OPEN FACE CUCUMBER TEA SANDWICHES
Use these cucumber tea sandwiches as just the right finger food for your next shower, wedding, or special event. They're a perfect one-bite appetizer.

Steps:
- Wash the outside of the cucumber well. With a box grater, shred about half of the cucumber, skin and all. Place on a layer of paper towels, cover with another paper towel and twist to remove any excess moisture.
- In a medium bowl mix the cucumber, cream cheese, mayonnaise, green onion tops, and salt. Stir well.
- Allow mixture to sit, covered, in the fridge for at least an hour or overnight for flavors to develop.
- When you are ready to assemble, cut circles of white bread using a 2" cutter, leaving off the crusts. If you don't have a cutter, an empty prescription bottle is good for cutting circles or you can use a small drinking glass.
- Add about a teaspoon of the cucumber mixture to the top of each circle of bread and garnish with very thin slices of cucumber, or a sprinkle of paprika for color. Serve immediately so the bread doesn't get soggy.

EASY CUCUMBER PARTY SANDWICHES
These easy, beautiful, yummy sandwiches are perfect for brunches, tea parties or spring and summer lunches. Can be prepared ahead of time and assembled just before serving. This is an easy appetizer to prepare the day before, except for the assembly. The cream cheese mixture is actually better after about 8 hours. Feel free to experiment with the dressing; we prefer the buttermilk dressing but ranch or Italian works great, too. Also, cocktail bread can be substituted for the hand-cut bread, which will save 10 to 15 minutes.

- Place cucumber slices between 2 paper towels set in a colander. Allow liquid to drain, about 10 minutes.
- Mix cream cheese, mayonnaise, garlic powder, onion salt, and Worcestershire sauce in a bowl until smooth.
- Spread cream cheese mixture evenly on one side of each bread slice.
- Divide cucumber slices over half of the bread slices; sprinkle lemon pepper on cucumber.
- Stack the other half of the bread slices with spread sides down over the cucumber slices to make sandwiches.

- Preheat the oven to 400 degrees F.
- Toast the bread for about 5 minutes then set aside to cool. Combine the watercress, buttermilk dressing and cream cheese in a food processor or blender and puree. Spread the toast with the cream cheese mixture. Shingle cucumbers on top of each slice of bread then cut the sandwiches into triangles. Arrange the sandwiches on 4 plates, garnish with red pepper and serve.
