Easy Sausage Biscuit Bites image

This is an easy appetizer to serve at any gathering. I like to put a dot of sweet hot mustard on each bite after they are cooked, but it might be better to just offer the extra mustard for those who want it. Place a toothpick in each bite to serve.

1 (12 ounce) can refrigerated biscuit dough (such as Pillsbury Grands Jr.®)
2 tablespoons sweet hot mustard
9 ounces fully cooked sausage links
4 teaspoons finely grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread each biscuit into a 2x4-inch oval using your hands. Brush hot mustard onto each biscuit. Place a sausage link across the short edge of each biscuit oval and roll up lengthwise. Cut each rolled biscuit into 4 round slices. Lay 'bites' onto a baking sheet. Sprinkle each 'bite' with Parmesan cheese.
  • Bake in the preheated oven until biscuits are browned, 18 to 20 minutes.

2 pounds shredded extra-sharp Cheddar cheese
1 pound sage-flavored pork sausage (such as Neese's® Extra Sage Sausage), at room temperature
1 pound hot pork sausage (such as Neese's® Hot Sausage), at room temperature

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease a baking sheet.
  • Mix baking mix, Cheddar cheese, sage-flavored pork sausage, and hot pork sausage together in a bowl. Roll mixture into golf ball-sized balls; arrange balls on the prepared baking sheet.
  • Bake in the preheated oven until meatballs are no longer pink in the middle and browned on the outside, 25 to 30 minutes.

8 ounces fresh pork sausage with sage, casings removed
2 sticks (16 tablespoons) butter, softened
1 cup sour cream
2 cups self-rising flour
5 ounces shredded extra-sharp cheddar

Steps:

  • Preheat the oven to 400 degrees F. Line two baking sheets with parchment paper.
  • In a medium skillet over medium heat, cook the sausage until well-browned, breaking it up into small pieces. Let cool completely, either on the counter or in the freezer.
  • Mix together the butter and sour cream in a stand mixer. Mix in the flour, 1 cup at a time, mixing until fully combined. Add the sausage and cheddar, and mix until well incorporated.
  • Drop heaping spoonfuls of the dough onto the prepared baking sheets. Bake until lightly browned, 20 to 25 minutes.

  • Heat oven to 350°F. Generously spray 12 regular-size muffin cups with cooking spray.
  • In medium bowl, mix cheese and sausage. Separate dough into 8 biscuits; cut each into 6 pieces; add to bowl, and gently stir with cheese and sausage.
  • Divide mixture by placing 3 pieces of biscuit in each muffin cup. Divide any cheese and sausage mixture left in bowl among muffin cups; top with remaining pieces of biscuit.
  • Bake 22 to 24 minutes or until golden brown and biscuits are cooked through. Cool in pan 2 minutes. Run knife or metal spatula around edges of cups; remove.
