MEMPHIS BARBECUE CHICKEN WINGS
These Memphis BBQ Chicken Wings have an easy homemade Memphis barbecue sauce made in minutes. Crispy baked wings in a smoky, bold, sticky sweet BBQ sauce.

Steps:
- Preheat oven to 375 degrees and line your baking sheet with parchment paper.
- In a large bowl toss the chicken wings with the vegetable oil, salt and pepper then line up on the baking sheet in a single layer.
- Bake until wings are crispy and browned for 40-45 minutes.
- Remove the cooked wings and add them to a large bowl and toss them with the Memphis Barbecue Sauce, then bake them for an additional 5 minutes.

DRY RUB WINGS WITH BBQ BLUE CHEESE SAUCE

Steps:
- Place wings in a large bowl. Sprinkle the wings with the Head Country Bar-B-Q seasoning and baking powder. Toss to coat evenly.
- Place a wire rack on a baking sheet lined with aluminum foil. Refrigerate for 8 hours.
- When ready to grill, preheat grill to high heat (400˚F). Once the grill is hot, cover and grill wings for 30 to 35 minutes, flipping them once halfway through cooking.
- While the wings are grilling, make the sauce by combining Head Country Bar-B-Q sauce and blue cheese dressing in a small bowl. Stir until smooth.
- Remove wings from grill and add to a serving platter. Garnish with parsley and serve with sauce.

- Preheat air fryer to 350 degrees F (175 degrees C).
- Whisk together brown sugar, paprika, salt, garlic powder, onion powder, poultry seasoning, mustard powder, and pepper in a large bowl. Toss in chicken wings and rub the seasonings into them with your hands until fully coated.
- Arrange wings in the basket of the preheated air fryer, standing up on their ends and leaning against each other and the wall of the basket.
- Cook until wings are tender inside and golden brown and crisp on the outside, about 35 minutes. Transfer wings to a plate and serve hot.

GRILLED BUFFALO BBQ WINGS WITH BLUE CHEESE YOGURT DIP

- Pat the wings dry, then toss with the All-Purpose Poultry Seasoning. Let sit for 15 minutes.
- Preheat a grill to medium low (about 250 degrees F).
- Once the grill is up to temperature, place the wings on the upper rack in the grill and cook with the cover closed for 15 to 20 minutes, or until the internal temperature is around 150 degrees F. Once the chicken wings reach the desired temperature, increase the temperature of your grill to medium high (about 400 degrees F). Spray your grill grates with nonstick grill spray, then place your wings onto the hot grates and cook to create a nice char on each side of the wings, until the final temp reaches 165 degrees F, about 1 minute per side.
- Transfer the wings from the grill to a mixing bowl with the Buffalo BBQ Wing Sauce and toss to coat. Serve with the Blue Cheese Yogurt Dip (or your favorite ranch or blue cheese dressing) and carrots and celery sticks.
- Combine the salt, chile powder, paprika, black pepper, granulated sugar, granulated onion, garlic powder and thyme in a mixing bowl and stir to evenly incorporate.
- Combine the vinegar, apple juice, ketchup, brown sugar, salt, black pepper, chile flakes and paprika in a nonreactive container and whisk to combine.
- Melt the butter over medium heat. Transfer to a mixing bowl, add the vinegar mixture and hot sauce and whisk to emulsify.
- Combine the mayonnaise, yogurt, blue cheese, buttermilk, lemon juice, garlic powder, granulated onion, black pepper and salt and mix well. Cover and store in the refrigerator until ready to use. Great as a dip or dressing.

- Preheat the oven to 425 degrees. Place a cooking rack over a baking sheet and spray it with non-stick spray.
- Add the chicken wings in a single layer to the cooking rack, if they are touching that’s ok, just not on top of each other. Generously add the dry rub mixture to the tops of the wings, rubbing in so they seasoning doesn’t fall off. You might not use all of the dry rub, so add it as you go. The dry rub can be saved in a plastic container for another use.
- Bake the chicken wings at 425 degrees for 30 minutes. After 30 minutes, turn the the temperature up to 450 degrees and bake for another 15 minutes.
