1 head broccoli head, cut into florets
2 cups cheddar cheese, shredded
6 oz cream cheese, softened
1 cup ham, diced
1 tablespoon onion powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon paprika
3 boneless, skinless chicken breasts
6 slices ham

Steps:

  • Preheat oven to 350°F (180°C).
  • Finely chop the broccoli florets, and then transfer to a large bowl.
  • Add the cheddar, cream cheese, ham, onion powder, and mix evenly until combined. Set aside.
  • In a bowl, mix together the salt, pepper, garlic powder, onion powder, oregano, and paprika, then stir to combine.
  • Place the chicken breasts on a cutting board and slice across horizontally, making sure not to cut all the way through.
  • Season both sides of the chicken liberally with the spice mix.
  • Place each chicken breast on a double layer of plastic wrap, then cover with more plastic wrap.
  • Use a meat pounder to thinly pound the chicken breast and form into a rectangular shape.
  • Repeat with the remaining chicken breasts.
  • Lay down two of the flattened chicken breasts into a greased loaf pan lined with parchment paper, slightly overlapping them.
  • Place the ham slices evenly across the bottom and sides, hanging the ham over the sides of the loaf pan.
  • Spread broccoli mixture evenly on top of the ham, pressing it flat into the edges of the pan.
  • Fold over the flaps of ham to completely seal the mixture.
  • Place the third flattened chicken breast on top. Use a fork to tuck in the edges, creating a seal.
  • Bake for 25-30 minutes, until the loaf looks slightly brown and red on top.
  • Cool the loaf in the pan. Release any juices from the pan. Remove the chicken loaf using the parchment paper.
  • Slice into 1-inch (2-cm) slices, and serve!

3 ½ cups broccoli, finely chopped, divided
2 cups shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
8 oz cream cheese, 1 package, softened
3 chicken breasts
salt, to taste
pepper, to taste
14 oz cheddar cracker, 1 package
1 cup all-purpose flour
2 eggs

Steps:

  • In a small bowl, microwave 1½ cups (225 g) of broccoli for 1 minute. Add the cheddar cheese, garlic powder, onion powder, and cream cheese. Mix thoroughly, and set aside until ready to use.
  • On a cutting board, butterfly the chicken breasts with a knife. Cut through the chicken breast so you have 6 thinner chicken cutlets. Cover in plastic wrap, and tenderize by beating with a rolling pin or a heavy pan.
  • Remove the plastic wrap, and season with salt and pepper. Place a scoop of the broccoli cheddar mixture on top of a chicken cutlet, and spread until the chicken is covered.
  • Roll the chicken up starting from the tapered end. Use 2 toothpicks to keep the chicken tightly rolled. Repeat with the rest of the chicken.
  • Preheat the oven to 325˚F (165˚C). Line a baking sheet with parchment paper.
  • In a plastic bag, crush the cheddar crackers until they have a coarse, sand-like texture. Pour the cracker crumbs into a large bowl. Add the rest of the minced broccoli. Stir to combine.
  • Put the flour into a medium bowl.
  • Whisk the eggs in another medium bowl.
  • Using tongs, place one of the pieces of chicken into the flour. Turn the chicken in the flour until it is fully coated, tap off any excess flour. Place the chicken in the egg, turn until the chicken is coated. Place the chicken in the broccoli cracker crumb mixture, turn until the chicken is fully coated. Repeat with the remaining chicken rolls.
  • Transfer the pieces of chicken to the prepared baking sheet. Bake for 40-45 minutes.
  • Let the chicken cool slightly, then remove the toothpicks.
  • Enjoy!

1 small onion, chopped
1/2 teaspoon salt

6 hard rolls

  • Preheat to 325°. In a large skillet, cook and crumble beef with broccoli and onion over medium heat until no longer pink, 4-6 minutes. Stir in salt and pepper., Cut one-third off the top of each roll; discard or save for another use. Hollow out bottoms, leaving 1/2-in.-thick shells; place on a baking sheet., Tear bread removed from centers into 1/2-in. pieces and place in a bowl. Stir in 1-1/2 cups cheese and beef mixture. I bought some broccoli stuffed chicken breasts one time and they were soooooo delicious, but very expensive as a family meal, so I looked on the internet for something similar and made this recipe. This is a real keeper for our family. I also doubled this recipe because I had 8 chicken breasts, so needless to say we had leftovers. I added a little celery soup to the broccoli along with green onions, salt and pepper to flavor, for a variation and it was wonderful. The best stuffed chicken I have ever had.

3/4 cup breadcrumbs, seasoned, fine (I didn't use seasoned)
1 tablespoon parmesan cheese
1/4 teaspoon poultry seasoning
salt and pepper, to taste
2 eggs, beaten
1 tablespoon butter, melted and cooled
4 chicken breasts, skinned, boned and pounded to 1/4 inch thick
2 ounces mozzarella cheese
2 ounces ham, thinly sliced (I used deli toupee ham)
1/2 cup broccoli, cooked, chopped

Steps:

  • Spray a 9x13 inch pan, set aside.
  • On a sheet of waxed paper, combine bread crumbs, parmesan cheese, and seasonings, set aside.
  • In small bowl, using fork, combine egg and butter and mix well.
  • Preheat oven to 375 degrees.
  • Roll each pounded breast into egg mixture and then into crumbs, coating both sides evenly.
  • On each breast arrange 1/2 oz. cheese, 1/2 oz. ham and 2 tablespoons brocoli on top of ham.
  • Place near one end for easier rollup. Roll to enclose filling.
  • Arrange breast seams side down in baking pan.
  • Bake until tender at 350 degrees for about 40 minutes.

Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

3 cups cooked shredded chicken
2 cups cooked chopped broccoli
2 (10.5 ounce) cans condensed cream of chicken soup
½ cup sour cream
1 pinch ground black pepper to taste
2 ½ cups shredded Cheddar cheese
1 ½ cups bread crumbs
¼ cup salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine chicken, broccoli, condensed soup, sour cream, and pepper in a bowl. Mix in 1 cup Cheddar cheese. Pour into a 2-quart casserole dish and top with remaining Cheddar cheese.
  • Combine bread crumbs and butter in a bowl. Sprinkle over casserole.

8 large broccoli stems, steamed till slightly tender
8 slices of cooked deli ham
1 tablespoon butter
2 tablespoons all-purpose flour
2 teaspoons dry mustard
1 1/2 cups milk
1/8 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded sharp cheddar cheese (swiss works well also)

Steps:

  • Center 1 broccoli spear a short edge of each ham slice.
  • Roll broccoli spear in ham slice tightly.
  • Place rolls in a 12x8 inch baking dish, seam side down.
  • Melt butter in a heavy saucepan over low heat.
  • Add flour& mustard, stirring until smooth.
  • Cook 1 minute stirring constantly, gradually adding milk.
  • Cook over medium heat, stirring until thickened& bubbly.
  • Add salt, pepper and cheese, stirring until cheese melts.
  • Pour sauce over ham rolls, sprinkle with paprika.
  • Bake at 450 degrees for 10 minutes or until bubbly.
