Simple and totally easy to prepare. Works well as a quick side for meatloaf, hamburgers, or Salisbury Steak, or just plain steak!

4 medium baking potatoes, pared (left whole)
2 tablespoons butter, melted (use vegetable margarine if vegan)
1/2 cup corn flake crumbs
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon sour cream (or vegan sour cream)
1 pinch chives, chopped

Steps:

  • Heat oven to 375 degrees.
  • Mix together cornflake crumbs and seasonings in a medium bowl/ or medium Ziploc bag.
  • Brush whole potatoes with butter.
  • Coat potatoes with cornflake crumb mixture.
  • Arrange in an un-greased baking pan, 9X9X2 inches.
  • Bake uncovered for 1 to 1 1/4 hours or until potatoes are tender.
  • Serve with a dollop of sour cream and chives, if desired.

1 cup crushed corn flakes or 1 cup Rice Krispies

Steps:

  • Pre heat oven to 400°F.
  • Cut potatoes into 4 wedges.
  • Dip them in the melted butter and sprinkle with salt.
  • Roll in crumbs and place on greased baking sheet.
  • Bake for 40 minutes.
  • Serve hot.

3 tablespoons all-purpose flour
¼ teaspoon salt
3 tablespoons butter, cut into small pieces
½ cup onion, chopped
1 ½ cups milk
1 pinch paprika, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 1-quart casserole dish.
  • Spread about 1/3 of the potatoes into the bottom of the prepared dish. Mix flour and salt together in a bowl; sprinkle about 1/3 of the mixture over the potatoes. Dot potato layer with about 1/3 of the butter. Sprinkle about 1/3 of the onion over the potatoes. Repeat layering twice more.
  • Stream milk over the potato mixture in the casserole. Sprinkle paprika over everything.
  • Bake in preheated oven until the top is nicely browned, about 1 hour.

4 pounds cubed peeled potatoes (about 11 cups)
1/2 cup 2% milk
1/4 cup butter, cubed
1-1/2 teaspoons salt
1/2 cup shredded cheddar cheese
1-1/2 cups crushed cornflakes
6 tablespoons sesame seeds, toasted

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 10-15 minutes or until tender. Drain; return to pan., Mash potatoes, gradually adding milk, butter and salt; stir in cheese. Transfer to a large bowl; refrigerate, covered, 2 hours or until firm enough to shape., In a shallow dish, combine cornflakes and sesame seeds. Shape potato mixture into 1-1/2-in. balls; roll in cornflake mixture. Place on greased baking sheets. The first time we made a potato gratin in culinary school I thought it sounded so fancy, but it was a cinch to make. The only thing that was missing for me was a super crunchy topping. My family in the Midwest uses cornflakes on top of potato casseroles, so the crispy cereal seemed like a fun, nostalgic topping for this elegant creamy potato dish.

1 tablespoon unsalted butter, at room temperature
1 cup heavy cream
1/2 cup grated Parmesan
4 sprigs thyme, plus more for serving (optional)
2 bay leaves
2 small cloves garlic, chopped
Pinch freshly grated nutmeg
Kosher salt and freshly ground black pepper
1 pound russet potatoes, peeled and thinly sliced 1/8-inch thick
1 cup cornflakes

Steps:

  • Preheat the oven to 400 degrees F and coat the inside of a 9-inch cast-iron skillet with the butter.
  • Combine the cream, 1/4 cup Parmesan, thyme, bay leaves, garlic, nutmeg, 1 teaspoon salt and a few good grinds of pepper in a small saucepan over medium heat. Bring the mixture to a gentle simmer and cook, stirring occasionally, until the garlic and thyme are fragrant, about 2 minutes.
  • Discard the thyme and bay leaves with tongs. Spoon about 1/4 cup of the cream mixture into the bottom of the prepared skillet. Arrange about one quarter of the sliced potatoes on top of the cream in an even layer, then spoon another 1/4 cup of cream mixture over the top. Repeat until all of the potatoes and sauce are used. Sprinkle the remaining 1/4 cup Parmesan evenly over the top, then finish with an even layer of cornflakes.
  • Bake until the sauce is bubbling, the potatoes are tender when pierced with a knife and the cornflakes are golden brown, about 40 minutes. Sprinkle with more thyme for serving if desired.
