Eagle Brand Festive Fudge image

A holiday must-have! Great to place on the dessert table, or give to family and friends as chocolatey gifts.

Number Of Ingredients 5

3 cups semi-sweet chocolate chips or 3 cups milk chocolate chips
1 (14 ounce) can eagle brand sweetened condensed milk (NOT evaporated milk)
1 dash salt
1/2-1 cup chopped nuts (optional)
1 1/2 teaspoons vanilla extract

Steps:

  • In heavy saucepan, over low heat, melt chocolate chips with EAGLE BRAND® and salt. Remove from heat; stir in nuts (optional) and vanilla. Spread evenly into wax paper lined 8- or 9-inch square pan.
  • Chill 2 hours or until firm. Turn fudge onto cutting board, peel off paper and cut into squares. Store leftovers covered in refrigerator.

3 cups semi-sweet chocolate chips
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
1 tablespoon vanilla extract
Finely chopped toasted nuts, flaked coconut, chocolate sprinkles, colored sprinkles, unsweetened cocoa, powdered sugar or colored sugars

Steps:

  • Melt chocolate chips with sweetened condensed milk in large saucepan over low heat. Remove from heat; stir in vanilla.
  • Pour into medium bowl. Cover and chill 2 to 3 hours or until firm.
  • Shape into 1-inch balls; roll in desired coating and/or decorate with frosting and candies. Chill 1 hour or until firm.

1 (300 ml) can eagle brand sweetened condensed milk
1 (1 kg) package icing sugar
1/2 teaspoon peppermint extract
assorted coloring granulated sugar or sugar crystals

Steps:

  • Beat Eagle Brand and half of the sugar until blended. Gradually add remaining sugar and peppermint extract, beating until stiff.
  • Roll mixture into 1/2-inch balls; roll in desired decorative sugar and place on wax-paper-lined baking tray. Let stand 8 hours. Store covered at room temperature.

These come from the Eagle Brand Holiday Magic cookbook. I haven't made these yet but am looking forward to adding them to my gift tins this holiday season. I'm also planning to flatten some and dip them in chocolate like york peppermint patties. Cook time listed is time to let set.

2 lbs powdered sugar
1/2 teaspoon peppermint extract
colored crystal sugar, crystals for rolling

Steps:

  • Beat together condensed milk and half of the powdered sugar until blended. Add the flavoring and gradually mix in the remainder of the powdered sugar, beating until stiff.
  • Roll mixture into 1/2 inch balls and then roll in desired colored sugar. Place on parchment paper and allow to set 8 hours. Store covered at room temperature.
