MINI BBQ MEATLOAF
Mini BBQ Meatloaf is an easy meal with big bbq flavor without having to fire up the grill. These meatloaves are filled with bbq sauce, pepper jack cheese and caramelized shallots for a flavorful dinner.

Steps:
- Heat a skillet over medium heat and add the butter. When the butter is melted, add the shallots and season with a pinch of salt. Reduce the heat to medium-low and stir to coat the shallots with butter and continue to cook over medium low heat (stirring occasionally) for about 10-15 minutes or until the shallots are golden brown.
- Heat oven to 425 degrees and line a baking sheet with aluminum foil and spray with non-stick spray.
- In a large bowl, add the ground beef and bread crumbs and mix them together a bit. In a small bowl, whisk together 1/4 C bbq sauce, the egg, Worcestershire sauce and season with salt and pepper. Pour the mixture over the beef and mix well to incorporate then mix in the shredded cheese.
- Divide the meat into 6 portions and shape into mini loaves. Top each meatloaf with 1 tablespoon bbq sauce and bake at 425 degrees for 20 minutes or until the meatloaves are cooked through.

MINI MEATLOAF MUFFINS

- Preheat oven to 350 degrees F.
- In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
- Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
- In the meantime, in a small bowl mix together all of the ingredients for the sauce.
- Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
- Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
- Serve with mashed potatoes and any extra sauce.

- Preheat oven to 400 degrees F.
- Add onion, beef, egg, bbq sauce, and shredded cheese to bread crumb bowl and mix together with hands until combined. You don't want to overwork the meat, but do want all of the bread crumbs incorporated. Roll meat mixture into tennis ball size balls and place into cupcake tins. Lightly flatten meat with fingers, and spread about 1 tsp. of remaining bbq sauce and 1 Tbsp. shredded cheese.
- Spread potatoes and green beans on two sheet pans. Drizzle with olive oil and season potatoes with seasoning salt and pepper and green beans with salt and pepper.
- Bake everything for about 25 minutes, or until potatoes are soft.

- Preheat oven to 400°. In a large bowl, mix barbecue sauce, salsa and Worcestershire sauce; reserve 1/2 cup mixture for topping. - Preheat oven to 375°. In a large bowl, combine stuffing mix, water and 2 tablespoons barbecue sauce. Add beef; mix lightly but thoroughly.
