon. Cover and refrigerate until serving.

ROCKY TOP COLESLAW DRESSING (FOR A CROWD)
This is great! So easy and so good! This makes about approx. 2 quarts, so you may want to cut it down. I use the leftover dressing for lots of things, add a little mustard and it's a delicious dressing for potato salad; put a little vinegar in for a salad dressing, and just so many uses. Try it and see what I mean!

- I set up a toasting station on the counter by my sink, so I can wipe all the crumbs into the sink. You’ll need a toaster or countertop oven, (or both to save time!) a large cutting board, bread knife and several large mixing bowls.
- Start by trimming the crust from the bread. Just the very outside bit of it – don’t want to waste too much bread. (Could also freeze the crusts for breadcrumbs.) Toast the bread on medium. You want it golden brown and toasty flavored. Cut the bread into 1” squares and add to mixing bowls. Continue until all toasted. I usually enlist some helpers for this process. Why toast? It’s worth it - the toasting adds flavor and texture.
- I use my two largest/deepest skillets for the browning and sautéing. I think any large pots, pans will work. I divide the sausage, half of each flavor and brown that first, breaking it up into small pieces. If very oily, drain off. I remove the sausage to a bowl, but keep the browned bits in the pan to add flavor.
