EASY CHEESE BALL
My mom made this cheeseball every Christmas when I was growing up. It is still one of my favorites! I am not sure of the ranch dressing's envelope size. I don't think it comes in multiple sizes though.

- mix cheddar cheese, sour cream, cream cheese, and ranch dressing mix.
- chill for 1 hour or until set.
- roll in chopped pecans.

- Mix cream cheese, Cheddar cheese, onion, and Worcestershire sauce together in a bowl with an electric mixer until completely blended. Turn cheese mixture onto a sheet of waxed paper and form it into the shape of a Christmas tree. Refrigerate cheese 'tree' until firm, at least 1 hour.
- Cut bell pepper into thin strips and 1 star shape.
- Press parsley into cheese tree to cover. Press bell pepper strips in a row to form a 'garland'. Make another 'garland' using chopped pecans. Place bell pepper star at the top of the 'tree'. Carefully transfer 'tree' to a serving platter.

- Combine cream cheese, goat cheese, Parmesan, chives, thyme, and salt in the bowl of a stand mixer fitted with a paddle. Beat on medium-high until well combined and fluffy, 1 to 2 minutes. Scrape mixture to bottom of bowl; freeze for 30 minutes.
- Reserve about 2 tablespoons of the cheese mixture; chill in refrigerator to use later for decorating. Shape remaining cheese mixture into an 8-inch long oval, with the top half slightly narrower (similar to the shape of a butternut squash). Wrap with plastic wrap, and freeze until very firm, about 30 minutes.

- Let cream cheese and sharp cheddar come to room temperature. In the bowl of a stand mixer fitted with a paddle attachment, combine cream cheese, cheddar cheese and ranch dressing mix.
- Divide cheese mixture and form one smaller cheese ball for the head and one larger cheese ball for the body. Transfer cheese mixtures to two separate sheets of plastic wrap. Refrigerate for at least 4 hours, or overnight. Can be made several days ahead.
- Right before serving, press shredded cheese into cheese ball. Place on a serving plate and place smaller cheese ball onto larger cheese ball. Slice the tip off of a baby carrot and press into cheese ball to make a nose. Use whole peppercorns for mouth, eyes and buttons. Serve with crackers.
