NO CRUST STRAWBERRY PIE
This is a low calorie, no crust strawberry pie. It is made with sugar-free strawberry flavored gelatin and sugar-free vanilla pudding. It is very good! I've had the recipe for years, and to be honest, I don't remember where I got it. Garnish with light whipped topping if you like.

- Rinse and hull strawberries. Distribute evenly in a 10 inch pie pan.
- In a medium saucepan combine pudding mix, gelatin mix, and water. Stir well and bring to a full boil. Pour mixture over strawberries and refrigerate for 4 to 6 hours. Top with light frozen whipped topping prior to serving, if desired.

- Heat oven to 425°F. In medium bowl, mix flour, salt and 1/4 cup oil with fork until mixture is consistency of coarse crumbs. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all water is absorbed and dough sticks together.
- Gather dough into a ball; flatten to 4-inch round. Place between sheets of waxed paper. With rolling pin, roll dough into 12-inch round. Remove top sheet of waxed paper. Carefully transfer dough round to 9-inch glass pie plate; remove waxed paper. Gently press in bottom and up side of plate, being careful not to stretch dough.
- Fold and roll edge under, even with plate; flute edge. Prick bottom and side of dough thoroughly with fork. Bake 15 to 18 minutes or until light golden brown. Cool completely, about 30 minutes.
- In large bowl, beat cream cheese with electric mixer on high speed 30 to 60 seconds or until fluffy. Beat in sugar until blended. Add yogurt, vanilla and almond extract; beat on low speed 30 to 60 seconds until well blended and smooth. Fold in whipped topping just until blended. Spoon into cooled crust; spread gently to edge. Refrigerate at least 4 hours or until chilled.
- Cut pie into 8 servings. Top each serving with strawberries, pointed ends up. In small microwavable bowl, microwave chocolate chips and 1/2 teaspoon oil on High 30 to 45 seconds or until chips can be stirred smooth. Drizzle chocolate over strawberries. Store pie in refrigerator.

- Drain pineapple, reserving juice in a 2-cup measuring cup. Set pineapple aside. Add enough water to juice to measure 1-1/2 cups; transfer to a saucepan. Whisk in the pudding mix and gelatin until combined. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in pineapple. - Slice 1 cup strawberries; refrigerate for later use. Chop remaining strawberries; set aside.
- Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
- Whisk in COOL WHIP. Stir in chopped strawberries. Refrigerate 20 to 30 min. or until mixture is very thick and will mound. Spoon into crust.
- Refrigerate 6 hours or until firm. Top with sliced berries just before serving.

Adaptation from a weight watchers recipe I found on the internet. Without the crust I think it is 4-5 points for the entire pie. For that, just make the mixture and pour it into an empty pie pan and chill until set.

- Arrange strawberries in crust pan in single layer (if you are not mixing in with pudding/jello mixture).
- Cook and stir over medium heat until mixture comes to a full boil.

FLUFFY STRAWBERRY PIE
My grandmother made this pie every year for Thanksgiving. She would make it with a homemade pie crust, but I love it with a graham cracker crust. Either way is great! It's good with any type of pie crust. It's perfect for a very sweet and light dessert. It just melts in your mouth! Enjoy! It does not freeze well.

- Mix strawberry-flavored gelatin mix, sugar, and boiling water together in a large bowl, stirring until gelatin and sugar have dissolved.
- Refrigerate gelatin mixture until it begins to turn thick and syrupy, about 10 minutes.
- Gently fold frozen whipped topping into the gelatin mixture until thoroughly combined.
- Fold the 2 1/2 cups of sliced strawberries into the whipped topping mixture.
- Spoon filling into the graham cracker crust and decorate edge of filling with 8 strawberry halves.
- Refrigerate at least 2 hours before serving.
