- Stir together cream cheese, onion, 1 tablespoon chives, the oil, Old Bay seasoning, Worcestershire sauce, and liquid smoke in a medium bowl until creamy.
- Flake tuna with a fork. Add the tuna and pimiento to the cream cheese mixture; stir until well mixed. Cover and chill at least 1 hour or up to 24 hours. (The smoke flavor will build. It may seem faint at first, but refrain from adding more liquid smoke until after the mixture chills. If desired, stir in an additional 1/8-1/4 teaspoon liquid smoke.)
- To assemble the canapés, spread 1/2 teaspoon of the tuna mixture on each cracker. Top each with a cucumber slice and another 1 1/2 teaspoons of the tuna mixture. Sprinkle with the remaining 1 tablespoon chives.

- Blend together mayonnaise, lemon juice,.
- and worcestershire sauce; add to tuna mixture.
- Toss lightly.
- Yield: 16 canapes.
- I just made this because of the concern that it was too "liquidy" according to the reviewer, and it was perfect. I just added "drain well", because my only conclusion is that she didn't drain it. I just used water packed, and i think the "oil" probably gives it a bit more flavor. I would also suggest letting it set for a few hours so the flavors meld.

CURRIED TUNA SALAD

- In a mixing bowl break the tuna up with a fork. Toss with the onion, fresh coriander, and raisins.
- In a small saute pan, heat the oil over medium heat, add the curry powder, and stir until fragrant, about 30 seconds. Remove pan from the heat and set oil aside to cool.
- Add the curry oil to the mayonnaise, season with salt, and pepper to taste and add the lime juice. Gently mix the tuna with the seasoned mayonnaise. Serve on a bed of lettuce or in a sandwich.
- Yield: 3 to 4 servings

- Combine all ingredients except tuna, mayonnaise and endive in a mixing bowl.
- Place the tuna in a sieve and press it lightly to remove as much water as possible, taking care not to mash the tuna.
- Add tuna with desired amount of curried mayonnaise to the mixture. Stir well and chill.
- Remove the larger outer leaves of the endive. Wash the leaves in ice water and drain.
- Immediately before serving, spoon about a tablespoon of the curried tuna mixture into the hollow of the sheaths.
