Just the thing for a cold wintry night. Here is a wonderfully easy recipe for traditional Indian tomato soup. It is ready in a jiffy, tastes wonderful, and acts as a lovely side-dish or appetizer. Serve it with a heavy curry/rice combo and some papadams and you are in heaven.

Steps:
- Place the tomatoes and 1/2 cup water in a microwave-safe bowl, and cook on High 4 minutes in the microwave. Reserve the cooking water. Cool tomatoes slightly, peel, and discard skins. Process the tomatoes, reserved water, and garlic in a blender or food processor until smooth.
- Melt the ghee in a skillet over medium heat, and cook the mustard seed 1 minute. Stir in the curry leaves. Pour the processed tomatoes and garlic into the skillet. Stir in remaining 1 cup water. Mix in sugar, paprika, and salt. Bring to a boil, reduce heat to low, and mix in the cilantro. Continue cooking 5 minutes. Serve warm.

INDIAN LENTIL SOUP (DAL SHORVA)
An inexpensive, easy-to-make and delicious soup. This slightly modified recipe stems from Mumtaz Khan at Mumtaz Paan House in Bradford, England. Mung beans is the exquisite choice, but red or yellow lentils also make a delicious result (green lentils are not recommended). The chicken stock can be replaced with vegetable stock for a vegetarian variety. This recipe can also be made with less liquid and served as a stew.¨ Improvement, a little off tradition, but works even better: 1) Fry the lentils/beans for a few seconds in ghee before adding the spices and liquid. 2) Add just a little tomato purée (1 tsp) to the soup. 3) Add one diced potato together with the lentils/beans.

Steps:
- Rinse the beans or lentils.
- Bring to a boil with the stock, turmeric, Cayenne, cumin, cardamom and curry/bay leaves.
- Let simmer until the beans or lentils are very soft (ca 30 minutes).
- If using bay leaves, remove them now. Curry leaves can be left in the soup.
- Run the soup quickly in a blender to a not too smooth consistency (or mash the lentils/beans with a ladle).
- Sautee the garlic and mustard seeds lightly in the fat and add to the soup.
- Let simmer for another 5 minutes.
- Add salt, pepper and squeezed lemon to taste.
- Serve hot with pita or paratha bread.

MULLIGATAWNY SOUP - WORLD CLASS (EAST INDIAN)
Direct from the most famous soup vender in New York City USA. Every once in a while one should devote themselves to making something spectacular. For me it's this soup recipe. The recipe's long and a bit time consuming but I guarantee you the taste is so good, it'll make your knees buckle.

- In a very large soup pot combine water and chicken stock.
- Peel and slice potatoes and carrots.
- Peel and dice eggplant, and onion into 1/4 inch cubes.
- Finely chop roasted pepper and parsley.
- Add prepared vegetables and all remaining ingredients to pot.
- Stir to combine and bring to a boil over med/high heat.
- Reduce heat to low and slow simmer uncovered for 4-5 hours, or until soup has reduce in volume by half. (It should be thick and brownish in colour and the consistancy of chili).
- Stir often as soup starts to become thicker.
- When nuts have softened, soup is ready.

GOOD EATS INDIAN SUMMER SOUP
This soup is served at a local restaurant called Lucky's Cafe. I believe it was originally served at Good Eats, which is no longer in business and seems to have transmogrified itself into Lucky's. The recipe was originally published in the Dallas Morning News in 1996. I'm guessing at the preparation time as I've never made this recipe at home - I've only had the soup in the restaurant. And boy, is it good!!!

Steps:
- Rinse the chicken breasts, pat dry, and brush with oil.
- Season with salt and pepper.
- Slice onion into rings 1/4 inch thick, but don't separate the rings.
- Rinse the poblano pepper and pat dry.
- Grill the onion, pepper and chicken over medium heat for 10 to 15 minutes, or until the vegetables are soft and chicken is cooked through.
- Place the pepper in a small paper sack while it is still hot and let it cool for 20 minutes, then peel off the skin and scrape out the seeds.
- Chop the onion, pepper and chicken into bite-size pieces.
- Melt butter in a large heavy pot over low heat.
- Saute garlic and mushrooms in the butter for 5 minutes or until softened.
- Add the chicken, onions, pepper, corn and 2 cups of water.
- Mix and simmer for 5 minutes.
- Add cubed cheese and simmer until the cheese has melted.
- DO NOT allow the soup to boil.
- In a separate bowl, mix the cornstarch with 1/2 cup water.
- Stir dissolved cornstarch into the remaining 1 1/2 cups of water and add to soup.
- Cook over low heat until thickened, stirring constantly.

- Combine cumin seed, turmeric, ground cumin, and coriander in the bottom of a heavy 6- to 8-quart stockpot. Cook over medium heat until fragrant, about 30 seconds. Add olive oil, followed by onion and garlic; cook until onion begins to soften and garlic is fragrant, about 5 minutes. Stir in vegetable broth, tomatoes, lentils, salt, and white pepper.
- Bring mixture to a boil over high heat. Reduce heat and let simmer for 30 minutes. Taste and adjust seasonings. Continue to simmer until lentils are cooked through and tender, about 1 hour.

- Heat ghee or vegetable oil in large pan (use low heat); cook onion, garlic, ginger, chilies, spices and curry leaves, stirring, until onion is browned lightly and mixture is fragrant. Do not over brown the onion or else it will give the soup a burnt taste.
- Add carrot, apple, potato, dhal, and chicken stock to pan; simmer, covered, for about 15 minutes or until vegetables are just tender. Discard cardamom pods and curry leaves.
- Blend or process soup mixture, in batches, until pureed; return to pan. Add tamarind, lemon juice, coconut milk and fresh coriander leaves; stir until heated through.
