I used to pick blackberries in the summer for my mom to make this wonderful treat. Serve with vanilla ice cream.

½ cup butter, melted
1 cup white sugar
1 cup self-rising flour
¾ cup milk
2 cups fresh blackberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour the melted butter into the bottom of an 8x8-inch square baking pan. Mix the sugar, self-rising flour, and milk together until moistened, and pour the mixture over the butter. Do not stir. Spread blackberries evenly over the batter.
  • Bake in the preheated oven until the top is browned and the cobbler is bubbling, about 45 minutes.

3 cups fresh blackberries
1 cup sugar, divided
3/4 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla extract
3/4 cup milk

Steps:

  • Preheat oven to 350 degrees.
  • Melt the butter in a 1.5-quart baking dish while preheating the oven.
  • In a large bowl, gently combine fruit and 1/2 cup sugar.
  • In a separate bowl, whisk remaining 1/2 cup sugar, flour, baking powder, salt, vanilla, and milk.
  • Pour the batter into the baking dish, do not stir.
  • Distribute the fruit evenly on top of the batter, but DO NOT STIR.
  • Bake 1 hour.
  • Serve warm or at room temperature.

I loved my grandmother's blackberry cobbler. Unfortunately, I never had the opportunity to get her recipe. This is a recipe I got from Southern Living Magazine and modified to my taste. It is wonderful!

1 cup sugar
1/2 cup all-purpose flour
1/2 cup melted butter
2 teaspoons vanilla extract
1/2 package refrigerated pie crust
3 1/2 cups frozen unthawed blackberries
1 tablespoon sugar
1 egg white
2 tablespoons water

Steps:

  • Stir together the sugar, flour, butter and vanilla.
  • Gently stir in blackberries.
  • Spoon blackberry mixture into a lightly greased 11 x 7 baking dish.
  • Cut the piecrust into strips and arrange on top of blackberry mixture.
  • Mix together the egg white and water.
  • Brush the pie crust strips with this egg wash.
  • Sprinkle with sugar.
  • Bake at 425 for 45 minutes, or until crust is golden brown and blackberries are bubbly.

Blackberry Cobbler is a perfect sweet and tart dessert, with an easy self-made buttery crust over juicy blackberries. This is a classic, Southern favorite!

1 stick unsalted butter
5 cups fresh or frozen blackberries, (if using frozen, thaw first and drain extra juice)
3/4 cup water
1 cup granulated sugar, divided
1 sprig of fresh thyme
1/2 cup light brown sugar
1 cup self-rising flour (see notes for directions using all-purpose)
1/4 teaspoon baking soda
1 1/4 cup whole fat buttermilk
1 teaspoon vanilla extract
1 tablespoon turbinado sugar

Steps:

  • Preheat oven to 350°. Melt butter in a 13x9 inch baking dish.
  • Place blackberries in a saucepan and stir in 1/2 cup granulated sugar with water. Add thyme and bring to a boil then turn down to simmer. Cook for 5 minutes and remove from heat.
  • Whisk together flour and baking soda, then add remaining 1/2 cup of granulated sugar and 1/2 cup brown sugar and whisk until well blended. Stir in buttermilk and vanilla extract.
  • Once butter is melted, slowly pour in batter over the butter but do not stir. Remove thyme from blackberries and discard, then gently spoon the blackberries and any accumulated juices over the batter and do not stir.
  • Sprinkle the turbinado sugar over the top then bake for 40-45 minutes until golden brown. Serve hot or room temperature with vanilla ice cream or homemade whipped cream.

Blackberries are a popular choice for cobblers because they are a bit firmer than other berries and hold their shape when baked. They still give way to your spoon and release lots of juice that results in the signature pool of sweetness at the bottom of your bowl, though. Vanilla ice cream melts into the cobbler and combines with the fresh blackberry juices to create a winning dessert. This recipe is meant for hot days and summer potlucks. Follow up a main course of burgers and hot dogs with this impressive, yet simple fresh berry dessert. Cobbler is perfect for sharing- but be warned, it may get messy. Although the recipe calls for fresh blackberries, if they are not in season, you can substitute with frozen blackberries.

¼ cup shortening
½ cup whipping cream
½ cup buttermilk
2 tablespoons butter, melted
1 teaspoon sugar
Ice cream (optional)

Steps:

  • Preheat oven to 425°. Combine 1 cup sugar and 1⁄4 cup flour; add berries, and toss well. Sprinkle with lemon juice. Spoon into lightly greased 8- or 9-inch baking dish.
  • Prepare Crust: Combine first 4 ingredients of crust; cut in shortening with a pastry blender until mixture is crumbly. Stir in whipping cream and buttermilk just until blended. Makes enough for 1 cobbler.
  • Spoon 9 mounds of Crust over blackberries. Brush with butter, and sprinkle with 1 tsp. sugar.
  • Bake at 425° for 30 minutes or until browned and bubbly. Serve warm with ice cream, if desired.
