This Keto Ham & Cheese Breakfast Casserole is not only low in carbs, but out of this world in flavor! The salty ham perfectly compliments the tender eggs, and the addition of cream cheese gives the casserole a rich and velvety burst of flavor in each bite.

12 extra large eggs
1 cup heavy cream
2 cups ham (diced)
4 oz cream cheese (cubed)
1/2 cup sharp cheddar cheese (shredded)
1/4 tsp salt
1/4 tsp ground black pepper

Steps:

  • Preheat the oven to 350˚F.
  • In a large bowl, whisk the eggs, heavy cream, salt and pepper together. Then pour the mixture in a greased 9x13" casserole dish.
  • Drop the cubes of cream cheese evenly throughout the egg mixture.. Sprinkle the ham and cheddar cheese over the top.
  • Bake for 30-40 minutes, or until the center is set and springs back when touched. Enjoy!

I love making casseroles like this one for breakfast! You can pretty much use any kind of bread - I like to use odds and ends like leftover buns or rolls, etc. You can mix and match the meat and cheese too, but this is a great basic country ham and Cheddar cheese version. I used leftover brioche buns for the bread.

Number Of Ingredients 8

nonstick cooking spray
2 cups milk
8 large eggs
½ teaspoon salt
8 cups cubed bread
4 ounces diced country ham
1 ½ cups shredded Cheddar cheese, divided
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 2-quart baking dish with nonstick spray.
  • Whisk milk, eggs, milk, and salt together in a bowl.
  • Place about 3/4 of the bread cubes into the prepared baking dish and sprinkle with ham and 1 cup Cheddar cheese. Carefully pour egg mixture over top. Add remaining bread cubes and gently press all over to submerge into the liquid. Once all of the bread is coated by the egg mixture, sprinkle remaining Cheddar cheese over the top.
  • Bake in the preheated oven until light golden brown and set in the middle, about 40 minutes. Allow to cool for 10 minutes before slicing and serving.

Avocado oil spray
1 tablespoon butter
2 tablespoons diced green peppers
2 tablespoons diced onion
2 tablespoons diced red peppers
14 eggs
½ cup heavy whipping cream
¼ cup sour cream
1 teaspoon dry mustard
½ teaspoon salt
½ teaspoon smoked paprika
½ teaspoon pepper
2 cups diced cooked ham
2½ cups shredded cheddar cheese, divided
Additional sour cream for serving, optional

Steps:

  • 1. Pre-heat oven to 350 degrees. 2. Spray a 13x9 inch baking dish with avocado oil spray. Set aside. 3. In a small skillet, over medium heat, saute peppers and onion in butter for 4-5 minutes, or until vegetables start to soften. Set aside. 4. In a large mixing bowl, add eggs. Whisk until smooth. Add heavy cream, sour cream, dry mustard, salt, smoked paprika, and pepper. Whisk until smooth and combined. 5. Add peppers and onions to egg mixture. Then add ham and 2 cups of shredded cheddar cheese to egg mixture. Whisk to combine, 6. Pour egg mixture into prepared baking dish. Top with remaining ½ cup of shredded cheddar cheese. 7. Bake, uncovered, for 50-60 minutes, or until knife inserted comes out clean. 8. Serve with additional sour cream if desired.
