These are a big hit every time I make them. They are an addition to a basket donated at a local fundraiser full of maple products. Sweet with a smooth flavor, they pair well with your favorite vanilla ice cream or whipped cream!

16 (3 inch) unbaked tart shells
1 cup raisins
¾ cup brown sugar
¼ cup butter, softened
2 eggs
½ cup maple syrup
1 tablespoon all-purpose flour
1 tablespoon vanilla extract
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place tart shells on a baking sheet; sprinkle raisins evenly into the bottom of tart shells.
  • Beat brown sugar and butter together in a bowl until smooth; whisk in eggs, maple syrup, flour, vanilla extract, and salt. Fill each tart shell 3/4 full with maple syrup mixture.
  • Bake in the preheated oven until filling is set and shells are golden, about 16 minutes. Turn the baking sheet halfway through the baking time for even baking.

For those of us who live in the land of maple syrup, we see plenty in the month of March. The trees are tapped, maple syrup runs freely, and we all head out to the sugar bush for samples. This recipe is an old favorite from our ancestors.

1 egg
1 cup real maple syrup
1 tablespoon butter, melted
¼ cup packed brown sugar
1 tablespoon lemon juice
½ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat the egg gently with a fork, and then mix with maple syrup, melted butter, brown sugar, lemon juice, and nuts. Fill tarts 2/3 full.
  • Bake for 20 to 25 minutes.

This is the kind of dessert I love, both for its ingredients and its tart form. Cornmeal and maple syrup said autumn to me and buttermilk is an American classic, perfect for this very American holiday. As much as I love pie, I'm a tart girl-maybe it's the simplicity of the clean, fluted round edges, or that you only have to roll out only one crust, or that the final wedge on the plate is so compact and elegant. This tart may seem small at only 8 inches, but it's very rich and filling.

1 cup all-purpose flour, plus more for dusting
2 tablespoons fine stone ground cornmeal
2 tablespoons confectioners' sugar
2 tablespoons superfine sugar
Pinch fine salt
6 tablespoons cold unsalted butter, cut into 6 pieces
1 large egg yolk, lightly beaten
Granulated or sanding sugar, for garnish, optional
2/3 cup maple sugar
2 tablespoons all-purpose flour
Pinch fine salt
5 tablespoons butter, melted and slightly cooled
3/4 cup buttermilk
1 teaspoon vanilla extract
2 large eggs, lightly beaten

Steps:

  • For the crust: Pour the flour, cornmeal, sugars and salt into the bowl of a food processor fitted with a metal blade and process to combine. Scatter the butter over the top and pulse with the dry mixture to coat, and then continue pulsing until cool and almost sandy, about eight 3-second pulses. Drizzle the yolk over the top, and pulse again until the ingredients are moist and barely starting to clump, about another 8 pulses. The dough should just hold together when you squeeze it in your palm. If not, add 1 teaspoon of cold water and pulse briefly.
  • Turn the dough out onto a lightly-floured work surface. Smear out the dough across the work surface using the heel of your hand until it begins to come together. Gather the dough back together and shape it into a disc. Wrap in plastic and chill for 1 hour.
  • Let the dough warm up slightly before rolling it out (if you roll it while it is cold, it will crack). Roll the dough on a lightly-floured work surface with a rolling pin into a 1/8 to 3/16-inch-thick circles, 10 to 11 inches in diameter. Fit the dough into an 8-inch tart pan with a removable bottom. Don't worry if it cracks a bit; you can patch it with some of the trimmings. Press the dough firmly into the bottom of the pan where it meets the sides, and then roll the rolling pin across the pan to cut off the overhang. Press the dough firmly against the sides of the pan and back up to the top using your fingers (sometimes the rolling pin pushes the dough down the sides of the pan a bit). Chill in the refrigerator for 30 minutes.
  • Preheat the oven to 350 degrees F. Position the rack on the lowest rung of the oven and put a baking sheet on top. Line the chilled crust with a 10-inch coffee filter and weight it down with dried beans or rice. Place on the hot baking sheet and bake until the sides begin to turn golden brown, 15 to 20 minutes. Remove the shell from the oven, carefully remove the beans and filter and then return to the oven until completely golden brown and baked through, another 10 to 15 minutes. Reduce the heat to 325 degrees F. Let cool before adding the filling, about 10 minutes.
  • For the filling: Pulse the maple sugar, flour and salt in a food processor until combined. Add the melted butter and pulse to combine, and then add the buttermilk and vanilla and pulse to combine again. Add the eggs and pulse until just combined-don't over-mix. Strain into the tart shell. Bake the tart until the sides are set (they may puff slightly) and the middle still jiggles slightly when you tap the pan, 30 to 35 minutes. Cool on a rack for at least 45 minutes. Serve warm or at room temperature, garnished with cookies as desired.

3/4 stick (6 tablespoons) cold unsalted butter, cut into 1/2-inch cubes
2 tablespoons cold vegetable shortening
2 to 4 tablespoons ice water
For filling
2 cups granulated maple sugar*
1 cup heavy cream
1/2 cup walnuts (2 1/2 oz), chopped
2 large eggs
Accompaniment: crème fraîche
Special Equipment
a 9- by 1-inch fluted round tart pan with removable bottom; pie weights or raw rice

Steps:

  • Make pastry:
  • Whisk together flour and salt. Blend in butter and shortening with your fingertips or a pastry blender (or pulse in a food processor) until mixture resembles coarse meal with some small (roughly pea-size) lumps. Drizzle evenly with 2 tablespoons water and gently stir with a fork (or pulse in food processor) until incorporated. Gently squeeze a small handful: If it doesn't hold together, add more water, 1 tablespoon at a time, stirring (or pulsing) after each addition until incorporated and continuing to test. (Do not overwork dough, or pastry will be tough.)
  • Turn dough out onto a work surface and divide into 4 portions. With heel of your hand, smear each portion once in a forward motion to help distribute fat. Gather dough and form it, rotating on work surface, into a disk. Chill dough, wrapped in plastic wrap, until firm, at least 1 hour.
  • Preheat oven to 350°F.
  • Roll out dough into a 12-inch round and fit into tart pan. Trim excess dough, leaving a 1/2-inch overhang, then fold overhang inward and press against side of pan to form a stronger edge. Prick bottom all over with a fork. Line bottom and side of pastry with foil and fill with pie weights.
  • Bake in middle of oven 20 minutes, then carefully remove foil and weights and bake until golden, 10 to 15 minutes more. Remove shell from oven but leave oven on.
  • Make filling while pastry is baking:
  • Slowly bring sugar and cream to a boil in a 2- to 3-quart heavy saucepan over moderately low heat, stirring, until sugar is dissolved, then boil until thickened, about 10 minutes. Remove from heat and add nuts, then cool slightly.
  • Whisk eggs in a bowl, then gradually whisk in nut mixture.
  • Pour filling into warm baked pastry shell, then bake tart in middle of oven until filling is set, 25 to 30 minutes.

1 teaspoon sugar
1 stick (1/2 cup) cold unsalted butter, cut into small pieces
1/4 teaspoon salt
1/4 cup cold water
2 large eggs
1/2 cup dark amber or Grade B maple syrup
6 tablespoons packed light brown sugar
3/4 stick (6 tablespoons) unsalted butter, melted and cooled
3 tablespoons granulated maple sugar (see cooks' note, below)
1 1/2 tablespoons cider vinegar
Rounded 1/8 teaspoon salt
2/3 cup pecans (2 1/2 ounces), finely chopped
Accompaniment: unsweetened whipped cream
a pastry or bench scraper (optional); a 4 1/2-inch round cookie cutter; 8 (3 1/2-inch) fluted round tartlet pans; pie weights or raw rice

Steps:

  • Blend together flour, sugar, butter, and salt in a bowl with your fingertips or a pastry blender until mixture resembles coarse meal with some small (roughly pea-size) butter lumps. Drizzle water evenly over mixture and gently stir with a fork until incorporated and dough forms a ball.
  • Turn dough out onto a lightly floured surface and divide into 4 portions. With heel of your hand, smear each portion once in a forward motion to help distribute fat.   • Transfer tartlet pans to a baking sheet and chill until dough is firm, about 15 minutes.
  • Line each tartlet shell with foil and fill with pie weights. Bake until edges are pale golden, 8 to 10 minutes. Carefully remove foil and weights and continue baking until bottoms are golden, about 5 minutes more. Cool completely in pans on a rack, about 10 minutes. Reduce oven temperature to 350°F.
  • While shells cool, whisk together all filling ingredients except nuts until combined well. Return cooled tartlet shells (in their pans) to baking sheet and divide nuts among shells. Ladle filling into shells, dividing it evenly.
  • Bake tartlets until filling is just set, 15 to 18 minutes. Cool in pans on rack, about 15 minutes, then carefully remove tartlets from pans. Serve warm or at room temperature.

1-1/2 cups raisins
2 cups boiling water
1-3/4 cups packed brown sugar
3 eggs

Butter pecan or vanilla ice cream, optional

Steps:

  • Cut each pastry sheet into quarters; roll each quarter into a 6-in. circle. Transfer pastry to eight ungreased 4-in. fluted tart pans with removable bottoms. Trim pastry even with edges. Place on baking sheets. Bake at 450° for 5-6 minutes or until golden brown. Cool on wire racks. Reduce heat to 350°., Place raisins in a large bowl. Cover with boiling water; let stand for 5 minutes. Drain. In another bowl, beat the brown sugar, eggs, butter, syrup and flavoring; stir in raisins. I grew up near several large producing maple sugar bushes in Canada and maple syrup was in many things my mother made. Butter tarts are a traditional Canadian treat, these include real maple syrup.

1 pastry for double-crust deep dish pie
1 cup raisins (optional) or 1 cup walnuts (optional)
3 eggs
1 cup real maple syrup
2/3 cup brown sugar, packed
1/3 cup butter, melted
1 pinch salt

Steps:

  • Roll out pastry and cut into 12 circles.
  • Fit pastrys into muffin or tart cups.
  • Sprinkle raisins and or walnuts in the bottom of each tart.
  • Beat together eggs, maple syrup, brown sugar, butter and salt.
  • Pour into tart shells, about 2/3 full.
  • Bake at 375 F for 20-25 minutes, until set.
  • Cool 5 minutes and remove from pan.
  • In some places you can find pre made tart shells in the freezer section along side pie shells.

I got this recipe from my MIL, it originally comes from our community newspaper. They are so tasty and our family has decided that we prefer these to butter tarts. Prep time includes chilling the pastry and cook time includes set time for the tarts. Top with whipping cream if desired.

3 large eggs
1 cup maple syrup
3/4 cup brown sugar, packed
2 tablespoons butter or 2 tablespoons margarine, melted

1 cup walnuts, coarsely chopped

Steps:

  • To make pastry: in a medium bowl, combine flour,sugar,salt and baking powder.
  • Cut in butter or margarine and shortening until mixture is crumbly.
  • Add water, 2 tbsp at a time, mixing with a fork; add a little more or less than the 1/2 c water as needed.
  • Press mixture into 2 flat disks, wrap in wax paper and refrigerate for 30 minutes.
  • To make filling: beat together eggs, syrup, brown sugar, melted butter or margarine and vanilla until just blended.
  • On a lightly floured board, roll pastry disks to 1/16" thick.
  • Cut into 5 inch circles. Roll scraps of dough and cut again. Line 12-3 inch tart pans with pastry. Divide walnuts equally between tart shells. Pour maple syrup mixture over walnuts. Bake at 425°F for 20-25 minutes, or until pastry is golden and filling is soft set. Let stand 15 minutes befire removing from tart pans.
