Ingredients

1/3 cup mayonnaise
1/4 teaspoon ground ginger
1/4 teaspoon ground mustard
Dash salt
1-1/2 cups diced cooked chicken
1/3 cup diced apple
1/3 cup sunflower kernels
2 green onions, finely chopped
1/3 cup mandarin oranges
4 croissants, split
Lettuce leaves, optional

Steps:

In a small bowl, mix mayonnaise, ginger, mustard and salt. Stir in chicken, apple, sunflower kernels and green onions. Gently fold in mandarin oranges. Serve on croissants with lettuce if desired.

This quick and easy Chicken Caesar Salad Sandwich recipe is a twist on the usual Caesar salad and chicken salad sandwiches. A great way to use leftover chicken. Serve on croissants or your favorite bread.

Ingredients

1 cup chicken (cooked and cubed)
1-2 green onions (thinly sliced)
1/4 cup cranberries (chopped)
3 tablespoons creamy Caesar dressing
1 tablespoon honey mustard
Spinach
6 in mini croissants (as shown the photo)
Sat and Pepper to taste

Steps:

Mix chicken, onions, cranberries, dressing and honey mustard in a bowl. Refrigerate overnight or assemble and serve sandwiches.
To assemble, place 1-2 small spinach leaves on croissant, top with chicken mixture and serve.

4 boneless skinless chicken breast halves (4 ounces each)
1/3 cup mayonnaise
1/2 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
2 teaspoons minced fresh parsley
1/4 cup creamy Caesar salad dressing
4 hard rolls, split
4 romaine leaves
1 medium tomato, sliced

Steps:

Flatten chicken to 1/4-in. thickness; spread mayonnaise over both sides. Combine the bread crumbs, cheese and parsley; sprinkle over chicken. , Place in a greased 11x7-in. baking dish. Bake, uncovered, at 375° for 25-30 minutes or until no longer pink. , Spread salad dressing over cut sides of rolls. Place romaine on roll bottoms; layer with chicken and tomato. Replace roll tops.

1 cup seedless red grapes, halved
1/2 cup chopped cashews
1 celery rib, chopped
1/3 cup grated Parmesan cheese

1/2 cup mayonnaise
1/3 cup buttermilk
2 teaspoons lemon juice
1 teaspoon dill weed
1 teaspoon dried parsley flakes
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
4 croissants, split

Steps:

In a small bowl, combine the first six ingredients. In another bowl, whisk mayonnaise, buttermilk, lemon juice and seasonings. Pour over chicken mixture; mix well. Spoon chicken salad onto croissant bottoms. Replace tops.
