CROCK POT BACON MUSHROOM SWISS CHICKEN
This Crock Pot Bacon Mushroom Swiss Chicken is a wonderfully flavorful combination!

Steps:
- Pour your reserved bacon grease in a skillet and heat up over medium heat
- Place your chicken breasts in the warmed grease and cook for 3-5 minutes until slightly golden (turning once)
- Spray your crock pot with cooking spray
- Put your chicken in your crock pot
- Cover with your mushrooms
- Pour your soup in your skillet, warm through, then pour over your chicken
- Cover and cook on low for 4-5 hours, check with a meat thermometer to know when the chicken is done
- Place a slice of Swiss on top of each chicken breast, sprinkle with bacon, turn heat up to high and cover and cook for 10-15 minutes more until the cheese is melted

- Spray crockpot with cooking spray. Place the stuffing mix on the bottom, add flavor packet. Sprinkle with water. Wrap each frozen breast with 2 slices of bacon. Place on top of the stuffing mix. Pour can of soup over top of chicken. Cook on LOW for 7 to 10 hours or on HIGH for 5 to 7 hours. Place cheese slices on top to melt 15 minutes before serving. - In a small bowl, mix mayonnaise, mustard and honey. Pound chicken with a meat mallet to 1/2-in. thickness. Sprinkle chicken with steak seasoning. Grill chicken, covered, over medium heat or broil 4 in. from heat until a thermometer reads 165°, 4-6 minutes on each side Top with cheese during the last 1 minute of cooking., Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Steps:
- Slice into the chicken several times, about ½ cm (¼ inch) apart, but only cut about 85% of the way through, leaving the bottom intact.
- Cook the bacon over a medium heat until it starts to get crispy.
- Preheat the oven to 350°F (180°C).
- Stir in the spring onions and cook for another minute or so.
- Add the cream cheese and cook until melted.
- Allow filling to cool to the touch, and then fill each segment of the chicken breast with about 1 teaspoon of the mixture.
- Bake in the centre of the oven for 18-22 minutes until the chicken is cooked through and the juices run clear.

I found this AMAZING recipe from the "crockpot lady" on her crockpot365 blogspot - also amazing. Anyway, this chicken is ridiculously easy and so versatile. It makes a mean sandwich, delicious wrap,is great served with french fries, or just straight up. You could also place it on a bed of lettuce for a great salad. The recipe helps keep they kitchen tidy and uses less energy by using a slow cooker! My whole family was "humming" when I made this and served it - it's a keeper!
