2-1/2 cups chopped fresh mushrooms
2 medium green peppers, chopped
1 large tomato, seeded and chopped
1 medium red onion, chopped
1-1/2 teaspoons salt
1 teaspoon pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
2 packages (8 ounces each) cream cheese, cubed
1 cup sour cream
Tortilla chips

Steps:

  • In a large skillet over medium heat, cook the sausage until no longer pink; drain. Add the next 8 ingredients; cook until the vegetables are tender. Reduce heat to low; add cream cheese and sour cream. Cook and stir until cheese is melted and well blended (do not boil). Serve warm with tortilla chips.

  • Then on low heat, mix in the diced cream cheese and the can of diced tomatoes with green chiles (do not drain).
  • Stir constantly until the cheese is melted and all ingredients are combined thoroughly.
  • Serve warm with your favorite chips or veggies.

  • 1. In a saucepan, brown sausage. Cook thoroughly. 2. Cut up cream cheese and add to sausage. 3. Once the cheese is melted, add the can of Rotel (don't drain). 4. Mix together and serve immediately. 5. Serve with tortilla chips. Suggestion: Serve in crockpot so it stays warm and creamy.

  • In a large skillet, brown the sausage and Onions. Drain.
  • Add Cream cheese and stir until melted and combined.
  • Drain most liquid from the Rotel tomatoes and add with seasonings (to taste).
  • Bake in serving dish at 350 F, approx 30 minutes.
