EASY BRUSCHETTA CHICKEN RECIPE
This easy bruschetta chicken recipe comes together quickly for a healthy low carb weeknight dinner. Chicken breast is cooked on the stovetop and topped with a fresh tomato topping and drizzles with balsamic.

Steps:
- Place the chicken breasts in a large bowl. Sprinkle the salt, pepper, onion powder, garlic powder, and Italian seasoning over the chicken and add in the olive oil. Toss the chicken in the seasonings and oil until evenly coated. Marinate for at least 15 minutes or up to 8 hours.
- Combine the bruschetta topping ingredients in a separate bowl.
- Heat the grill or bring a grill pan to medium-high heat. Then, grill the chicken until it's cooked through. (Approximately 5-7 minutes per side. The chicken is done when it reaches an internal temperature of 165F)
- Top each chicken breast with a few spoonfuls of the bruschetta topping.
- Drizzle the balsamic reduction over each chicken breast and garnish with chopped fresh basil and parmesan cheese.

This simple trick will ensure always seasoned "never-bland" chicken.Season bruschetta topping i.e. diced tomatoes, and basil with fresh chopped garlic, olive oil and balsamic. - Preheat oven at 375 degrees Fahrenheit. Spay a rimmed baking sheet or a rectangular casserole baking dish with cooking spray.
- Mix brushcetta ingredients in a bowl with 1/2 tbsp oil, 1/4 tsp salt and 1/4 tsp black pepper. Set aside.
- Slice chicken breast lengthwise to yield two pieces per slice. Pat dry. Place in rimmed baking dish or casserole in single layer. Drizzle with remaining olive oil (top only). Sprinkle generous pinch of seasoning (mix of Italian seasoning, 1/2 tsp salt, and 1/4 tsp black pepper).
- Spoon brushcetta on top of seasoned chicken breasts.
- Top with shredded mozzarella cheese.
- Bake in middle rack for 22-25 minutes or until chicken registers 175 in thickest part of thigh and cheese bubbling. Once done, transfer chicken to serving plate with wide spatula. (Don't discard the liquid of pan. It is very delicious and flavorful. Use it to season rice or refrigerate to use later as chicken stock.)
- Garnish with fresh chopped basil. Serve with pasta, drizzle of balsamic glaze (optional, recipes in notes). Enjoy!

- Place chicken breasts in a large resealable plastic freezer bag, one at a time. Lightly pound chicken breasts to an even thickness of about 3/4-inch. Combine oil, balsamic vinegar, garlic, Italian herb seasoning, salt and pepper in a small bowl and whisk until combined. Pour half of the marinade over the chicken, reseal bag, and set aside to marinate for at least 15 minutes. (Chicken and marinade can be prepared ahead; covered and refrigerated overnight.)
- Preheat grill to medium heat or about 350 degrees F. Combine remaining marinade with diced tomatoes and red onion; set aside. Transfer chicken from marinade onto grill surface and discard marinade. Grill chicken for 4 to 6 minutes per side or until cooked through. Transfer the chicken to a serving plate and sprinkle with shredded cheese. Spoon bruschetta mixture over chicken and top with basil; serve immediately.

Steps:
- Pour 4 tablespoons of the dressing over chicken in resealable plastic bag and seal. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes to marinate.
- While chicken is marinating, combine tomatoes, cheese, basil and remaining 2 tablespoons of dressing.
- Remove chicken from marinade bag and place in baking dish. Bake at 350 degrees for 10 minutes.
- Spoon tomato mixture over chicken breasts and bake an additional ten minutes.

EASY CHICKEN BRUSCHETTA SPAGHETTI RECIPE

- Place chicken breasts into a large ziplock bag and pound to even flatness with meat tenderizer (smooth side). Place chicken in Deep Dish Covered Baker and season with Italian seasoning. Microwave for 12 minutes. Remove chicken from baker and chop with Salad Chopper. Leave broth in baker and add pasta. Pour chicken broth over pasta until fully submerged. Microwave for 15 minutes. Remove and mix until chicken broth is mostly absorbed into pasta and tender. If broth is not fully absorbed, set aside and the baker will continue to cook while it is still hot. While pasta is cooking, make the sauce in the Manual Food Processor. Add olive oil, basil, tomatoes, garlic, salt and pepper. Chop thoroughly. Add chicken to pasta. Pour sauce over chicken and pasta and mix thoroughly. Serve with Parmesan cheese.

- Preheat oven to 400 degrees F (200 degrees C).
- Combine tomato, basil, and red onion in a small mixing bowl; stir well. Season with freshly ground black pepper. Set aside.
- Arrange bread on a baking sheet. Place in oven, and bake until well toasted, approximately 5 minutes.
- Remove bread from oven, and transfer to a large serving platter. Let bread cool 3 to 5 minutes. Rub garlic into the top of each slice of toast; the toast should glisten with the garlic. Spoon the tomato mixture generously onto each slice, and serve.
