EASY CHEESE BOUREKAS



Easy Cheese Bourekas image

These Cheese Bourekas are easy to make as they use pre-made puff-pastry dough.

20 oz puff pastry dough (box of (10) 5" x 5" squares)
3 oz feta cheese (cut into 2" x ½" x ½" logs or substitute w/1 Tbsp per boureka of your favorite shredded cheese)
1 egg (to baste tops)

Steps:

  • Preheat oven to 400° F. Remove frozen puff pastry sheets and thaw them at room temperature for about 15 minutes or until you each square is pliable.
  • Cut feta cheese into strips or logs that are 2"L x ½"H x ½W".
  • Place a 5" x 5" square of puff pastry dough diagonally. Place 1 log of Feta cheese (or 1 Tbsp of shredded cheese of choice) in the middle, then fold over the dough in half so all edges line up. Using a fork, press around the two edges to "pinch" the dough together. Repeat the process for the remaining 9 squares of dough.
  • Beat 1 egg and using a pastry brush, fully coat the tops of each boureka to help them turn a golden-brown. Arrange the bourekas on a cookie sheet lined with parchment paper and place in oven for 20 minutes or until golden brown. Some of the bourekas may ooze with cheese. Don't worry, those are usually the best tasting ones.
  • Remove from oven and serve immediately.

2 Cups Flour
1/2 Cup Water
1/4 Cup plus 2 Tablespoons of Vegetable Oil
1 Teaspoon Salt
1 Egg
1 Cup of Ricotta Cheese
1 Egg
Splash of Water
Sesame Seeds

Steps:

  • Preheat Oven to 400 Degrees F.
  • In a mixer, add the flour and salt. Combine them together
  • Add water and mix until a dough is formed
  • Pour in oil and mix until combined
  • Place the dough on a flat surface and roll until it's stretched a flat
  • Whisk egg and add the cheese. Mix until combined
  • For Egg Wash
  • Whisk egg with a splash of water
  • Cut out circles using the rim of a glass or round cookie cutter
  • Add a teaspoon of filling into each circle
  • Fold one end of the circle into the other creating an empanada shape
  • Seal the ends of the Bourekas using a fork. If filling seeps out, just clean it up with a napkin
  • Place Bourekas in a baking sheet lined with parchment paper or a silicone mat
  • Brush the tops with the egg wash and sprinkle in the sesame seeds
  • Bake for aproximately 15-17 minutes or until tops are browned and shiny

Middle-Eastern style puff pastry pockets filled with cheese. Great served as an appetizer or the traditional Israeli way for breakfast with salad, olives, cheese, and plain yogurt. Could also be filled with leftover mashed potatoes, or a spinach and feta mixture.

2 eggs
2 cups shredded mozzarella cheese
1 teaspoon dried parsley
1 pinch garlic powder
1 pinch onion powder
1 pinch salt
1 pinch black pepper
1 (17.5 ounce) package frozen puff pastry
2 teaspoons water
2 tablespoons sesame seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Beat 1 egg in a medium bowl, and mix in the cheese. Season with parsley, garlic powder, onion powder, salt, and pepper.
  • On a lightly floured surface, cut each sheet of puff pastry into 6 equal squares to give 12 squares in total. Beat the remaining egg with water in small bowl. Brush edges of each square lightly with egg wash. Place a heaping tablespoon of the cheese mixture in the center of each square. Fold pastry over the filling, and seal edges with a fork. Transfer to the prepared baking sheet, brush with remaining egg wash and sprinkle with sesame seeds.
  • Bake in the preheated oven 30 minutes, or until golden brown. Serve immediately.
