- In a large saucepan or Dutch oven, bring 2 qts. of water to a boil. Cut an "X" in each chestnut; drop into boiling water. Return to a boil; cook for 5 minutes. Remove from the heat; peel outer shell and inner skin. Coarsely chop chestnuts; set aside., In a small skillet, saute celery and onions in butter until tender. Transfer to a large bowl; add sausage, stuffing and chestnuts. Add broth and water; toss to mix., Loosely stuff turkey just before roasting. Skewer openings; tie drumsticks together. Place breast side up on a rack in a roasting pan. Brush with oil. Roast, uncovered, at 325° for 4-1/4 to 4-3/4 hours or until a thermometer reads 180° for turkey and 165° for stuffing, basting occasionally. Cover loosely with foil if turkey browns too quickly., Cover and let stand for 20 minutes before removing the stuffing and carving the turkey. If desired, thicken pan drippings for gravy.

ROAST TURKEY WITH CHESTNUT STUFFING
The classic Christmas turkey with a flavour-packed sausage-based stuffing - you'll have plenty left to serve on the side too

Steps:
- First make the stuffing. Pour the madeira or wine into a bowl, then crumble in the mushrooms. Fry the onions in the butter for 10 mins, until golden. Cool, then mix with the thyme leaves, the mushrooms and their soaking liquid, and all remaining ingredients, apart from 8 of the chestnuts and the bacon. Season well.
- Set aside half of the stuffing. Line a greased 500g loaf tin with bacon. Pack the rest of the stuffing into the tin, then bring the rashers round over the top and secure in place with cocktail sticks. Use the reserved chestnuts to fill the spaces where the bacon meets. Chill until ready to cook. This will keep in the fridge uncooked for 2 days or can be frozen for up to a month.
- Prepare the turkey. The night before, put the onion quarters, reserved lemon halves and thyme sprigs in the cavity between the legs. Pack the reserved stuffing into the neck end. Secure the neck skin with skewers and tie the legs together. Weigh the turkey. Calculate the cooking time at 40 mins per kilo, plus 20 mins.
- Put a large sheet of extra-wide foil in a large roasting tin and put the turkey on top. Smear the breast with the butter, then grate over half of the nutmeg and season well. Cover with bacon, then pour over the glass of madeira or wine. Seal the foil well to make a parcel. Chill overnight.
- On the day, take the turkey out of the fridge 1 hr before roasting. Heat oven to 190C/fan 170C/gas 5. Put the turkey in the oven; then, 90 mins before the end of cooking, remove foil and bacon, and drain off the juices from the tin to use in the gravy. To test whether the turkey is cooked, push a skewer into the thickest part of the thigh - the juices should run clear. If they are pinkish, cook for 15 mins more, then test again.
- Transfer the turkey to a platter, cover with foil, then a couple of tea towels, and allow to rest for at least 30 mins before carving. Meanwhile, cook the stuffing loaf for 30 mins and reheat the bacon. Garnish with watercress and serve the stuffing loaf separately.

- Set oven to 350 degrees F.
- Prepare and butter a casserole dish just large enough to hold the breast.
- Crumble the sausage slightly,and brown in a skillet over medium heat with onion; drain any fat then place in a bowl.
- Combine the pork sausage with next 8 ingredients, then season with salt and pepper to taste; mix well to combine.
- Gently loosen the skin from turkey in the neck area to make a large "pocket" to stuff.
- Stuff in as much stuffing as you can with sausage mixture thensecure with toothpicks.
- Place the remaining sausage (if any) into a small baking dish, and during the last 30 minutes of the turkey breast baking time, bake the remaining stuffing for about 20-25 minutes, or until heated through.
- To cook the turkey breast: place the breast skin-side up on a rack in roasting pan.
- Brush with melted butter, and season with salt and pepper.
- Bake for about 2 to 2-1/2 hours or until a thermometer reaches 170 degrees F (I like to remove a little sooner as the temperature will rise after removing from the oven).
- Let stand for 15-20 minutes before slicing.

- Heat broth in a saucepan over medium heat until boiling, about 5 minutes. Add apricots, remove from the heat, and let sit until apricots are plump, about 15 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Melt butter in a large pan or Dutch oven over low heat. Add onion and celery and cook, stirring occasionally, until translucent, about 10 minutes. Add broth-apricot mixture, apples, thyme, sage, and pepper; stir until combined. Transfer to a large mixing bowl.

Here's another good turkey and dressing recipe. DH loves stuffings and gobbles this one up. I've never really liked using the giblets (I think it's a mind thing, lol), but I am convinced that they really add a lot of flavor.

- Make the stuffing - directions below.
- Preheat oven to 450°F
- Rinse the turkey inside and out and pat dry.
- Squeeze the juice of the oranges all over the turkey and in the neck and body cavities.
- Spoon the stuffing loosely into the cavities.
- Set aside any extra stuffing.
- Sew up the cavities or close with small trussing skewers.
- Place the turkey on a roasting rack in a roasting pan.
- Sprinkle all over with thyme and salt and pepper to taste.
- Spread the butter all over the turkey.
- Turn breast side up in the pan and cover the pan with aluminum foil.
- Place turkey in the oven and reduce heat to 425.
- Roast for 3 hours.
- Remove the foil and roast, basting occasionally until the juices run clear when the meaty part of the thigh is pierced with a sharp skewer, about 2 more hours.
- Bake the leftover stuffing in a baking dish at 325 for 30 minutes.
- Let turkey stand, covered with foil for 15 minutes before carving.
- STUFFING:.
- Place the apricots and 1 cup of Grand Marnier in a small saucepan.
- Heat to boiling.
- Remove from the heat and set aside.
- Simmer the turkey liver and heart in water to cover in a small saucepan for 5 minutes; set aside and cool.
- Melt 1/2 cup of butter in a large skillet over medium heat.
- Add the celery and onion and saute for 10 minutes.
- Transfer to a large mixing bowl.
- Cook the pork sausage in the same skillet, crumbling with a fork, until it is no longer pink.
- Remove and add to the celery mixture.
- Add the stuffing mix, apricots with liquid, and almonds.
- Finely dice the turkey liver and heart and add to the stuffing mixture, stir to combine.
- Heat the remaining 1/2 cup butter and the stock in a small saucepan just until the butter melts.
- Pour over the stuffing mixture and add the remaining 1/2 cup Grand Marnier.
- Stir well to moisten the stuffing.
- Season with thyme, salt and pepper to taste.
- Enough for a 21-24 pound turkey.

- To prepare the stuffing, melt the butter in a large sauté pan. Add the celery and the onion and sauté until soft, about 5 minutes. Add the apricots, chestnuts, chicken stock, salt, pepper, sage, and thyme. Bring the mixture up to a simmer, and then remove the pan from the heat. Add the bread cubes and toss until the liquid has been fully absorbed. Place the stuffing on a baking sheet and refrigerate until it's completely cooled. While the stuffing is cooling, prepare turkey breast. Preheat the oven to 350°F. Carefully remove the skin from the turkey breast in one piece and place it aside to be used later. Butterfly the breast open like a book using a small, very sharp knife, being careful not to cut all the way through. Place a piece of plastic wrap over the entire breast. With a meat mallet, pound the breast into an even thickness of about 1/4", and then remove the plastic wrap. Begin stuffing the turkey breast by spreading the bread mixture lengthwise down the middle of the breast. Roll the turkey around the stuffing and then roll the breast over, so the seam is on the bottom. Stretch the reserved skin over the top of the breast, and then tie it in 6-8 sections with butcher's twine around the middle. Place the turkey in a roasting pan and season it with salt and pepper. Place it in the oven for about 1 hour and 45 minutes, or until the internal temperature reaches 155°F on a meat thermometer. Let the turkey rest, then slice and serve.

- Preheat oven to 350 degrees F. Spread bread cubes onto bottom of large shallow baking pan. Bake 15 minutes, or until lightly toasted, stirring once. Set aside.
- Melt butter in large skillet over medium heat. Add almonds; cook and stir 3 minutes, or until lightly browned. Remove with slotted spoon; set aside. Add onion and celery to remaining butter; cook and stir 5 minutes, or until vegetables are crisp-tender. Stir in poultry seasoning and salt.

- Roast turkey 4-1/2 hours, or until meat thermometer reaches 160 degrees F when inserted in center of stuffing and reaches 180 degrees F when inserted deep in thigh, covering breast and top of drumsticks with aluminum foil after 3 hours to prevent overcooking of the breast. Let turkey stand 15 minutes before removing stuffing and carving.
