EASY CHEESY BRUNCH BAKE
Eggs, sausage, sour cream, cheese and tomatoes are part of this satisfying breakfast casserole that is great for breakfast, lunch or dinner.

Steps:
- Preheat oven to 400 degrees. Beat eggs with sour creamd until well blended.
- Pour into buttered 13 x 9 inch baking dish.
- Bake 10 minutes or until egg mixture is softly set.
- Meanwhile, cook sausage, mushrooms and onions in large skillet until sausage is cooked through, stirring occasionally to break sausage apart. Drain.
- Reduce oven temp to 325 degrees. Spoon tomatoes over egg mixture, add sausage mixture, and top with shredded cheeses.
- Bake an additional 30 minutes or until egg mixture is completely set in the middle.

EASY CHEESY BRUNCH CASSEROLE
I have dreams of someday opening a Bed and Breakfast. I have collected some great breakfast dishes preparing for that someday. Some I have eaten at B&B's around the country. This particular recipe came from a B&B in Northern Vermont that we visited in the fall of 2001 when the colors were in full bloom.

Steps:
- 1. Place bread slices in the bottom of a lightly greased 8 inch square baking dish; set aside.
- 2. Saute` onion and mushrooms in butter until tender; spoon evenly over bread. Top with ham.
- 3. Combine cheeses and flour; sprinkle over ham.
- 4. Combine milk, eggs, dry mustard and garlic powder; pour over cheese. Cover and chill 8 hours.
- 5. Remove from refrigerator and let stand for 30 minutes. Bake at 375-degrees for 35 minutes or until set.
- 6. Let stand for 10 minutes before serving. Garnish with parsley.

- Preheat the oven to 190C/gas 5/fan 170C and butter a shallow 2-litre dish. Tip the spinach into a colander in the sink and pour a kettleful of boiling water over it. Leave it to wilt while you make the cheesy base. (Or microwave the spinach according to the packet instructions.)
- Break the eggs into the bowl of a food processor, pour in the milk, add the mustard and 1 tsp salt. Tear in the bread, crusts and all, then whizz together until smooth. Tip the mixture into a large bowl and grate in three-quarters of the cheese.
- Squeeze the spinach, to get rid of all the water, then stir it into the cheese mixture and tip into the dish. Grate over the remaining cheese, top with the tomato clusters and bake for 30-35 minutes until risen and golden. Cool and allow to settle a little before serving.

- In a large bowl, mix together the potatoes with the melted butter. Add the ham, 1 1/2 cup Swiss cheese and 1/2 cup of the cheddar cheese. Then pour into the baking dish.
- In the same bowl, whisk together the eggs, milk, salt and pepper then pour over the potato mixture. Top with remaining cheese.
- Cover with foil and bake for 40 minutes. Remove foil and bake until eggs are cooked through about 10-15 minutes. Once ready, remove from oven and let cool for 10 minutes.
