FISH IN FOIL

Fish in Foil image

The 'no smell' fish recipe that is the ONLY one I make for my family (I hate fish, they LOVE it!). Take foil packets to table for service, and keep them around for the discarding of bones and skin. Then when dinner's done, haul those babies to the outside trash.

Categories     Seafood     Fish

Time 30m

Yield 2

Number Of Ingredients 6

2 rainbow trout fillets
1 tablespoon olive oil
2 teaspoons garlic salt
1 teaspoon ground black pepper
1 fresh jalapeno pepper, sliced
1 lemon, sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Rinse fish, and pat dry.
  • Rub fillets with olive oil, and season with garlic salt and black pepper. Place each fillet on a large sheet of aluminum foil. Top with jalapeno slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets. Carefully seal all edges of the foil to form enclosed packets. Place packets on baking sheet.
  • Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork.

SIMPLE BAKED FISH IN FOIL WW

Simple Baked Fish in Foil Ww image

This is so simple, I can't believe I couldn't find it anywhere on zaar. The onion keeps the fish from drying out and gives a lovely mild flavor. We especially like Telipia, but any white fish can be used, as well as any of your favorite fish seasonings. We like lemon pepper or Dominant One (an all seasoning mix from hubby's Indiana hometown spice factory www.marionkay.com). Fresh fish from a camping trip is good also, in fact this method is great for outdoors, as it can be cooked on the grill for 20 min, clean up is a snap, just toss the foil.

GRILLED HALIBUT IN FOIL PACKETS

Grilled Halibut in Foil Packets image

My grilled halibut in foil packets delivers moist, flavorful fish that is not only delicious but also a pretty presentation. Note: You can also prepare these foil packets in the oven.

Provided by OMG Lifestyle Blog

Categories     Seafood

Time 25m

Number Of Ingredients 8

halibut fillets, ½ to ¾ inch thick
onion, sliced thin and separated into individual rings
mini colored peppers, sliced into rings
olive oil
butter
salt and pepper
lemon, sliced thin
fresh thyme

Steps:

  • Preheat your grill. If cooking in the oven, preheat oven to 400 degrees.
  • Cut one 12x18 piece of heavy duty foil for each fish packet. Spray with cooking spray.
  • Place one filet on each piece of foil. Season with salt and pepper.
  • Layer with onion rings and pepper rings. Drizzle with olive oil and place a small pat of butter on top.
  • Add three lemon slices on top of each filet and top with fresh sprigs of thyme.
  • Fold foil over fish until edges meet. Seal by folding foil to create packet (see photo in post). Repeat for the end of the packet. Be sure to leave space for steam to circulate.
  • Place on hot grill and cover, grilling for 7 minutes. Flip packets and continue to cook for 8 minutes or until you can flake fish with a fork and vegetables are tender. If baking, place on cookie sheet and bake for 20 minutes.
  • Be careful opening foil packets as the steam will be hot. You can serve the foil packet on a plate, cut an X on the top of each packet and fold back the foil. If you prefer not to serve the fish in the foil, you can also use a slotted spatula to remove the fish and place on a plate. Serve with vegetables and lemon slices on top and drizzle juices from foil pack before serving.

FISH FOIL PACKETS WITH VEGETABLES

Fish Foil Packets with Vegetables image

Provided by Deanna Dorman

Time 20m

Number Of Ingredients 10

1 tablespoon olive oil
1/2 bunch of asparagus, trimmed
2 - 6 ounce fish fillets (anything will work - I used salmon)
6-8 cherry tomatoes, halved
2 tablespoons dry white wine
2 tablespoons capers
4 slices of lemon
4 sprigs fresh thyme or 1/2 teaspoon dried thyme
pepper + salt to taste
aluminum foil

Steps:

  • Tear two aluminum foil pieces about 16 inches long. Lay foil flat on a counter or baking sheet and lightly brush or spray with olive oil.
  • Place half of the asparagus in the center of each piece of foil and season with salt & pepper to taste.
  • Place the fish fillets on top of the asparagus and season with salt & pepper to taste.
  • Top each fillet with 2 slices of lemon and arrange tomatoes on top.
  • Sprinkle capers over the fillets, drizzle with white wine, and top everything with the thyme.
  • Fold the long ends of the foil up to meet over the fillet. Fold the ends down to one side, folding 3 times to fully secure. Pinch the open ends of the foil closed and fold up and over 2 times. Make sure there are no holes in the foil because you want to steam everything inside.
  • Preheat grill to medium-high heat.
  • Place on the grill for 12-15 minutes (a little longer for thicker fish, like halibut).
  • Remove foil packet from grill and carefully open each side of the packet, allowing steam to escape. Open packet completely and transfer everything to a plate and serve.
  • Preheat oven to 400 degrees.
  • Place foil packets on a baking sheet and bake for 15-20 minutes.
  • Remove foil packet from oven and carefully open each side of the packet, allowing steam to escape. Open packet completely and transfer everything to a plate and serve.
