3 Tbsp butter or margarine, softened just a little
1 1/4 c bisquick mix
2 Tbsp boiling water
FILLING:
1 1/2 c shredded sharp cheddar cheese
3/4 c finely chopped cooked ham*
3 medium green onions, sliced
8 oz can pineapple tidbits , drained well
3 large eggs
3/4 c half & half or milk
1/4 tsp white pepper

Steps:

  • 1. Heat oven to 350^. Spray or butter a 9 or 10-inch glass pie plate. In a medium bowl, cut butter into Bisquick mix, using a pastry blender until crumbly. Add boiling water; stir vigorously until soft dough forms. Press dough on bottom and up sides of pie plate, using fingers dipped in Bisquick mix, forming edge on rim of pie plate- flute edge. --- Filling: Sprinkle cheese, ham, onions and pineapple in crust. In medium bowl, beat eggs, half & half and pepper until blended. Pour over filling. Bake 40-45 inutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving. --- *Note: You can substitute cooked chicken, turkey ground beef,salad shrimp- etc., you choose.

3 medium green onions, sliced (3 tablespoons)
1 can (8 oz) pineapple tidbits in juice, well drained
3 eggs
3/4 cup half-and-half
1/4 teaspoon white pepper

Steps:

  • Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. In medium bowl, cut butter into Bisquick mix, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. Add boiling water; stir vigorously until soft dough forms. Press dough on bottom and up side of pie plate, using fingers dipped in Bisquick mix, forming edge on rim of pie plate.
  • Sprinkle cheese, ham, onions and pineapple in crust. In medium bowl, beat eggs, half-and-half and pepper until blended. Pour into crust.
  • Bake 40 to 45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

1 3/4 cup Old Mill Buttermilk Biscuit Mix
4 tablespoons chilled butter, cubed
1/4 cup boiling hot water
1 cup ham, coarse or finely chopped
1/4 of a medium onion, diced, about 1/4-1/3 cup
3/4 cup drained pineapple tidbits
1 cup shredded sharp cheddar cheese
1/2 cup shredded Gruyère cheese
1 cup buttermilk
4 large or 3 jumbo eggs

Steps:

  • Preheat your oven to 350 degrees.
  • For the crust; in a medium sized mixing bowl cut the butter into the biscuit mix until it is coarse and crumbly. Pour about 3/4 of the boiling water over the mixture and stir. Keep mixing until the dough comes together. It should clean the sides of the mixing bowl and be soft and not sticky to the touch. Add boiling water or extra biscuit mix as needed.
  • Press the dough into a 9-inch pie plate. Press it evenly across the bottom and up the sides of the pie plate.
  • Back in the same mixing bowl you made the dough in, combine all of the ingredients for the filling and stir well to combine.
  • Pour the filling into the crust in the pie plate and bake for 40-45 minutes or until it tests done by inserting the blade of a knife in the center. It is done if blade is clean.
  • Let it rest for 10-15 minutes before serving.

Dubliner cheese is my all time favorite cheese! It is aged for 12 months, has elements of a mature cheddar, sweet nutty tones of a Swiss, and the piquant bite of aged Parmesan. The pineapple tidbits in this quiche give it a subtle sweetness.

1 (9 inch) unbaked ready-roll pie crusts (at room temperature)
1 1/2 cups dubliner cheese (freshly shredded)
1/2 cup swiss cheese or 1/2 cup mozzarella cheese, freshly shredded
1 1/4 cups minced ham (fully cooked)
4 slices canned pineapple (cut into tidbits, blotted dry on paper towel)
1 cup half-and-half cream
4 eggs
1/2 tablespoon dried onion flakes
1 tablespoon dried chives
2 pinches cayenne pepper
1/8 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Unroll the room temperature pie crust into a 9-inch Pyrex pie plate, or into a 10-inch Corningware quiche dish.
  • Loosely place the shredded cheeses over the pie crust.
  • Top the cheese with the minced ham, and the pineapple tidbits.
  • Combine the half & half, eggs, onion flakes, dried chives, cayenne pepper, and salt.
  • Pour cream mixture over cheeses, ham, and pineapple in the pie crust.
  • Bake the quiche at 350F for 40-45 minutes.
  • Cool on a wire rack for at least 15 minutes before slicing the quiche.

1 cup shredded gruyere cheese (about 4 ounces)
1 9-inch pie crust, thawed if frozen
3 large eggs
1 1/4 cups half-and-half
1/4 cup finely chopped fresh chives
Kosher salt and freshly ground pepper
1 tablespoon red wine vinegar
2 teaspoons dijon mustard
3 tablespoons extra-virgin olive oil
1 5-ounce package mesclun greens (about 8 cups)
4 white mushrooms, very thinly sliced

Steps:

  • Set a baking sheet on the middle oven rack; preheat to 425 degrees F. Scatter the ham and cheese in the pie crust. Whisk the eggs, half-and-half, chives, 1/2 teaspoon salt and a few grinds of pepper in a large bowl; pour into the crust. Transfer to the hot baking sheet and bake until the eggs are set and the top is lightly browned, about 30 minutes.

Vegetable oil, for poaching and sauteing
1/2 cup diced country ham
3 new potatoes, sliced 1/4-inch thick (about 1 1/2 cups)
1 homemade or store-bought refrigerated 9-inch pie crust
2 to 3 cups dried beans, to use as pie weights
4 large eggs, slightly beaten
3/4 cup half-and-half
Pinch kosher salt
1 teaspoon black pepper
1 cup grated aged gouda
1 green onion, chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat 1 tablespoon of the oil in a medium skillet over medium heat. Add the ham and saute until just starting to brown.
  • Place the potatoes in a small saucepan and cover with vegetable oil. Cook over low heat until the oil just starts to bubble and the potatoes are tender, about 15 minutes. Remove the potatoes and place on a paper towel-lined plate.
  • Meanwhile, line a 9-inch pie pan with the prepared pie crust and pierce with a fork. Cover with parchment and fill with the dried beans. Blind bake the crust for 10 minutes. Let cool, then carefully remove and discard the paper and beans.
  • In a medium bowl, beat together the eggs, half-and-half, salt and pepper. Layer the empty pie shell with the potatoes, ham, and 1/2 cup of the cheese. Pour the egg mixture over the filling. Sprinkle the remaining 1/2 cup cheese and the green onions over the top. Bake on the bottom rack of the oven until the center just sets and the top is golden, 35 to 40 minutes. Let cool 10 minutes before slicing.

  • Drain pineapple, reserving juice. Add enough water to juice to measure 1/2 cup; set aside. In a large nonstick skillet, lightly brown pineapple and ham. Whole cloves
1 can (20 ounces) sliced pineapple
1/2 cup packed brown sugar
12 maraschino cherries

Steps:

  • Place ham in roasting pan. Score the surface with shallow diagonal cuts, making diamond shapes; insert cloves into diamonds. Cover and bake at 325° for 1-1/2 hours. ½ cup whole cloves
1 (20 ounce) can pineapple rings in heavy syrup
½ cup packed brown sugar
1 (12 fluid ounce) can or bottle lemon-lime flavored carbonated beverage
1 (4 ounce) jar chopped maraschino cherries

Steps:

  • Preheat the oven to 325 degrees F (160 degrees C).
  • Place ham in a roasting pan. Score the rind of the ham with a diamond pattern. Press a clove into the center of each diamond. Drain the juice from the pineapple rings into a medium bowl, and stir in the brown sugar and lemon-lime soda. Coat the ham with this mixture. Arrange the pineapple rings over the outside of the ham. Place a maraschino cherry in the center of each pineapple ring, and secure with a toothpick.
