Sautéed Chicken in Creamy Red Pepper Sauce is so incredibly flavorful but simple. Serve it over noodles, zoodles, spaghetti squash or with roasted veggies!

2 tbsp olive oil or avocado oil
2 lbs chicken breasts
1 red bell pepper (thinly sliced, cored)
2 1/2 oz fresh baby spinach
salt & pepper to taste
16 oz jarred roasted red peppers (drained)
1/2 cup chicken stock or broth
1/4 cup olive oil (extra virgin)
8 fresh basil leaves
1 tsp garlic (minced)
1/2 tsp onion powder
1/2 tsp salt

Steps:

  • Add 1 tbsp of oil to hot skillet on medium high heat. Add thinly sliced red peppers. Sauté until tender with some browning. Remove red peppers from the skillet and set aside.
  • Slice the chicken breasts horizontally. This will give you very thin cutlets so they'll cook faster and more evenly.
  • Add other 1 tbsp of oil to pan. Add chicken to the hot pan. Liberally salt and pepper the side facing up. Sauté until each side has some browning and chicken is cooked through or mostly cooked through, about 3 to 4 minutes per side.
  • Remove chicken from the skillet and set aside on a plate. Lower heat to medium.
  • Add all Creamy Red Pepper Sauce ingredients to a blender. Blend until smooth.
  • Pour sauce into skillet. Add the red peppers, chicken, and spinach to your sauce. Cover. Let simmer on medium to medium low for 5 minutes or until chicken is cooked through and sauce is warmed.

6 chicken breast fillets, flattened to 1/4-inch-thick
3 tablespoons olive oil
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
1 tablespoon Italian seasoning
2 tablespoons salted butter
1 tablespoon olive oil
1/2 large onion, finely diced
3 cloves garlic, minced
1 jar (15.5 ounces) roasted red peppers, drained and roughly chopped
1 to 2 cups vegetable or chicken broth
1/2 teaspoon kosher salt, more to taste
Freshly ground black pepper
1/2 cup heavy cream (or more to taste)
One 4-ounce chunk Parmesan, to shave
2 tablespoons finely minced parsley

Steps:

  • For the chicken: Put the chicken in a resealable bag. Add the olive oil, salt, pepper and Italian seasoning to the bag and smush everything together. Seal and refrigerate.
  • For the red pepper sauce: Melt the butter and add the olive oil in a large skillet over medium-high heat. Add the onion and garlic and saute for 2 to 3 minutes or until starting to soften. Add the red peppers and cook for 2 to 3 minutes, until hot.
  • Add the broth (if you like a thicker sauce only add 1 cup broth, for a thinner sauce add 2 cups broth), salt and pepper and stir until heated. Splash in the cream.
  • Remove the skillet from the heat. Carefully transfer the contents of the skillet to a food processor or blender. Place on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers). You can serve the sauce right away or cool it and bag it up.
  • When ready to cook, heat a grill pan over medium-high heat and grill the chicken until cooked through, about 4 minutes a side.
  • Heat up the red pepper sauce in a pan. Serve everyone a piece of chicken, spoon some sauce over each piece, and garnish with Parmesan shavings and a sprinkling of parsley. Serve with roasted vegetables alongside.

3 tablespoons vegetable oil, divided
2 garlic cloves, minced
1 (7 ounce) jar roasted red peppers, cut into strips
3/4 cup fat-free low-sodium chicken broth
2 tablespoons red wine vinegar
1 1/2 teaspoons sugar
1 tablespoon butter
2 tablespoons chopped fresh parsley

Steps:

  • Place each breast between 2 sheets of parchment paper or plastic wrap and pound to an even 1/2-inch thickness. Sprinkle with salt. Coat with flour, shaking off excess.
  • Warm 2 tablespoons of oil in a large skillet over medium-high heat. Cook chicken until golden brown on both sides and cooked through, about 4 minutes per side. Transfer to a platter and cover loosely.

1 can (15 ounces) chickpeas, rinsed and drained
1 jar (12 ounces) roasted red peppers, drained (reserving 1 teaspoon brine) and sliced
2 tablespoons unsalted butter, melted
2 tablespoons hot sauce, such as Goya
1/4 teaspoon smoked paprika
Kosher salt and freshly ground pepper
4 small chicken legs (about 2 1/4 pounds total)
2 cups watercress, tough stems removed
1 lemon, cut into wedges
Toasted flatbread, for serving

Steps:

  • Preheat oven to 450 degrees with rack in upper third. Scatter chickpeas and peppers in the bottom of a shallow, broilerproof 9-by-13-inch baking dish. Stir together butter, hot sauce, paprika, and pepper brine. Season with salt. Place chicken on top of chickpea mixture and brush both sides with all of butter mixture; season with salt and pepper. Roast, skin-side up, until chicken begins to brown and a thermometer inserted into thickest parts (not touching bones) reads 160 degrees, 25 to 30 minutes.

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a large skillet over medium-high heat; add the olive oil. Season the chicken with salt and pepper to taste. Lay the chicken skinned side down in the skillet and cook, turning once, until golden, about 4 minutes per side. Transfer the chicken to a baking dish or roasting pan and bake just until firm to the touch, about 10 minutes.
  • Meanwhile, add the onion, garlic, thyme to the skillet and season with salt and pepper, to taste. Cook, stirring occasionally, until brown, about 5 minutes. Add the artichokes and peppers and cook until brown as well, about 3 minutes. Add the vermouth and stir with a wooden spoon to scrape up the browned bits from the bottom of the pan. 2 -3 lbs chicken, cut into serving pieces
salt
fresh ground black pepper
1/4 cup olive oil
2 large onions, cut into strips
2 teaspoons chopped garlic
2 red peppers, cut into strips
1 green pepper, cut into strips
1/2 cup smoked ham or 1/2 cup presunto serrano pepper
6 medium tomatoes, peeled and seeded, finely chopped
8 pitted black olives, cut in half
10 pitted green olives, cut in half

Steps:

  • Wash and pat dry chicken, sprinkle liberally with salt and a grounded black pepper. in a skillet, heat oil over medium heat. Brown the chicken a few pieces at a time, with skin side down first, turning them to brown till nice and golden. Regulate heat so that the chicken colours quickly, but without burning. When chicken is a rich brown remove to a platter, and set aside.
  • Now add in the onion, garlic, peppers and presunto to the remaining fat in the skillet. Cook for about 10 minutes over medium heat till vegetables are soft, but not brown. Now add in your tomatoes, put heat up and cook till liquid in the pan evaporated and mixture is thick and holds its shape lightly in a spoon. Now you may return the chicken back into the skillet, and stir so its well coated with the tomato sauce. Cover skillet and let cook for 30 minutes over low heat til its tender but not falling apart. Stir in you olives and place in a serving platter. Decorate with chopped parsley over top.

  • Preheat broiler. Place 4 of the pepper halves on rack of broiling pan. Broil about 5 minutes on each side or until peppers are lightly charred. Remove peppers to brown paper bag. Close bag so that peppers can steam for 10 minutes. Remove skin from peppers. Cut remaining uncooked pepper halves into strips and set aside.
  • Blend roasted peppers, vinegar, TABASCO® Sauce and salt in food processor or blender. Gradually add 1 tablespoon oil until mixture is smooth.
  • Heat remaining 2 tablespoons oil in heavy skillet over high heat. Sprinkle chicken with salt and pepper and add to pan. Sauté 8 to 10 minutes on each side or until done. Remove chicken from skillet. Add pepper strips to skillet and sauté 1 to 2 minutes. Serve chicken with pepper strips and sauce.

"I created this recipe as a way to introduce different vegetables to my family," advises Kelly Cobb, Mason, Ohio. "My 3-year-old son said it was the best chicken he'd ever tasted."

3 medium sweet red peppers, cut in half lengthwise and seeded
1 large whole garlic bulb
1 teaspoon plus 1 tablespoon olive oil, divided
4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
1/2 cup sliced leek (white portion only)
1/2 cup reduced-sodium chicken broth
Hot cooked pasta, optional
1/4 cup shredded Parmesan cheese

Steps:

  • Broil peppers 4 in. from the heat until skins blister, about 15 minutes. Immediately place peppers in a bowl; cover and let stand for 15-20 minutes. Peel off and discard charred skin. Coarsely chop peppers; transfer to a food processor., Remove papery outer skin from garlic (do not peel or separate cloves); cut top off of garlic bulb. Brush with 1 teaspoon oil. Wrap bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. Squeeze softened garlic into the food processor with peppers; cover and process until almost smooth. Set aside., Sprinkle both sides of chicken with 1/4 teaspoon salt and 1/8 teaspoon pepper. In a large nonstick skillet, cook chicken in remaining oil over medium heat for 3-4 minutes on each side or until lightly browned. Remove and keep warm., In the same skillet, cook leek for 2 minutes or until leek is lightly browned. Add broth, stirring to loosen any browned bits from pan. Add red pepper mixture, chicken and remaining salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 3 minutes until the chicken juices run clear. Uncover; pepper sauce over pasta if desired. Sprinkle with Parmesan cheese.

½ pound fresh asparagus, trimmed and cut into 2 inch pieces
1 (7 ounce) jar roasted red peppers, drained and chopped
1 clove garlic, minced
½ cup chopped roma (plum) tomatoes
1 teaspoon balsamic vinegar, or to taste
½ cup shredded mozzarella cheese

Steps:

  • Heat the broth in a large skillet over medium-high heat. Season chicken with salt and pepper, and place in the skillet. Cook 15 minutes, until chicken is almost done.
  • Place asparagus, red peppers and garlic in skillet. Continue cooking 10 minutes, or until chicken juices run clear and asparagus is tender. Place tomatoes in skillet during last 2 minutes of cook time. Sprinkle with vinegar. Top with mozzarella cheese to serve.
