EASY MOCHA MOUSSE
This light and fluffy mocha mousse is easy to make with just a few ingredients and features rich chocolate flavour with a smooth coffee hit. You won't have to choose between coffee or dessert!

- Heat half of the cream in a medium saucepan, over medium-high heat until bubbles begin to form around the edges.
- Place the chocolate and coffee into a large heatproof bowl. When the cream comes to the boil, pour it over the chocolate. Leave for a few minutes for the chocolate to start to melt, then whisk until the chocolate is completely melted and the mixture is smooth, then stir in the remaining half of the cream. (Adding this cold cream helps cool the mixture down faster).
- Refrigerate until very well chilled - at least several hours or ideally overnight.If you're in a hurry you can place the bowl in the freezer to speed the cooling process. Just make sure you check and stir it regularly to make sure it doesn't actually freeze!
- Once the mousse mix is fully chilled, whip it with an electric hand mixer until stiff peaks form. If it seems like it's still a little too soft to pipe, you can refrigerate the bowl of mousse again for 10 minutes or so until it firms up some more.
- Transfer the mixture to a piping bag fitted with a large star or round piping tip and pipe into serving glasses. You can also just spoon the mousse into the glasses if you prefer.
- Put the instant coffee, caster sugar and boiling water into a bowl. Whip with an electric mixer (or use a hand whisk and a strong arm) until thick and foamy, and much lighter in colour.
- Put the cream, sugar and vanilla into a bowl and whip with an electric mixer until thickened, and soft peaks form when you lift up the mixer.
- Spoon the toppings onto each of the mousses. I found it handy to use an ice cream scoop, but a spoon will do the job just fine too.
- Serve the mousse immediately, or store, covered or in an airtight container, in the fridge. The mousse will keep well for several days, but the whipped coffee topping looks its best for up to a day, then it will start to slowly deflate. It still tastes the same, it just doesn't look so pretty.

MOCHA MOUSSE

In another large bowl, beat the heavy cream with the sugar and vanilla using an electric hand mixer until soft peaks form. Reserve 1/4 cup for garnish. - Combine espresso and butter in the top of a double boiler over simmering water.
- Place dark chocolate pieces in the espresso mixture; cook without stirring until chocolate starts to melt, about 3 minutes. Whisk chocolate and espresso mixture until well combined. Remove from heat and set aside.

- Crush cookies in a bag and set aside.
- Mix cold espresso and rum in a small bowl. Mix in gelatin and let stand for 2 minutes.
- Add boiling water and stir until gelatin is completely dissolved.
- Mix sugar and cocoa in large bowl.
- Add whipping cream and vanilla. With an electric mixer, beat on medium speed until stiff.
- Pour in gelatin mixture and beat until well-blended.
- Add ½-inch (1.5 cm) layers of crushed cookies to dessert dishes, then scoop mousse into dishes and refrigerate for at least 30 minutes.

- Dissolve 1 Tbsp. flavored instant coffee in hot water; drizzle over ladyfingers. Line bottom and side of shallow 1-1/2-qt. bowl with ladyfingers.
- Blend 1/2 cup milk, cream cheese and remaining undissolved flavored instant coffee in blender until smooth. Add dry pudding mixes and remaining milk; blend 2 min. Carefully pour into lined bowl; top with COOL WHIP.

- 1. STIR 2 tablespoons coffee crystals and 1/4 cup hot water in small bowl until dissolved. Separate ladyfingers into halves. Place cut side up on tray or cookies sheet. Brush with liquid coffee. Cover with plastic wrap.

- 4. LAYER each of 8 glass dessert dishes or coffee cups with 1 tablespoon chocolate filling and 3 ladyfinger halves arranged against sides of dish. Fill center with mascarpone filling. Cover; chill at least 2 hours.
- 5. BEAT remaining cream and powdered sugar in small bowl with electric mixer on low speed until combined. Beat on high speed until soft peaks form. Spoon on top just before serving. Garnish with mini chocolate chips or sprinkle with cocoa powder, if desired.

- Pour coffee into a pie dish. Combine eggs, sugar, and Marsala in a large metal bowl set on top of (but not in) a pot of simmering water. Beat with a hand mixer or whisk until mixture doubles in volume and reaches 160°F on a thermometer, 7 to 10 minutes.

- Using a double boiler, melt the marshmallows in the boiling coffee.
- Refrigerate until cold, about 1 hour.
- Save 12 chocolate wafers and crush the rest. Combine with melted butter.
- Press into the bottom of a 9 inch spring form pan.
- Set the 12 wafers on end around the edge of the pan.
- Whip cream.
- Then whip chilled coffee mixture.
- Fold together and pour into the pan.
- May be chilled for up to 4 hrs at this point.
