Easy Mini Cheesecake Recipe - this simple cheesecake recipe makes 12 perfect mini cheesecakes and can be made so many ways! Lemon, Oreo, S'mores, Fruit, Peanut Butter Cup - any cheesecake you want in no time at all.

1 1/4 cups graham cracker crumbs
3 tablespoons brown sugar
5 tablespoons unsalted butter (melted)

8 ounces Challenge Cream Cheese (room temperature)
1 large egg (room temperature)
1/4 cup granulated sugar
1/4 cup sour cream (room temperature)
1 teaspoon vanilla extract
*See Note for additional filling and topping ideas*

Steps:

  • Preheat oven to 350°F. Line a 12-cup muffin pan with cupcake liners.
  • Make the graham cracker crust: Stir together graham cracker crumbs, sugar, and melted butter. Press about 2-2 1/2 tablespoons of the mixture into the bottom of each muffin liner and press to compact.
  • Beat room temperature cream cheese with a hand mixer until fluffy. Beat in room temperature sour cream. Beat in egg, sugar, and vanilla extract. (Room temperature ingredients are a must to avoid lumps!)
  • Evenly divide (about 2-2 1/2 tablespoons each) cheesecake among crusts. Bake for 18-20 minutes, until they just begin to brown. Cool completely and refrigerate for at least 3 hours or overnight.
  • Serve plain or topped with whipped cream and berries. See notes for additional serving suggestions.

½ cup graham cracker crumbs
2 tbsp melted butter
1 rounded tsp white sugar
1 pkg (240 g) cream cheese, softened
¼ cup white sugar
¼ tsp vanilla
1 egg
¼ cup sour cream

Steps:

  • Preheat oven to 350 F. Line a cupcake pan with 6-7 cupcake liners and set aside.
  • For the crust, combine the ingredients for the crust with a fork until the mixture has the consistency of wet sand. Place one tbsp of the crust in each liner, pressing it down firmly with your fingers.
  • For the filling, beat the cream cheese with the sugar and vanilla for about a minute until the mixture is well combined. Scrape down the sides of the bowl as necessary. Add in the egg and mix until combined, then do the same with the sour cream.
  • Once the filling is smooth and creamy, pour about ¼ cup of it into each of the liners and bake in the oven for 13-18 minutes, or until the cheesecakes have puffed up slightly.
  • Let them cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely and then chill them in the fridge for at least two hours before serving.

3 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
5 large eggs
1 cup sour cream
1/4 cup confectioners' sugar
Mandarin oranges, pineapple tidbits, halved maraschino cherries and/or chopped nuts

Steps:

  • In a large bowl, beat the cream cheese until smooth. Gradually add sugar, vanilla and salt and mix well. Add eggs, one at a time, beating well after each addition. , Spoon into paper-lined miniature muffin cups, 2 tablespoons in each. Bake at 325° for 20-25 minutes or until set. Cool completely. , In a small bowl, combine sour cream and confectioners' sugar until smooth; spread over cheesecakes. Decorate with fruit and/or nuts. Chill for at least 1 hour. Store in the refrigerator.

⅔ cup chocolate graham cracker crumbs
2 tablespoons butter, melted
1 ½ tablespoons white sugar
1 (8 ounce) package cream cheese, at room temperature
¼ cup white sugar
1 egg
1 tablespoon lemon juice
1 tablespoon milk
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
½ cup sour cream
1 tablespoon white sugar
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 6-cup muffin tin. Line the bottoms with parchment paper cut into circles.
  • Mix graham cracker crumbs, butter, and sugar together in a small bowl. Distribute mixture evenly into the muffin cups and press firmly to form the crusts.
  • Bake in the preheated oven for 5 minutes. Leave oven on and let crusts cool for 5 minutes.
  • Meanwhile, beat cream cheese, sugar, egg, lemon juice, milk, flour, and vanilla extract together in a medium bowl until light and fluffy. Mix in egg; pour batter into the prepared muffin cups.
  • Bake in the preheated oven for 15 minutes.
  • Mix sour cream with sugar and vanilla extract in a small bowl. Top each cake with a small dollop of the mixture and continue baking until topping is set, about 10 minutes more.
  • Allow the cheesecakes to cool completely at room temperature before removing from the tin, at least 1 hour. Refrigerate.

Individually-sized chocolaty cheesecakes on a gingersnap cookie base! You can, of course, use any cookie base that you'd like really. Oreo® is the obvious choice to play up the chocolate flavor, graham crackers are always great, and Nilla® wafers are a fun option, too!

1 cup gingersnap cookie crumbs
2 tablespoons unsalted butter, melted
1 ½ (8 ounce) packages cream cheese, room temperature
½ cup white sugar
2 tablespoons unsweetened cocoa powder
¼ cup sour cream
½ teaspoon vanilla extract
2 large eggs

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line a 12-cup muffin tin with paper liners.
  • Combine cookie crumbs and melted butter in a bowl until evenly combined and mixture resembles coarse sand. Divide mixture evenly and sprinkle into the bottom of the prepared muffin cups; use the bottom of a cup to press crumbs firmly into a crust.
  • Bake in the preheated oven for 5 minutes. Remove crusts to a wire rack. Reduce oven temperature to 300 degrees F (150 degrees C).
  • While the crusts are cooling, combine cream cheese, sugar, and cocoa powder in the bowl of a stand mixer fitted with the paddle attachment. Whip on medium to high speed, scraping down the sides and bottom as needed, until smooth and evenly combined. Blend in sour cream and vanilla. Add eggs, one at a time, blending after each addition until mixture is smooth and even and scraping the sides as necessary. Divide filling evenly between the crusts.
  • Place in the oven and bake for 15 minutes. Turn the oven off, and leave cheesecakes in the oven without opening the door for 10 more minutes. Remove from the oven and let sit at room temperature for 30 minutes. Chill in the refrigerator for at least 1 hour before serving.
