POINSETTIA COOKIES
These pretty cookies are fairly labor intensive, but boy, are they worth it. A few of these festive blossoms on top of my Christmas cookie trays really make a festive presentation.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with aluminum foil or parchment paper.
- In a large bowl, cream together the butter, sugar and cream cheese until light and fluffy using an electric mixer. Add egg and vanilla; mix until well blended. Stir in flour by hand using a sturdy spoon while adding enough red food coloring to make the dough turn a pretty red color.
- Roll the balls in the red decorator sugar and place them on the prepared cookie sheets, spacing 1 inch apart. Refrigerate the cookies on their cookie sheets until firm, about 10 minutes.
- When the cookies are firm, make three slices across each cookie to make 6 slices like a pie, cutting only about 2/3 of the way through the cookie balls.
- Bake in the preheated oven for 10 to 12 minutes, until cookies appear dry. Cool on the cookie sheets, then peel away from the aluminum foil.
- Make the icing for the cookies by mixing the confectioners' sugar and water until it reaches a piping consistency. Add a drop of yellow food coloring. Put icing into a pastry bag or resealable bag and cut a small piece off of the corner. Pipe small dots onto the center of the cookies. Allow icing to dry before storing cookies in an airtight container at room temperature. Cookies can be stored for up to two weeks.

Steps:
- Heat oven 350.
- degrees F.
- Chop your sugared gumdrops into small pieces, I use scissors, or a sugared or floured paring knife. A little tedious job, but once its done, the recipe is a breeze.
- Mix butter and sugar and cream well with wooden spoon.
- (If using hand mixer do not over beat the butter and sugar, this will make the butter ooozz out while baking and end up with a buttery greasy cookie.).
- Stir in the flour and the chopped gumdrops.( A tip is to use 1/4 cup of the flour tossed into the chopped gumdrops, so that they stay seperate after cutting.).
- Shape dough into balls. This doesnt want to hold together well, so just squeeze each ball tightly to form.
- Place onto cookie sheet.
- Press a greased glass into the granulated sugar, and then press down on each cookie to 1/2 inch thick.
- Cut the small drops into pieces and press a few into each cookie.
- Bake 10 minutes, or until edges are light golden.
- Remove to wire rack.
- Cool completely.
- You will see that these are crumbly to make balls, You might even think that they won't hold up.
- But do not add any more butter.
- That is the reason that the last drops are pressed into place before baking.

YULE LOVE THESE SUGAR PLUM COOKIES
A simple recipe using cookie dough and jam, yet eye-catching elegant at your buffet table. You will need a small 3/4" cookie cutter with a simple design. You can also make your own sugar cookies or slice the pre-made ones thicker, then roll them out with a rolling pin to make larger cookies. :)

SUGAR PLUM NO-BAKE COOKIES
This is a no-bake Christmas cookie that is a must-have in my family during the holidays. Having the clove to suck on at the end is the best part! They are delicious and pretty, not to mention simple to make. Everyone hears about sugar plums at Christmas, but nobody knows what they are! Kids LOVE these. Be sure to remove the whole clove before giving to small children however.

Steps:
- Pour the milk into a mixing bowl, and sprinkle 1 package of strawberry gelatin overtop. Stir to dissolve the gelatin, then stir in the coconut and graham cracker crumbs until a stiff dough forms. You may need to use additional graham cracker crumbs to make a firm dough.
- Roll the dough into approximately 30 - 1 inch balls. Pour the remaining strawberry gelatin into a small bowl, and roll the cookies in the gelatin to coat. Place the cookies onto a serving tray, and press a whole clove into each to form a stem.
