- In a large saucepan, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in tomato paste, water, brown sugar, oregano, vinegar and garlic powder., In a greased 13x9-in. baking dish, spread 1 cup of meat sauce. Layer with three noodles, 1 cup meat sauce and mozzarella cheese; three noodles, 1 cup meat sauce and Monterey Jack cheese; three noodles, 1 cup meat sauce, provolone cheese and the Parmesan cheese., Bake, uncovered, at 350° for 40-45 minutes or until cheese is melted. Let stand for 10 minutes before cutting.

I love this easy cheesy kosher lasagna that satisfies all my Italian carby cravings. It looks impressive, but comes together easily.

- Preheat oven to 350°F. 1. Mix ricotta cheese, 1 ½ cups of mozzarella, eggs, garlic powder, Italian seasoning, parsley, salt, and pepper in a large bowl. Blend well. 2. Pour sauce into another bowl. Pour water into an empty jar, cover, and shake well, then add to sauce. Mix well. 3. Spread about a little more than a cup of sauce on the bottom of 9x13-inch baking dish. Top with 3 of the lasagna noodles. Spread ½ of the cheese mixture over noodles. Repeat sauce, noodles, and cheese layer once. Top with remaining noodles and sauce, make sure noodles are covered with sauce. 4. Sprinkle with remaining ½ cup of mozzarella and Parmesan. Cover with foil. 4. Bake 45 minutes. Remove foil. Bake 15 minutes longer. Let it cool for about 20 minutes before cutting.

EASY CHEESY LASAGNA
Steps:
- Preheat the oven to 375°F. Spray a 13 x 9 inch baking dish with cooking spray.
- To make the sauce: On the stove top in a deep pot over medium-high heat cook beef, sausage and onion in a couple of drizzles of olive oil until no pink remains Season with salt and 1 tsp black pepper.. Drain excess fat from pot.
- To the pot add garlic, 1 Tbsp Italian seasoning and bay leaf. Cook for 1 minute.
- Add pasta sauce, tomato sauce and basil. Simmer for 15 minutes then remove from the heat. Remove bay leaf from the sauce.
- Meanwhile, in a small mixing bowl mix together ricotta, eggs, 1/3 cup shredded Parmesan, and remaining 1 tsp dry Italian seasoning. Add 1/4 tsp freshly ground black pepper.
- To assemble: Ladle 1/2 cup sauce into the bottom of the prepared dish. Arrange one layer of lasagna noodles over sauce.
- Spread noodles with 1/3 of the ricotta. Cover with 1/3 meat sauce then sprinkle with 1 cup mozzarella cheese.
- Repeat layers, ending with noodles, meat sauce and 1 1/2 cups mozzarella cheese. Sprinkle the remaining Parmesan on top.
- Cover with aluminum foil spritzed with cooking spray. Bake covered for 1 hour.
- Uncover, and bake for an additional 15 minutes or until the noodles are fork tender.
- Let stand on counter for 10 minutes then cut and serving.

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and lay lasagna flat on foil to cool.
- In a medium bowl, combine ricotta, Parmesan, eggs, salt and pepper; mix well.
- In a medium saucepan, heat oil over medium heat and saute garlic for 2 minutes; stir in spaghetti sauce and Italian seasoning. Heat sauce until warmed through, stirring occasionally, 2 to 5 minutes.
- Spread 1/2 cup of sauce in the bottom of a 9x13 baking dish. Cover with a layer of noodles. Spread half the ricotta mixture over noodles; top with another noodle layer. Pour 1 1/2 cups of sauce over noodles, and spread the remaining ricotta over the sauce. Top with remaining noodles and sauce and sprinkle mozzarella over all. Cover with greased foil.
- Bake 45 minutes, or until cheese is bubbly and top is golden.

- Preheat oven to 375 degrees. Combine ricotta, egg, nutmeg, and salt in a medium bowl. Season with pepper. Coarsely grate 1/2 of the mozzarella, and stir into ricotta mixture. Using your fingers, shred remaining mozzarella into 2-inch strips, and reserve.
- Spread 1/2 cup marinara in a 9-by-13-inch baking dish. Place a layer of noodles over marinara. Spread 1/3 of the ricotta mixture over noodles, and sprinkle with 1/3 of the Parmesan. Place a layer of noodles over the cheese layer. Spread 1 cup marinara over noodles. Repeat layering (noodles, marinara, noodles, ricotta mixture, Parmesan) 2 more times. - Place baking dish on a rimmed baking sheet. Bake until cheese is golden brown and sauce is bubbling, 45 to 50 minutes. Let stand for 15 minutes before slicing and serving.
SUPER CHEESY HOMETOWN LASAGNA

- For the meat sauce: In a stockpot or Dutch oven, combine the beef (do not brown first), tomato sauce, tomato paste, chili powder, sugar, salt, pepper, garlic salt, bay leaves and onion. Add 2 cups water. Mix until combined. Cover and simmer over medium-low heat for 1 1/2 to 2 hours, stirring occasionally. Stir in the vinegar and simmer for another 30 minutes.
- For the lasagna: Preheat the oven to 375 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray and place the dish on a rimmed baking sheet.
- In a medium bowl combine the ricotta, basil, parsley, garlic salt, red pepper flakes, if using, and egg and stir until well blended.
- Spread 2 cups meat sauce across the bottom of the prepared baking dish. Place 4 noodles over the sauce-it is okay if they overlap slightly. Dollop 2/3 cup of the ricotta mixture on the noodles, then spread it in an even layer. Top the ricotta with 4 slices ham, then 4 slices provolone. Sprinkle 1 cup mozzarella over the provolone. Repeat the layering-sauce, noodles, ricotta, ham, provolone, mozzarella-twice more. Top with another layer of noodles, then the Parmesan and the remaining mozzarella.
- Cover the baking dish tightly with foil. Bake until the dish is bubbling and the noodles are cooked (you can test by poking with a sharp knife to make sure the noodles are soft), about 50 minutes. Remove the foil and return to the oven until the cheese is bubbling and golden brown, another 10 to 15 minutes. Let the lasagna rest for 10 minutes, then serve warm.
EASY CHEESY LASAGNA(NO BOIL)
A no boil lasagna that uses regular lasagna noodles. Easy to assemble, but allow enough time to cook. Family favorite for decades, especially the Florentine version. The Florentine version is vegetarian. To make this easier, I have bought already shredded cheese. The Italian mixed cheese is especially good. - Heat oven to 375°.
- Use a 9x13 GLASS pan.
- Brown ground beef or sausage with onion and garlic.
- Drain off fat.
- Return beef mixture to skillet.
- Stir in spaghetti sauce and water.
- In a small bowl, combine ricotta, Parmesan and parsley; set aside.
- In 13x9" glass pan, layer 1/3 of sauce.
- Layer half of uncooked lasagna noodles. (I often stagger the noodles from end to end as well as overlap them a bit. Centering the noodles in the middle instead of to one end.).
- Layer one half of ricotta mixture and half of mozzarella.
- Cover with 1/3 sauce.
- Repeat layers, ending with sauce mixture.
- Cover tightly with foil.
- Bake 1 hour,.
- Uncover, sprinkle with extra parmesan . Let stand 10 minutes before serving.
- For Florentine, omit meat and parsley. Stir onion, garlic and one 10 oz. package frozen chopped spinach that has been thawed and drained and 1/8 teaspoons nutmeg into cheese mixture. Layer as above. I often use steamed, chopped fresh spinach.
- Microwave directions: ( I have never used these) Prepare as above except use plastic wrap and vent corner. Microwave on high for 10 minute or until sauce boils. Microwave at 50% power for 30-35 minute or until pasta is tender, rotating dish after 15 minute Uncover: top with parmesan cheese. Let stand 10 minute before serving. These directions were for older microwaves, so be careful with the times.

- In a sauce pan, heat oil to medium high heat. Add garlic and onions, and reduce the heat to medium low to sweat until translucent.
- Return pan to medium high heat. Brown beef and sausage. Drain and return to skillet.

- In a small bowl, combine ricotta, parmesan and basil.
- In 9x13-inch baking dish, layer one-third of the meat mixture, half of the uncooked lasagna pieces, half the ricotta mixture, and half the mozzarella cheese. Repeat layers once, ending with meat mixture.
- Cover tightly with foil. Bake 1 hour and 30 minutes.
- Uncover. Sprinkle with additional parmesan cheese, if desired.
- Let stand 10+ minutes before serving.
