CHICKEN POTATO NOODLE SOUP RECIPE

This chicken potato noodle soup is a lighter version of the classic chicken noodle soup we all love. In my version, I used spiralized potato noodles instead of the usual pasta noodles. It is easy-to-make and perfect for those, who are calorie conscious.

2 tablespoons of vegetable oil (such as grapeseed)
2 small onions (chopped)
3 medium-size carrots (peeled and sliced into 1/2 inch thick slices)
3 stalks of celery (sliced into 1/2 inch thick slices)
3 cloves of garlic (peeled and minced)
1 ½ cups cooked and shredded chicken
6 cups low-sodium (or homemade chicken stock)
2 cups water
1 ½ teaspoon kosher salt
½ teaspoon black pepper (freshly ground)
1 large russet potato (spiralized)
2 tablespoons of lemon juice (freshly squeezed - plus lemon wedges to serve with)
¼ cup fresh Italian parsley leaves (rinsed, more as garnish)

Steps:

  • Heat olive oil in a large heavy bottom pot in medium heat. Add onion, carrots, and celery and cook over medium until they are softened, 8-10 minutes.
  • Stir in the garlic and cook stirring constantly until fragrant, 30 seconds or so.
  • Add in the shredded chicken, chicken stock, water, and salt and pepper. Bring it a boil, turn the heat down to medium-low, and let it simmer for 10-15 minutes.
  • Stir in the spiralized potato "noodles". Cook for 7-8 minutes.
  • Finish it off with freshly squeezed lemon juice and fresh parsley.
  • Ladle the soup into large bowls and serve with lemon wedges and crusty bread.

1 tablespoon butter
½ cup chopped onion
½ cup chopped celery
4 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can vegetable broth
½ pound chopped cooked chicken breast
1 ½ cups egg noodles
1 cup sliced carrots
½ teaspoon dried basil
½ teaspoon dried oregano
salt and pepper to taste

Steps:

  • In a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender, 5 minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving.

Chicken noodle soup might be one of the simplest meals to make, but the satisfaction it brings can hardly be matched. This simplified scratch version creates depth of flavor by browning the chicken first, then softening the aromatic vegetables, and adding the broth and egg noodles. It's a chicken soup that's everything you want it to be: easy, comforting and completely classic.

2 tablespoons vegetable oil
1 package (20 oz) boneless skinless chicken breasts, cut in 3/4-inch pieces
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup chopped onion
1/2 cup chopped carrot
1/2 cup chopped celery
1 carton (32 oz) Progresso™ chicken broth
1 1/2 cups uncooked medium egg noodles (3 oz)
Chopped fresh parsley, if desired
Garlic-flavored croutons, if desired

Steps:

  • In 5-quart Dutch oven, heat oil over medium-high heat; season chicken with salt and pepper. Cook chicken in oil 6 to 8 minutes, stirring once, until chicken is browned on outside. Using slotted spoon, transfer to bowl; cover and keep warm.
  • Add onion, carrot and celery to oil and drippings in Dutch oven; cook over medium-high heat 2 to 3 minutes, stirring frequently, until softened.
  • Stir in chicken broth; heat to boiling. Stir in egg noodles and the browned chicken; return to boiling. Reduce heat; simmer uncovered 8 to 10 minutes, stirring occasionally, until noodles are tender.
  • Serve soup topped with parsley and croutons.

2 skinless, boneless chicken breasts, diced
1 pinch seasoned salt, or to taste
ground black pepper to taste
2 tablespoons vegetable oil
½ onion, chopped
½ teaspoon minced garlic
4 cups chicken broth
2 cups water
2 stalks celery, chopped
2 carrots, chopped
2 large russet potatoes, quartered and thinly sliced
1 pinch cayenne pepper, or to taste

Steps:

  • Season chicken with seasoned salt and pepper.
  • Heat vegetable oil in a large soup pot over medium-high heat. Cook chicken until no longer pink in the center, about 5 minutes.
  • Add onion to pot and cook until almost translucent, about 5 minutes. Add garlic and cook until slightly browned, about 2 minutes more.
  • Stir broth, water, celery, carrots, and potatoes into the pot. Cook until carrots and potatoes are tender, 15 to 20 minutes.
  • Taste and adjust seasoning with salt, pepper, and cayenne.
