Fresh fruit muffins, easily frozen or eaten any time of day. Try peaches, blueberries, strawberries, or my daughter's favorite--chocolate chips.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups, or line them with muffin liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Add milk, egg, and butter; mix until ingredients are moistened. Do not overmix. Stir in fresh fruit. Spoon batter into prepared muffin cups.
- Bake in preheated oven until the tops spring back when lightly touched, 20 to 25 minutes. Serve warm.

BLUEBERRY-SAUSAGE BREAKFAST CAKE
Steps:
- In a bowl, cream butter and sugars. Add eggs, 1 at a time, beating well after each addition. Combine flour, baking powder and baking soda; add alternately with sour cream to creamed mixture, beating well after each addition. Fold in sausage and blueberries., Pour into a greased 13x9-in. baking pan. Sprinkle with pecans. Bake at 350° for 35-40 minutes or until cake tests done. , For sauce, combine sugar and cornstarch in a saucepan. Add water and blueberries. Cook and stir until thick and bubbly. Spoon over individual servings. Refrigerate leftover cake and sauce.

BLUEBERRY SAUSAGE MUFFINS

Steps:
- 1. Preheat oven to 380 degrees.
- 2. In a large bowl sift together the flour, baking soda, baking powder, and salt and set aside. In a smaller bowl add a tsp of the dry ingredients to the blue berries and toss.
- 3. In another large bowl, whisk together the sugar, oil, egg and cottage cheese making sure the cottage cheese is broken down(You can mix it with a mixer to break it down). Add the dry ingredients and the sausage. Stir mixture till ingredients are wet. Add the blueberries to mixture and stir 3 more times..
- 4. Fill muffin tin with paper liners or grease tins and fill the tins ¾ full.
- 5. Bake for 20 to 25 minutes. Remove from oven and remove the muffins from the tins let cool or eat warm with butter

- Preheat the oven to 350 degrees. Grease a 12-cup muffin pan and set aside.
- Cook the sausage in a skillet over medium-high heat until no pink color remains. As the sausage cooks, break it up using a potato masher or large fork so that it is crumbly and loose. Drain as much fat as possible from the cooked sausage.
- In a large mixing bowl, combine the eggs, shredded cheese, cooked drained sausage and baking mix. Stir until thoroughly combined.
- Fill muffin cups about 3/4 full. Bake for approximately 20 minutes or until golden brown on top.

This sounded SO gross to me when I first heard of it at a church breakfast...sausage with blueberries?! After about a month of them pestering me to try it, I did and can't ever get enough! Very easy to make and a big hit with children! Cook time includes about 10 minutes to brown sausage.

- Other ingredients will vary according to box directions, such as eggs, oil, etc.
- Brown sausage in a frying pan; drain.
- Prepare both boxes of blueberry muffin mix, according to directions, in a large bowl.
- Add sausage and pour into a 9X13 baking dish.
- Cooking times will vary, but mine is usually done in about 30 minutes, or until golden on top.
- Use a toothpick to test for doneness if you are unsure.
- Cut into squares.

- Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch baking dish.
- Sift 2 1/2 cups flour, 1 1/2 cup sugar, baking powder, and salt together in a bowl. Add milk, vegetable oil, eggs, and vanilla extract; mix into a semi-thick batter.
- Toss blueberries with about 2 teaspoons flour in a separate bowl; fold into batter. Pour batter into prepared baking dish.
- Bake in the preheated oven until cake is lightly browned, 25 to 30 minutes. Brush melted butter on top of cake and sprinkle with about 2 tablespoons sugar. Continue to bake until golden brown and a toothpick inserted in the center comes out clean, 5 to 10 more minutes.

- Preheat oven to 350 degrees. Cream together butter, sugar, egg and vanilla extract. In a separate bowl combine flour, baking powder and salt. In a separate bowl measure out milk. Add flour mixture and milk alternately until totally incorporated. Do not over mix. Gently stir in blueberries, being sure to have them evenly distributed. Pour into a 9" spring form pan that has been sprayed with non-stick spray.
- In another bowl combine the streusel ingredients and cut them together. Be sure to not over mix into a paste. You want to be able to sprinkle the chunks of streusel over the top of the blueberry batter. Bake for 40-45 minutes or until golden brown. Remove from oven and let cool for at least 15 minutes. Run a knife around the edge of the pan and remove the outside of the spring form pan.
- OPTIONAL: Glaze-Combine ingredients into a bowl and drizzle over the top of the cake. Serve warm or store at room temperature in an air tight container.
