Easy No-Bake Cranberry Cheesecake is delicious and loaded with fresh cranberries and luscious cream cheese. With its festive appearance, It's a perfect make-ahead holiday dessert!

2 cups fresh or frozen cranberries
⅓ cup granulated sugar
1 tablespoon cornstarch
1½ cups graham cracker crumbs
1 tablespoon granulated sugar
½ cup unsalted butter (melted)
¼ teaspoon kosher salt
16 ounces cream cheese (softened or at room temperature)
14 ounces sweetened condensed milk
1 tablespoon vanilla extract
¼ cup fresh lemon juice

Steps:

  • Combine the sugar and cornstarch in a small saucepan. Mix well. Add ½ cup plus two tablespoons of cold water and the cranberries and place the pan over medium heat. Stir to combine.
  • Bring the cranberry mixture to a boil and reduce the heat to low. Simmer for 10 minutes, remove the pan from the heat, and set aside to cool.
  • Combine the graham cracker crumbs, sugar, salt, and butter in a large bowl. Mix to combine.
  • Press the graham cracker mixture into the bottom and up the sides of a nine-inch springform pan. Place the pan in the refrigerator to chill while you make the cheesecake filling.
  • Add the cream cheese to a large bowl and beat with an electric mixer for a few minutes or until it is smooth, light, and fluffy. Add the sweetened condensed milk, vanilla extract, and lemon juice and beat until the mixture is smooth with no lumps.
  • To assemble, pour the cream cheese mixture into the pie crust. Smooth out with an offset spatula. Top with the cranberry mixture and spread the topping out evenly.
  • Cover and refrigerate the cheesecake for at least four hours to give the filling time to firm up. Before serving, unhinge the clasp on the springform pan and carefully lift off the sides.

2 cups graham cracker or shortbread cookie crumbs
1/3 cup butter, melted
TOPPING:
2 cups fresh or frozen cranberries
2/3 cup sugar
1/3 cup water
1 teaspoon lemon juice
FILLING:
4 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 tablespoon lemon juice
5 large eggs, lightly beaten

Steps:

  • Preheat oven to 325°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan. Place on a baking sheet. , In a small bowl, mix cracker crumbs and butter; press onto bottom of prepared pan. Bake 6 minutes. Cool on a wire rack. , Meanwhile, in a large saucepan, combine cranberries, sugar and water. Cook, uncovered, over medium heat until berries pop, about 12-15 minutes. Add lemon juice. Press cranberry mixture through a food mill into a small bowl; discard pulp and seeds. Set aside. , For filling, in a large bowl, beat cream cheese, sugar and lemon juice until smooth. Add eggs; beat on low speed just until blended. Pour into crust. Spoon 1/4 cup topping over filling; cut through filling with a knife to swirl. Place springform pan in a larger pan; add 1 in. of hot water to larger pan. , Bake 55-65 minutes or until center is just set and top appears dull. Remove springform pan from water bath; remove foil. Cool cheesecake on a wire rack 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Pour remaining topping over cheesecake. Refrigerate cheesecake overnight, covering when completely cooled. Remove rim from pan.

¾ cup graham cracker crumbs
½ cup chopped macadamia nuts
¼ cup melted margarine
2 tablespoons white sugar
¼ cup cold water
1 (.25 ounce) envelope unflavored gelatin
2 (8 ounce) packages cream cheese, softened
1 (7 ounce) jar marshmallow creme
1 (16 ounce) can whole berry cranberry sauce
1 cup frozen whipped topping (such as Cool Whip®), thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix graham cracker crumbs, macadamia nuts, margarine, and sugar together in a bowl; press into the bottom of a 9-inch springform pan.
  • Bake in the preheated oven until crust is lightly browned, about 10 minutes. Cool crust.
  • Mix water and gelatin together in a saucepan over low heat until dissolved, 3 to 4 minutes.
  • Beat cream cheese and marshmallow cream together in a bowl using an electric mixer on medium speed until well mixed. 9 whole cinnamon graham crackers, crushed
1 tablespoon plus 1 cup sugar, divided
1/4 cup butter, melted
2 packages (8 ounces each) reduced-fat cream cheese, cubed
1 package (8 ounces) fat-free cream cheese, cubed
3/4 cup fat-free sour cream
3 large egg whites, room temperature, lightly beaten
1 tablespoon lemon juice
2 teaspoons vanilla extract
1 teaspoon rum extract
TOPPING:
3/4 cup sugar
1/4 cup orange juice
2 tablespoons water
1-1/2 teaspoons grated orange zest
1/4 teaspoon minced fresh gingerroot
2 cups fresh or frozen cranberries
1/4 cup chopped pecans

Steps:

  • Combine the cracker crumbs, 1 tablespoon sugar and butter. Press onto the bottom and 1 in. up the sides of a 9-in. springform pan coated with cooking spray. Place on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack., In a large bowl, beat the cream cheese, sour cream and remaining sugar until smooth. Add egg whites; beat on low just until combined. I've been making these bars since I was a kid. I used to bake and sell cookies and cakes for Thanksgiving and Christmas every year from about 9 years old until I was well into my teens. Everyone loved these.

1 (18 1/4 ounce) box yellow cake mix
1/2 cup unsalted butter, softened
1 egg
1/2 cup pecans, chopped
8 ounces cream cheese
1/4 cup powdered sugar
1/2 teaspoon vanilla
1 egg
1 (10 ounce) can whole berry cranberry sauce
1/4 teaspoon nutmeg

Steps:

  • Heat oven to 350°F.
  • Combine cake mix, butter, 1 egg and pecans. Mix until smooth. It will look like cookie dough.
  • Line a 12x8 glass dish with dough.
  • Bake for 7 minutes or until crust is set, but not browned.
  • Cream the cream cheese with the powdered sugar, vanilla and 1 egg.
  • In separate mixing bowl combine cranberry sauce with nutmeg.
  • Pour cream cheese mixture over top of crust, making sure to spread evenly.
  • Spoon cranberry sauce into three horizontal lines. Run a butter knife through cranberry sauce into cream cheese mixture to create swirls.
  • Bake for 35 minutes or until cream cheese mixture is set.
  • Cool completely and cut into bars.

5 ounces graham crackers (about 8), broken into pieces
2 tablespoons unsalted butter, melted
1 1/4 cups plus 2 tablespoons sugar
2 pounds cream cheese (four 8-ounce bars), room temperature
1/4 teaspoon kosher salt
1 teaspoon pure vanilla extract or paste
4 large eggs, room temperature
1 cup Classic Cranberry Sauce or store-bought cranberry sauce

Steps:

  • Preheat oven to 350 degrees. Wrap exterior of a 9-inch springform pan (including bottom) in a double layer of foil.
  • Pulse graham crackers in a food processor until finely ground. Add butter and 2 tablespoons sugar; pulse until mixture has the texture of wet sand. Press firmly into bottom of prepared pan. Bake until set and darkened slightly, 10 to 12 minutes. Transfer pan to a wire rack; let cool completely.
  • Reduce oven temperature to 325 degrees. In the bowl of a mixer fitted with the paddle attachment, beat cream cheese on medium speed until light and fluffy, 2 to 3 minutes. Add remaining 1 1/4 cups sugar in a slow, steady stream. Beat in salt and vanilla. Add eggs, one at a time, beating until just combined after each addition and scraping down sides of bowl as needed (do not overmix). Place springform pan in a large, shallow roasting pan. Pour filling into crust.
  • Dollop cranberry sauce, 1 teaspoon at a time, over filling; swirl sauce into filling with a skewer or toothpick.
  • Transfer roasting pan to oven. Carefully pour enough boiling water into roasting pan to come halfway up sides of springform pan. Bake until cake is set but still slightly wobbly in center, about 1 hour, 15 minutes.
  • Carefully transfer springform pan to a wire rack; let cool completely. Refrigerate, uncovered, 6 hours, or loosely covered, up to 1 day. Before unmolding and slicing, run a knife around edge of cake.
