MINI MEATLOAF RECIPE, BBQ-STYLE



Mini Meatloaf Recipe, BBQ-Style image

This mini meatloaf recipe is a perfect weeknight dinner with a cook time of only 30 minutes. The keto secret is replacing ketchup with sugar-free barbecue sauce.

Number Of Ingredients 11

1 pound ground beef or ground turkey
1 large egg
⅓ cup no sugar added BBQ sauce
¾ teaspoon salt
½ teaspoon pepper
1 teaspoon liquid smoke
1 teaspoons smoked paprika
½ teaspoon dry mustard
½ teaspoon celery salt
1 teaspoon garlic powder
¼ cup chopped parsley

Steps:

  • Preheat oven to 375F and coat four mini loaf pans or a muffin tin with non stick spray. Set aside.
  • Add egg and all seasonings to a large bowl. Whisk well to combine.
  • Add ground meat. Using your hands, massage egg mixture into meat. Mix until evenly distributed.
  • Divide meat mixture into loaf pans or muffin pan. Brush the tops of each with BBQ sauce, place on a baking sheet, and bake for 25-30 minutes until firm and cooked through. Remove from oven and garnish with fresh parsley if desired.

  • Preheat oven to 350. Combine all the meatloaf ingredients and mix well. Divide into 12 parts and put in the holes of a regular sized muffin tin. Bake at 350 for 30 min.
  • Remove the muffin tin from the oven and drizzle on the remaining bbq sauce. Divide the 2 oz shredded cheddar between the meatloaves. Sprinkle on remaining bacon.
  • Bake for an additional 10 min or until the meatloaves are 160 degrees when checked with a meat thermometer. Serve with extra bbq sauce for dipping.
