BOURBON PECAN PIE BARS



Bourbon Pecan Pie Bars image

Bourbon Pecan Pie Bars taste like the favorite holiday pie... elevated. With a buttery homemade crust, these sweet, decadent bars are the perfect dessert for any fall or winter gathering and are made without corn syrup!

½ cup unsalted butter, softened
¼ cup unsweetened applesauce
½ cup brown sugar (dark or light work)
1 cup unbleached all-purpose flour
1 cup rolled oats (not the instant kind)
½ teaspoon kosher salt
3 eggs
1/3 cup granulated sugar
¼ teaspoon kosher salt
¾ cup pure maple syrup
1/3 cup local honey
2 oz. bourbon
1 teaspoon pure vanilla extract
3 tablespoons unsalted butter, melted
1 1/3 cup pecan halves

Steps:

  • Preheat the oven to 350°F. Spray a 9"x9" square cake pan with nonstick baking spray, then line with parchment paper. Set aside.
  • In a large bowl, combine the softened butter, applesauce and brown sugar. Using a hand mixer or a rubber spatula, mix together until smooth.
  • Measure in the flour, oats and salt. Stir until combined.
  • Spread the crust mixture onto the bottom of the prepared baking dish using a rubber spatula or your hands. (If you use your hands, spray them with nonstick baking spray so that the mixture doesn't stick to you.)
  • When the crust is evenly spread out across the bottom of the baking dish, pop it in the oven and bake for 15-20 minutes. You don't want the crust to brown, but you do want it to firm up.
  • When the crust has pre-baked, remove from the oven and set aside.
  • In a large bowl, break the eggs and measure in the sugar. Using a hand mixer or a metal whisk, mix until the ingredients are light yellow and creamy.
  • Measure in the salt, maple syrup, honey, bourbon, vanilla extract and melted butter. Stir the ingredients until incorporated.
  • Add the pecan halves to the mixture, and use a rubber spatula to stir them into the batter.
  • Pour the filling on top of the baked crust, and transfer to the oven.
  • Bake the bars for 45-60 minutes, or until the bars are set. (They'll have browned on top, and when you move the cake pan, they will not appear to be liquidy anymore.)
  • When they are baked through, remove the bars from the oven.
  • Let the bars cool for 30-45 minutes, then slice into even bars and serve.

1 pound dry mayocoba beans
2 teaspoons vegetable oil
1 white onion, chopped
4 Roma (plum) tomatoes, chopped
1 serrano chile pepper, minced
½ pound bacon, chopped
2 thick slices fully cooked ham, cut into cubes
1 (12 fluid ounce) can or bottle Mexican beer
1 (7 ounce) can pickled jalapeno pepper slices, undrained
½ bunch fresh cilantro, chopped
1 tablespoon chicken bouillon granules
sea salt to taste

Steps:

  • Put mayocoba beans into a large container with enough cool water to cover by several inches. Let beans soak 8 hours to overnight.
  • Drain mayocoba beans and rinse thoroughly; put into a large stockpot. Pour enough water into the pot to cover beans by a few inches; bring to a boil, reduce heat to medium-low and place a cover on the pot, and cook at a simmer until beans are soft in the center, about 90 minutes.
  • While the beans simmer, heat oil in a large skillet over medium heat. Cook and stir onion in hot oil until tender, about 5 minutes; add tomatoes and serrano pepper and simmer until the tomatoes have softened slightly, about 5 minutes. Reduce heat to medium-low and continue cooking until the liquid begins to thicken, about 10 minutes more. Remove from heat.
  • Cook and stir bacon in a large, deep skillet over medium-high heat until very crispy, about 10 minutes; remove bacon from skillet with a slotted spoon and drain on a plate lined with paper towel.
  • Cook ham cubes in the bacon fat in the skillet until browned, about 5 minutes; remove with slotted spoon to the plate with the bacon to drain.
  • Once the beans have cooked, stir the tomato mixture, bacon, ham, beer, jalapeno peppers, cilantro, and chicken bouillon granules into the beans; season with sea salt. Bring the mixture to a simmer and cook until the beans are completely softened, about 30 minutes.

Growing up, my Mexican grandmother always had a pot of beans cooking on the stove. I often cook these beans (a 'drunken' version) for my family, and the aroma keeps her close to my soul, even years after she has past. I hope your family enjoys them as much as mine.

1 pound dried pinto beans, washed
2 quarts chicken stock
1 tablespoon salt
½ tablespoon ground black pepper
1 (12 fluid ounce) can or bottle dark beer
2 (14.5 ounce) cans chopped stewed tomatoes
1 white onion, diced
¼ cup pickled jalapeno peppers
6 cloves garlic, chopped
3 bay leaves
1 ½ tablespoons dried oregano
1 ½ cups chopped fresh cilantro

Steps:

  • Soak beans in a large pot of water overnight.
  • Drain beans, and refill the pot with chicken stock and enough water to cover the beans with 2 inches of liquid. Season with salt and pepper. Cover, and bring to a boil. Reduce heat to medium-low, cover, and cook for 1 1/2 hours. Stir the beans occasionally through out the entire cooking process to make sure they do not burn or stick to the bottom of the pot.
  • Stir beer, tomatoes, onion, jalapeno peppers, garlic, bay leaves, oregano, and cilantro into the beans. Continue to cook uncovered for 1 hour, or until beans are tender.
  • With a potato masher, crush the beans slightly to thicken the bean liquid. Adjust the seasonings with salt and pepper to taste.

1 cup Karo light corn syrup or 1 cup dark corn syrup
3 eggs, slightly beaten
1 cup sugar
2 tablespoons margarine or 2 tablespoons butter, melted
1 teaspoon vanilla extract
1 1/2 cups chopped pecans
1 unbaked 9-inch deep dish pie pastry or 1 frozen 9-inch deep dish pie shell
4 ounces Jack Daniels Whiskey

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl beat eggs slightly with a fork.
  • Add sugar, Karo syrup, margarine, and vanilla; stir until blended.
  • Stir in pecans and pour into pie crust.
  • Bake 50 to 55 minutes or until knife inserted halfway between center and edge comes out clean.
  • After pie is out of the oven, pour whiskey evenly over the hot pie and let it soak in for atleast 3 hours while cooling on a wire rack.
  • Serve and enjoy.
  • Don't give it to the kids!

1 cup granulated sugar
1 cup dark corn syrup
1/3 cup (about 5 tablespoons) salted butter, melted
1/4 cup bourbon
3 tablespoons brown sugar
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
3 whole eggs
Pie Dough, recipe follows
All-purpose flour, for rolling
1 heaping cup chopped pecans
1 cup heavy cream
1/4 cup powdered sugar
1 tablespoon bourbon
1 1/2 cups all-purpose flour
1/2 teaspoon kosher salt
3/4 cup (1 1/2 sticks) salted butter, cut into pieces
1 large egg, lightly beaten
Splash bourbon
Splash white vinegar

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix together the granulated sugar, corn syrup, butter, bourbon, brown sugar, vanilla, salt and eggs in a bowl.
  • Roll out the dough on a lightly floured surface to fit a 9-inch deep-dish pie plate. With a spatula, lift the dough carefully from the surface of the counter into the pie plate. Gently press the dough against the corner of the plate. Go around the pie plate, pinching and tucking the dough to make a clean edge.
  • Pour the pecans in the bottom of the unbaked pie shell. Pour the filling over the top. Lightly cover the crust with foil so it does not burn.
  • Bake for 50 minutes. Remove the foil and bake until set, being careful not to burn the crust, another 20 to 30 minutes. Allow to cool for 2 hours or up to overnight.
  • Before serving, make the whipped cream by combining the heavy cream, powdered sugar and bourbon in a large bowl and whisking until soft peaks form.
  • Slice the pie into wedges and top with the whipped cream.
  • Combine the flour and salt in a bowl. Add the cold butter and, using a pastry cutter, work the butter into the dry ingredients until the mixture resembles tiny pebbles. Add the egg, 1/4 cup cold water, bourbon and vinegar. Stir until just combined. Chill until needed.

Adapted from "Food in Jars". Not nearly as boozy or as sugary as the ones my grandmother used to make, just enough to give them flavor. I use brandy, but the original recipe called for bourbon. Rum would work well, too, as would a cinnamon stick, some cardamom pods, coriander seeds, or a few whole cloves in the syrup. I use four pounds (nine pieces in a box at Sam's Club) of large peaches and get five pint jars.

4 lbs freestone peaches
1 1/2 cups sugar
3 cups good water
1 1/4 cups brandy (or booze of your choice)

Steps:

  • Bring the canner full of water to a boil. Cut an X on the bottom of each peach and blanch them in the canning water for 30 to 45 seconds, then drop them into ice water to chill. Slip the skins off when they are cool enough to handle.
  • Make a syrup by heating the sugar and water together in a sauce pan, stirring to dissolve the sugar, and bring to a gentle simmer.
  • Cut each peeled peach into quarters, remove the pits, and pack them into the warm pint jars, overlapping them to fit. I get seven peach quarters in each jar, plus one leftover quarter I can eat.
  • Add 1/4 Cup brandy to each jar of peaches. Add hot syrup to each jar, leaving 1/2 inch head space. Move a knife around in each jar to release any bubbles, then top off with more syrup if necessary. You will probably have extra syrup, but save it for sweetening other products or fruit mixtures.
  • Process filled jars in a boiling water bath for 25 minutes (sea level). Let the jars rest for at least a week to develop best flavor.
