3 - 4 very ripe bananas (about 1 ½ - 2 cups mashed)
½ cup canola oil (or replace with 1/3 cup apple sauce)
1/3 cup honey
2 tsp vanilla extract
1 ½ cups all-purpose flour (or half whole wheat, half all-purpose)
1 tsp baking powder
1 tsp baking soda
1 cup chopped walnuts (optional)
1/3 cup to ½ cup chocolate chips (optional)

Steps:

  • Pre-heat oven to 325 degrees F.
  • Spray with cooking spray a 8 X4 inch loaf pan
  • In a large bowl, mash bananas and add oil, honey, vanilla and give it a good stir to combine all the ingredients together.
  • Add baking soda, baking powder, to the banana mixture and give it a stir to combine
  • Slowly add flour to the banana mixture and stir well until well incorporated and no clumps of flour are visible.
  • Add your walnuts and nuts if using any and give it a good stir to combine well.
  • Transfer mixture to a prepared loaf pan and bake in preheated oven for 60 minutes or until toothpick test comes out clean. Start checking the banana bread after 45 minutes as ovens can very.
  • Once banana bread is done let it cool in the pan for about 20 minutes before transferring it out of the pan and onto a cooling rack.

1 cup mashed ripe bananas
2/3 cup sugar
1/3 cup shortening (or butter)
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon (optional)
1/2 teaspoon nutmeg (optional)
1 cup chocolate chips or chopped nuts (optional)

Steps:

  • Preheat the oven to 350 degrees Fahrenheit and grease the pan with cooking spray.
  • Using an electric mixer, cream the brown sugar and shortening, or butter, together for five minutes. If using shortening, the mixture will not be smooth.
  • In a separate bowl, combine the flour, baking soda, baking powder, and salt. Add the cinnamon and nutmeg in if desired.
  • Mash up the banana thoroughly. Alternate adding the mashed banana and dry ingredients to the creamed mixture. Beat after every addition.
  • Mix in chocolate chips or chopped nuts if desired. The batter will be thick.
  • Carefully add the banana bread mixture to the greased baking pan. Bake for 40-45 minutes, checking with a toothpick until it comes out clean. Allow the bread to cool in the pan for 10 minutes before moving it onto a wire rack.
  • Unfortunately, banana bread can dry out easily. For this recipe, check the bread at 40 minutes with a toothpick to see if it is done. If the toothpick comes out clean, the bread is done. If there are lots of crumbs on the toothpick, continue baking for up to five more minutes, checking periodically to see if it is done.

This egg free banana bread is very quick, fuss free yet nutritious, and makes a simple and wonderful snack for the family. It can be eaten plain or added with fruits, nuts, seeds and chocolate chips. Just add 1/2 cup of the nuts, etc to the mixture last, just before pouring the mixture into the loaf pan. Enjoy!

3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup sugar
3 large ripe bananas
1/2 cup applesauce
4 tablespoons butter or 4 tablespoons margarine, melted
1/4 teaspoon vanilla extract
1/2 cup chocolate chips (optional)
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Mix the first five (dry) ingredients together in a large mixing bowl.
  • In a separate bowl, mash the bananas well.
  • Stir the butter or margarine, vanilla extract and applesauce into the bananas.
  • Add the banana mixture into the mixing bowl with the dry ingredients.
  • Mix gently by hand, just enough to form a thick, clumpy batter. If the mixture seems too dry, add more mashed banana or applesauce to adjust the consistency.
  • Fold in chocolate chips and/or walnuts, if using.
  • Pour batter into greased loaf pan and bake for 45 minutes or until the bread is a deep golden brown and a knife inserted in the center comes out clean.
