EASY OLD FASHIONED MEATLOAF

Easy Old Fashioned Meatloaf image

No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

MEATLOAF RECIPE

Meatloaf recipe image

Recipe video above. Meatloaf is so much more than a giant hunk of ground beef in a loaf shape. It should ooze with flavour, be moist and tender yet not crumble apart when sliced. And the caramelised glaze is the crowning glory!

Provided by Nagi

Categories     Main

Time 1h30m

Number Of Ingredients 14

1 cup panko breadcrumbs ((Note 1))
1 large onion (, grated (brown, yellow))
1 kg / 2 lb ground beef (mince) (, preferably not lean)
2 eggs
3 garlic cloves (, minced)
1 tsp Worcestershire Sauce
1/4 cup tomato ketchup
1/4 cup chopped parsley ((optional), or 2 tsp dried parsley or basil)
1 tsp dried thyme
2 beef bouillon cubes (, crumbled or 2 tsp beef powder (Note 2))
1 tsp black pepper
1/2 cup tomato ketchup
2 tbsp cider vinegar
1 tbsp brown sugar (, lightly packed)

Steps:

  • Preheat oven to 180C/350F. Oil or spray a loaf tin. (Note 3)
  • Glaze: Mix together in a small bowl. Set aside.
  • Meatloaf: Place breadcrumbs in a very large bowl. Grate over onion. Mix so the breadcrumbs are all wet. (Note 4)
  • Add remaining ingredients. Mix well using your hands. Form into a loaf shape, pinching together then smoothing over creases and cracks (helps prevent cracks during baking).
  • Transfer into loaf tin. Brush generously with glaze, using about 1/2.
  • Bake for 45 minutes. Remove from oven and brush with most of the remaining glaze. If there is excess fat pooling, scoop/pour it off.
  • Bake for a further 30 minutes. Remove from oven.
  • Stand for 10 minutes before turning out and cutting into thick slices. You will probably get a bit of crumbling just on the edges of the first couple of slices, this is normal and indicative of the tenderness of the meatloaf (zero crumble indicates firm packed harder meatloaf which isn't as enjoyable!).
  • Ideal served with a dollop of ketchup, creamy mashed potatoes and steamed vegetables.

EASY MEATLOAF

Easy Meatloaf image

This Easy Meatloaf is a favorite at my house. It's the recipe we always use when we want a meatloaf that's tender, super moist and utterly delicious!

Provided by Joanna Cismaru

Categories     Main Course

Time 1h10m

Number Of Ingredients 11

1 large onion (finely chopped or grated)
1 cup breadcrumbs (I used Panko)
1/4 cup milk
1 pound ground pork
1 pound ground beef
1/2 green bell pepper ( finely chopped)
1 egg
1 cup barbecue sauce (I used Guy Fieri's Sweet and Smoky Kansas Style BBQ sauce)
1 teaspoon Worcestershire sauce
1 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)

Steps:

  • Preheat oven to 350 F degrees. Spray a loaf pan with cooking spray; set aside.
  • Grate the onion (if not using chopped) in a large bowl. Add the breadcrumbs and the milk and stir it together. Add the rest of the ingredients but only add about 3/4 cup of the barbecue sauce to the meat mixture. Mix the entire meat mixture really well using your hands or a spoon.
  • Add the meat mixture to the prepared loaf pan and shape it into a loaf. Brush with the remaining barbecue sauce over the top of the meatloaf.
  • Bake for 60 to 80 minutes or until done. Best way to tell when a meatloaf is done is to use an instant-read thermometer. Insert the thermometer into the meatloaf and when it reaches 160 degrees F, it's done.
  • Let it sit for 10 minutes before slicing into it.

1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot, peeled and broken into 3
3 cloves garlic, whole
1/2 red bell pepper, halved and seeded
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoon kosher salt
1 egg
1/2 cup ketchup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot sauce
1 tablespoon honey

Steps:

  • Preheat the oven to 325 degrees Fahrenheit.
  • In a food processor, crush the croutons, black pepper, cayenne pepper, chili powder, and thyme until fine. Place the mixture into a large bowl.
  • Place the onion, carrot, garlic, and bell pepper in the food processor, Pulse them just until finely chopped, not pureed. Transfer the vegetable mix into the bowl of breadcrumbs.
  • Add the chuck and sirloin to the bowl and season with salt. Add the egg. Mix the ingredients with your hands until well-combined. Avoid squeezing the meat.
  • Place the meatloaf mixture into a 10-inch loaf pan to mold it. Turn the pan over onto a baking sheet lined with parchment paper. Insert a food thermometer into the center of the meatloaf at a 45-degree angle, making it doesn't touch the baking sheet. Set the thermometer to 155 to 160 degrees Fahrenheit. Bake until the meat thermometer beeps, about 45 minutes.
  • Meanwhile, prepare the glaze. Whisk together the ketchup, cumin, Worcestershire sauce, hot sauce, and honey. Brush the glaze onto the top and sides of the meatloaf after 10 minutes of baking.
  • Let the meatloaf rest for 10 to 15 minutes before slicing. Serve and enjoy!
