Copycat Chicken Salad image

This recipe is incredibly easy to make, and your family will love it. The sweet pickle relish gives it its signature taste. I like to use a thick, crusty oat bread for this sandwich. -Julie Peterson, Crofton, Maryland

1/2 cup reduced-fat mayonnaise
1/3 cup sweet pickle relish
1/3 cup finely chopped celery
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
1 hard-boiled large egg, cooled and minced
2 cups chopped cooked chicken breast
4 slices whole wheat bread, toasted
2 romaine leaves

Steps:

  • Mix the first 7 ingredients; stir in chicken. Line 2 slices of toast with lettuce. Top with chicken salad and remaining toast.

It is honestly the BEST chicken salad I have ever had. You can adjust the amounts to your liking; I don't usually add as much butter or mayo. Just whatever taste good to you!

1/2 cup butter
2 cups mayonnaise
1/4 cup minced parsley
1/2 teaspoon curry powder
1/4 teaspoon minced garlic
2 cups green seedless grapes, sliced
1/2 cup toasted slivered almonds
1 pinch marjoram
salt and pepper, to taste
lettuce leaf
4 cups cooked chicken breasts, shredded

Steps:

  • Melt butter in saucepan. Cool to room temperature.
  • In a bowl, gently stir the butter into mayonnaise, parsley, curry powder, garlic, marjoram, salt and pepper.
  • In a large bowl, combine chicken, grapes and almonds.
  • Arrange this mixture on lettuce leaves. Spoon dressing on top and sprinkle with paprika.

Steps:

  • Melt butter in saucepan. Cool to room temperature. In a bowl, gently stir the butter into mayonnaise, parsley, marjoram, salt and pepper. In a large bowl, combine chicken, grapes and almonds. Arrange this mixture on lettuce leaves. Spoon dressing on top and sprinkle with paprika.

1 (2 lb) package boneless skinless chicken breasts (more for larger families)
1 -2 cup mayonnaise (double for larger families)
1 -2 large yellow sweet onion (sliced into rings)
salt
lemon pepper
aluminum foil
2 large whole tomatoes (crushed flavored will work just drain off juice)
2 cups rice
cooking spray

Steps:

  • pre-heat oven to 350- lay foil in shallow baking pan spary with cooking oil-sprinkle pan with salt,lemon pepper a few slices of onion and tomatoes. Lay washed chicken breast on top and repeat, spread mayonaise over the top and cover with foil let cook for about 25/30 minutes. in seperate pot cook rice according to pkg when all is done lay rice on plate put chicken on top use sauce from mayo and dressing and serve with a side salad and hot rolls.

A quick and easy chicken salad with the most awesome rice vinegar dressing! Great use for leftover chicken. I got this recipe from a lovely co-worker, Grace (she says she always doubles the onion amount). Best served within one hour of mixing. Enjoy!

2 tablespoons salad oil
1 (3 ounce) package ramen noodles (do not use seasonings)
1/2 cup sliced almonds
2 tablespoons sesame seeds
2 cups shredded cooked chicken breasts
4 cups finely shredded cabbage (1 small head- or buy a package of cole slaw salad mix- it has 5 or 6 cups already shredded)
1/2 cup chopped green onion
salt, to taste
1/3 cup salad oil
1/3 cup rice vinegar (or distilled white vinegar)
3 teaspoons sugar
1/2 teaspoon pepper

Steps:

  • Heat oil in a wide frying pan over medium-high heat. Crumble noodles (do not use seasonings); add crumbled noodles with almonds and sesame seeds to hot oil. Cook, stirring until browned (3 to 4 minutes).
  • Lift out mixture from frying pan; drain.
  • In a salad bowl, combine noodle mixture, chicken, cabbage and onions. Season with salt to taste.
  • Mix together ingredients for Rice Vinegar Dressing and pour over salad; toss lightly until well coated.
  • Serve within 1 hour of mixing.

9 ounces lime-flavored gelatin
6 tablespoons vinegar
1 1/2 cups mayonnaise
3 cups cottage cheese
4 tablespoons minced onions
1 cup diced celery
3 (10-ounce) packages frozen chopped spinach, thawed, drained, and squeezed dry
tomato wedges for garnish
------------------------------
Crabmeat Dressing:
3 cups mayonnaise
3/4 cup chili sauce
6 tablespoons horseradish
1/2 large onion, chopped
Tabasco (optional)
2 cups flaked crabmeat
wed

Steps:

  • Dissolve gelatin in 3 cups boiling water; add 1/2 cup cold water and vinegar, then all other ingredients, and pour into 9x13-inch pan that has been coated with mayonnaise. Refrigerate until congealed. Cut into squares, garnish with tomato wedges, and serve with Crabmeat Dressing. Crabmeat Dressing: Mix all ingredients except crabmeat. Fold in crabmeat, and spoon over squares of Congealed Spinach Salad.
