EASY SALSA BEEF PIE
Extra easy casserole - make as spicy or as mild as you like, depending on the type of salsa you use. I combined parts of several existing recipes to create this one.

Steps:
- Preheat oven to 350 degrees.
- Press crescent rolls into a greased 9 x 13" pan. (Do not separate the rolls). Press the perforated edges together to create "crust.".
- Cook beef, onions, salt, pepper, and chili powder in skillet over medium heat until meat is browned. Drain any excess fat.
- Remove from heat and stir in the salsa.
- Spoon over crust. Top with cheese.
- Bake at 350 degrees for 30 minutes.
MILE-HIGH SALSA PIE
My family LOVED this recipe and it's so simple and quick. It was on the back of the Old El Paso Soft Taco Bake dinner kit box.

- 1. Heat oven to 400°F In 10-inch nonstick skillet, cook beef or chicken, stirring occasionally, until thoroughly cooked; drain. Stir in seasoning mix (from dinner kit), water and half of the cheese sauce (from dinner kit). Heat to boiling over high heat, stirring occasionally. Reduce heat to medium-high. Simmer uncovered 4 minutes, stirring occasionally. Stir in kidney beans and remaining cheese sauce; heat until hot.
- 2. In ungreased 2-quart casserole, place 1 tortilla (from dinner kit). Layer with 1/4 of the salsa, beef mixture and cheese. Repeat layers, using up ingredients and ending with cheese on top.
- 3. Cover; bake 17 to 22 minutes or until cheese is melted. Let stand 5 minutes.
- High Altitude (3500-6500 ft): Cover; bake 20 to 25 minutes.

- Preheat oven to 425°. Drain beef, reserving 1/4 cup juices; shred meat with 2 forks. In a large skillet, heat oil over medium-high heat. Add onion and pepper; cook and stir until tender, 1-2 minutes. Add garlic; cook 30 seconds longer. Remove from heat; stir in beef and reserved juices., Unroll 1 pie crust; cut in half. Layer 1/4 cup shredded cheese and about 1/3 cup beef mixture over each crust half to within 1/2 in. of edge. Fold crusts over filling; press edges with a fork to seal. Place on a greased baking sheet. Repeat with remaining crust and filling., Bake until golden brown, 15-18 minutes. If desired, serve with queso dip. Freeze option: Freeze cooled pies in a freezer container. To use, reheat pies on a greased baking sheet in a preheated 350° oven until heated through.

SANDY'S FRITO PIE
This recipe is so easy and delicious, I never have leftovers. Double the recipe for family gatherings. Fresh salsa is a must! Mild works great!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Stir chili beans, corn, salsa, olives, and taco seasoning into beef mixture and simmer until heated through and flavors blend, 10 to 15 minutes.
- Spread about 2/3 the crushed corn chips into a baking dish and top with the beef mixture. Sprinkle remaining chips over beef.
- Bake in the preheated oven until bubbly, about 25 minutes. Sprinkle with Mexican cheese blend and continue baking until cheese is melted, about 10 minutes more.
