EASY SINGLE-SERVING APPLE PORK CHOP
I created this apple pork chop recipe while running out of ingredients and not wanting to go shopping for more. It turned out very delicious! It has a lot of basic staples that should be lying around the house, and it is a really nice recipe when cooking for one who still likes to eat tasty and delicious meals. Amounts can be enhanced to make a nice family dinner.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Combine 1/4 cup brown sugar and butter in a skillet over medium heat. Stir until melted, about 1 minute. Add apple and onion; cook and stir until softened, 5 to 7 minutes. Add pork chop and cook until browned on both sides, 8 to 10 minutes. Remove from heat and transfer pork chop to a plate.
- Combine remaining brown sugar, water, rosemary, and thyme in a small saucepan over medium-low heat and bring to a boil. Cook just until sauce is syrupy, being careful not to burn the sugar, about 1 minute.
- Add cooked apple mixture to the sauce, stirring to cover.
- Wrap a shallow baking dish in aluminum foil for easy cleanup and place browned pork chop in the center. Pour sauce over pork chop making sure apples surround the meat.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), 25 to 30 minutes.

- In a large skillet, brown pork chops in oil on each side. Season with salt and pepper; remove and keep warm. In the same skillet, saute onions and apple wedges until crisp-tender. , Combine mustard and brown sugar; brush over chops. Return to the skillet; cook for 4 minutes or until meat juices run clear.

SIMPLE PORK CHOPS WITH APPLES RECIPE
Steps:
- Gather the ingredients. Heat the oven to 350 F.
- Arrange the apple slices in a buttered 13 x 9-inch baking dish . Sprinkle with the cinnamon and brown sugar.
- Melt the butter in a skillet over medium heat. Sprinkle the pork chops with salt and pepper, then brown on both sides in the butter. Transfer the pork chops to the prepared baking dish, arranging over the apples.
- Add the apple juice, cider, brandy, or wine to the hot pan; swirl and scrape up any browned bits. Pour over the chops.
- Cover the baking dish tightly with foil and bake for 35 to 45 minutes, or until pork chops register at least 145 F-the minimum safe temperature for pork -on an instant-read thermometer inserted into the thickest part of a pork chop.

Living single makes it hard for those of us who are used to cooking for a family of four. I invested in a new magazine called Cooking for 2 and LOVE IT! The recipes are for one or two folks and no leftovers to crowd my fridge. I like this one because the pork chop is not rubbery or tough to eat and the sauce can be easily multiplied to serve several people.

- Season chop with pepper; place in a small nonstick skillet.
- In a small bowl, combine all ingredients except 1 tablespoons water and cornstarch. Pour over pork. Bring to a boil. Reduce heat; cover and simmer 20-25 minute or until meat thermometer reads 160 degrees. Remove pork chop and keep warm.
- Stir together cornstarch and 1 tablespoons water and stir into the pan juices. Bring to a boil and cook 1 minute or until thickened. Pour over pork.
