Steps:
- Cook the beef in a large pot; drain well when done.
- *you can add the onions if you like, I don't always use them.
- stir in can of re-fried beans and approx 3/4 to half of the salsa (leave some for topping).
- add some cheddar cheese, I usually add approx 1 cup (leave some for topping).
- add salt and pepper to taste.
- let this mixture warm on the stove a few minutes just to melt the cheese.
- Turn off.
- Warm the shells a few at a time in the microwave on a plate with a slightly damp paper towel on top.
- Place 2 ice cream scoop sizes of meat mixture in the middle of the shell, roll up and place seam side down in a lightly buttered 9x13 pan (you will need more than one pan).
- Once you have rolled them all and placed in pans, brush lightly with butter or margarine.
- spread remaining salsa on top (I like to use lots and have some left over if anyone wants to add more).
- sprinkle with remaining cheese.
- Place in a warm oven 200-250F approx 10-15 minutes until heated through and cheese is melted.
- Serve with extra salsa and sour cream.
- This is a recipe that can be made for a small supper feeding 4-6 or can be made for 10 or more depending on how many shells you buy and the size of shells I buy large ones.
- This is very filling so I don't add anything to the meal.
- It is easy and inexpensive to make and not one person I have ever made it for did not LOVE it.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink, 5-7 minutes, crumbling meat; drain. Stir in salsa and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes. Transfer to a large bowl; set aside., In a food processor, combine pinto beans and water. Cover and process until almost smooth. Add to beef mixture. Stir in cheese. , Spoon 1/2 cup beef mixture down the center of each tortilla. Fold ends and sides over filling; roll up. Wrap each burrito in waxed paper and foil. Freeze for up to 1 month., To use frozen burritos: Remove foil and waxed paper. Place 1 burrito on a microwave-safe plate. Microwave on high for 2-1/2 to 2-3/4 minutes or until a thermometer reads 165°, turning burrito over once. Let stand for 20 seconds.

- Heat the oil in a large pan - a casserole is ideal. Fry the onions for 8 mins, then add the garlic, spices and oregano and cook for 1 min. Crumble over the mince and sizzle for 5 mins, stirring, until browned. Stir in the sugar and leave for a minute, then splash in the vinegar and pour in the tomatoes.
- Simmer for 5 mins then tip in the beans and the water from the can. Season, stir and simmer everything for 20 mins until the beef is in a thick gravy. The sauce can be prepared up to 2 days ahead, chilled and reheated with a splash of water or frozen for 6 months.
- To make the burritos, heat the tortillas following pack instructions. Pile some rice and beef sauce along each tortilla and scatter over your choice of topping. Fold over the ends and roll up to seal. Secure by wrapping with foil if you want. Eat immediately.

- Preheat oven to 350° F. Spray 9 x 13-inch baking dish with cooking spray and set aside.
- Cook beef with taco seasoning mix, according to seasoning package instructions.
- To prepare 1 burrito: spread ¼ cup beans down center of tortillas; top with ½ cup rice, beef, 2 tablespoons corn, and ¼ cup cheese.

- Preheat oven to 400F. Lay out each slice of bacon on a baking sheet, lined with parchment paper.
- Place the sheet covered with bacon into the oven, bake until golden and crispy. Lay out the cooked bacon on a paper towel to get rid of any extra grease.
- Whisk milk together with eggs and season with salt. Heat the pan up with oil, on a medium high heat, and pour in egg mixture.
- While the eggs are cooking, keep on stirring and breaking eggs into small pieces. Remove from heat once they're cooked.
- Slice mushrooms. In a hot skillet, fry them with a bit of oil until they turn golden brown. Season with a bit of salt.
- Build burritos by placing a little bit of each ingredient in the middle.
- Fold the sides of the tortilla inwards and roll the burrito tightly together.
- Fry the sides of each of the flour tortillas on a hot skillet, until the burrito becomes crispy and golden brown. Serve while the burritos are still warm.

- Cook your quinoa/brown rice according to package instructions either on the stove top or in the microwave. I like just using microwavable packages to save time but you can do either. While to rice is cooking slice onion, peppers (removing ribs and seeds) into strips or a large dice.
- Add sliced onion, peppers, olive oil and taco seasoning to a small skillet and saute on medium heat for 5 minutes or until veggies are soft. Add corn to skillet and cook another 1-2 minutes. Remove from heat and set aside.
- Wrap tortillas in several damp paper towels and microwave for 30 seconds until warm. While the tortillas are warming open and rinse canned black beans.
- Once all your fillings are prepped it is time to fill the burritos. In the upper-center of a warm tortilla add 1/4 cup each of rice/quinoa, black beans, veggies, and cheese. Then a tbsp of taco sauce. You can add more cheese if you wish, and if you are substituting meat you will not need as much of the other ingredients.
- Once filled, fold sides of tortilla over on top of filling and roll the the tortilla away from you folding over on itself. Use your fingers to keep the sides secure and the filling in. Repeat filling and rolling until all tortillas are filled.
- Warm a skillet or grill pan on the stove top on medium heat and spray with cooking spray. Add burritos seam side down and cook 5 minutes until warm through then flip and repeat. Enjoy warm with optional extras, enjoy! See Recipe Notes for freezer storage options, and alternate cooking methods.

- In a 12" skillet set over medium-high heat add ground beef and yellow onion.
- Cook the meat until it's no longer pink and the onions are translucent. Drain any fat.
- Add in the taco seasoning and prepare according to the packet directions.
- When the meat is fully cooked stir in the cilantro and remove from the heat.
- Lay out the flour tortillas and spread a layer of refried beans into the middle of each tortilla.
- Top each tortilla with an equal amount of the meat mixture and shredded cheese.
- Roll up each tortilla burrito-style and enjoy warm.
- Optional: Heat a non-stick skillet over medium heat. Add burrito seam side down and cook 2-3 minutes or until slightly browned. Flip over and repeat with the other side.
