LOW CARB CINNAMON PECAN COOKIES
Delicious gluten-free cinnamon pecan cookies, perfect for a low carb, keto tea!

Steps:
- First, place the melted butter in a large mixing bowl.
- Add all the other ingredients except for the pecans, stirring the almond flour in last.
- Next, form one tablespoon-sized balls out of the dough and place them on a baking pan covered with a baking sheet (or ungreased pan).
- Flatten them by placing a pecan half on each or kris-crossing with a fork if not using pecans.
- Bake at 275 degrees Fahrenheit for 15-20 minutes or until done.
- Let cool completely before removing from pan.

- For the crust, mix together the ingredients, press into an 8" or 9" pie plate and refrigerate.
- Beat the eggs with the Splenda.

- Combine the butter, almond flour, coconut flour, 1/3 cup of the sweetener, gelatin, and vanilla in a food processor. Pulse until wet crumbs form. Add the pecans. Pulse until they are chopped. The dough will come together into a ball as the pecans are chopped.
- Divide the dough into 16 pieces. Put the remaining 1/3 cup sweetener in a shallow bowl. Roll each piece of dough into a ball. Put in the sweetener and press it into a disc. Flip it over and press again so both sides are dusted with sweetener. Put on the prepared baking sheet. Repeat.
- Bake for 15-17 minutes or until the edges are golden. (Begin checking these around the 8-10 minute mark, they seem to bake fast in some ovens).

- Bake for 5 minutes, then remove from the oven and use a flat bottomed glass to flatten the cookies again to about 1/4-inch thick. Return to the oven and bake for another 10 to 12 minutes until the edges are golden brown.
